CROATIAN SPRING VEGETABLES STEW



Croatian Spring Vegetables Stew image

There is very obvious Austrian influence in this meal. My grandmother used to prepare this side dish every spring, and I remember that, as a kid, I was thrilled every time I had this meal for lunch.

Number Of Ingredients 8

500 g green peas
300 g carrots
400 g kohlrabi
200 g cauliflower
1 tablespoon oil
10 g sugar
salt
1 cup water

Steps:

  • Cut carrots into cubes, and kohlrabi into sticks. Use only white parts from cauliflower.
  • Put oil in a pan, add sugar and cook it until sugar becomes brown. Add peas, carrots, kohlrabi and cauliflower, water and salt into pot and cook until vegetable is soft (usually 15-20 min.).
  • Stew must be sticky but not too much. When adding water do not put too much, just to cover the vegetables. You can also use kohlrabi leaves to add into stew, but not too much. Kohlrabi must be small, not bigger than tennis ball, otherwise it will be too hard with wooden parts inside which is not good. You can also add potatoe.

2 teaspoons vegetable oil
2 cups chopped green bell peppers
1 1/2 cups chopped onions
1 (8 ounce) can tomato sauce
1 (16 ounce) can tomatoes, chopped, undrained
1/2 cup water
1/4 cup dry sherry
2 tablespoons red wine vinegar
3 large potatoes, unpeeled, cut into 1/2 inch cubes
1 (16 ounce) can kidney beans, rinsed and drained
8 garlic cloves, crushed
12 stuffed green olives, cut crosswise in half
1 bay leaf
1 teaspoon sugar

Steps:

  • Heat oil in a large saucepan over medium heat.
  • Add bell pepper and onion. Cook, stirring frequently, 5 minutes.
  • Add small amounts of water if necessary, about a tablespoon at a time, to prevent drying.
  • Add remaining ingredients.
  • Bring mixture to a boil. Reduce heat to medium-low, cover, and simmer 1 1/2 hours or until potatoes are very tender.
  • Stir several times while cooking.
  • Remove and discard bay leaf before serving.
