SAUSAGE GRAVY RECIPE

Steps:
- Place skillet over medium heat.
- Add the pork sausage, break it up with a spoon or fork and let it brown until fully cooked.
- Use a slotted spoon and remove the meat from the pan. Set aside for now.
- Add 2 Tablespoons of butter into the skillet, let melt.
- Add the flour, one Tablespoon at a time, stirring constantly to make a roux.
- Continue to stir and let the mixture cook for a minute or two, don't let it burn.
- Slowly stir in milk, about ½ cup at a time, stirring constantly to work it all together.
- Add a little salt and pepper to taste. Test it for flavor, as you go.
- Add the cooked sausage back into the pan, stir well.
- Let the gravy and sausage simmer for a minute or two until it reaches the desired consistency.
- Serve warm and Enjoy.
SOUTHERN SAUSAGE GRAVY
I love Sausage gravy and biscuits! DH was not a big fan until I made this. True Southern Comfort food! Serve this wonderful Southern-style gravy over hot split and buttered buttermilk biscuits. Biscuits with gravy make a great breakfast with fresh or spiced fruit, Fresh sliced Tomatoes or serve along with a complete breakfast. This recipe is courtesy of Paula Deen.

- Cook sausage in a medium skillet over medium-low heat, stirring and breaking up with a spatula. With a slotted spoon, removed the browned crumbled sausage to a paper towel.
- Add flour, stirring until blended and bubbling. Gradually add 1 1/2 cups milk; continue stirring and cooking until thickened and bubbly. Add the crumbled sausage. If too thick, add a little more milk. Taste and add salt and pepper. Stir in a dash of cayenne pepper, if desired.
- Serve over hot split and buttered biscuits. Serve sliced tomatoes or fresh fruit with these, or serve as part of a bigger breakfast.
SAUSAGE GRAVY

If you haven't had homemade sausage gravy since the last time your grandmother made it, you might be surprised to know that it's not as difficult to make as you might think. The trick to a great country gravy is to brown the sausage in a skillet until it has a deep caramelization on the outside. Not only will the sausage taste better, the drippings will have also have a richer, tastier flavor to impart in the roux. Since this recipe uses such few ingredients, it's important to find the best quality of each ingredient that you can. We promise you'll taste the difference if you use a high-quality whole milk from the grocery store or the farmers market. What's the best way to serve it? There's the classic settings like biscuits, chicken fried steak, or grits, but we also like to serve it with shrimp, rice, and a drizzle of Tabasco hot sauce.

- Cook sausage in a large skillet over medium heat, stirring until it crumbles and is no longer pink. Remove sausage, and drain on paper towels, reserving 1 tablespoon drippings in skillet.
- Melt butter in skillet. Whisk flour into hot fat until smooth; cook, whisking constantly, 1 minute. Gradually whisk in milk, and cook, whisking constantly, 5 to 7 minutes or until thickened. Stir in sausage, salt, and pepper. Serve immediately.

SOUTHERN-STYLE SAWMILL SAUSAGE GRAVY

- Add sausage to a large skillet or heavy-bottomed pot over medium-high heat. Cook and stir with a spatula, breaking apart the sausage until cooked and starting to crisp, 5 to 7 minutes.
- Add butter, onion powder, and garlic powder; stir until butter is melted.
- Sprinkle flour over sausage and butter and stir until combined. Reduce heat slightly and cook until thick, 1 to 2 minutes.
- Pour in chicken stock, scraping up any browned bits from the bottom of the pan. Simmer until stock is absorbed and mixture is thickened, 1 to 2 minutes. Stir in milk until gravy is hot and bubbly.
- Season to taste with salt and lots of freshly cracked pepper. If gravy becomes too thick, thin out with more milk.

SOUTHERN HOMESTYLE SAUSAGE GRAVY
This is my mother's recipe. She made this my whole life. It's wonderful. My daddy used to always say he ate it in the army but they use to call it something a little different. When I got a little older I found out it was called "sh.. on a shingle". I'm sure you've all heard of this before. Anyways it made me laugh, still does. I hope you enjoy this.

- Fry sausage until golden brown.
- Add bacon grease, then flour to the grease and cooked sausage.
- Stir until blended.
- Cook until raw flavor of the flour cooks out (about 2 or 3 minutes, not too brown though).

- Place sausage in a large, deep skillet. Cook over medium high heat until evenly brown. Remove sausage, drain and set aside.
- Pour off most of the fat from the pan, leaving about 2 to 3 tablespoons. Return pan to medium-low heat and add flour. Using a whisk, stir vigorously until roux forms, scraping bottom of pan. Reduce heat to low and let roux cook at least 5 minutes, stirring occasionally. Grandma always "burned" hers a little on purpose.
- Add milk in a stream, whisking the whole time. After adding about 2 1/2 cups, turn heat to medium and continue cooking, stirring constantly. Bring gravy to a boil and cook to desired thickness. Add more milk if a thinner gravy is desired. You may also add some of the cooked and crumbled sausage to the gravy.

Steps:
- Place flour into a dry non-stick frying pan over medium heat and cook until light brown.
- Stir continually to prevent flour from burning.
- Pour into a glass bowl and set aside to be used later.
- (Browing the flour will keep it from lumping when added later) Cut bacon into 1/2" pieces and place into large pot or Dutch oven.
- Fry bacon until crispy.
- Pinch sausage into small pieces and add to bacon.
- Continue frying until sausage is completely cooked.
- Add sage and butter and stir in completely until butter is melted.
- Add browned flour a few tablespoons at a time and stir until liquid becomes pasty (you may not need all of the flour).
- Pour in milk slowly, bring to a slow boil and contiue stirring until gravy thickens.
- Add black pepper to taste.
- You may also add a pinch or two of crushed red pepper flakes if you want the gravy to be more zippy.
- Serve over buttermilk biscuits prepared per package instructions.

Steps:
- Brown sausage in large skillet until crumbly, dry and has absorbed most of the grease.
- Add butter allow to melt.
- Add flour while stirring continuously.
- Sausage will appear slightly white once enough has been added.
- It may take a bit more or less depending on how much grease your sausage contains.
- Continue cooking until flour is browned and mixture is dry.
- About 2 minutes.
- Add milk, more may be required depending on how much flour was added in step three above.
- Lower heat to simmer and allow to cook till thick.
- If your mixture is too thick add more milk, add more flour if it's too dry.
- Gravy should have a light reddish brown color.
- If it's too white the flour was not sufficiently cooked (it's still edible and delicious).

CLASSIC SAUSAGE GRAVY

- In a small frying pan, heat 1 tablespoon of oil over medium-high heat for about 30 seconds. Add Jimmy Dean sausage and cook for 8 to 10 minutes until browned, stirring frequently to break up the sausage into small pieces, then drain.
- Add flour and mix well with the sausage. Reduce heat to medium and add 1 cup of milk, stirring to prevent any flour lumps. Add the remaining milk and the salt and pepper. Bring heat up to medium-high for 2 to 3 minutes, or until the sauce bubbles up to the top of the pan (do not allow it to boil over).
- Reduce heat to medium-low, stirring the sauce frequently until it thickens, about 5 minutes.
- Serve over cooked grits or biscuits, and top with green onions.
