BOURBON PECAN PIE

Bourbon Pecan Pie image

This is a classic and simple recipe given a Southern kick with a little bourbon. The alcohol will evaporate when you bake the pie, and you're left with a richly flavored, gooey dessert, intensely sweet with a baseline of vanilla. You do need both light and dark corn syrup for this - using only one or the other will change the pie's flavor. (Don't let making your own pie crust intimidate you: our pie guide has everything you need to know.)

MOLASSES-BOURBON PECAN PIE

Molasses-Bourbon Pecan Pie image

This not-too-sweet take on a classic pecan pie is packed with crunchy toasted pecans mixed with the rich and robust flavor of molasses.

Provided by Food Network Kitchen

Categories     dessert

Time 3h30m

Yield 8 tp 10 servings

Number Of Ingredients 13

1 1/4 cups all-purpose flour, plus more for dusting
6 tablespoons cold unsalted butter, cut into small pieces
2 tablespoons cold vegetable shortening
1 tablespoon granulated sugar
1/2 teaspoon salt
1 tablespoon apple cider vinegar
2 1/4 cups pecans
6 tablespoons unsalted butter
2 large eggs
2/3 cup packed light brown sugar
1/2 cup molasses (not blackstrap) or sorghum
2 tablespoons bourbon
1/2 teaspoon salt

Steps:

  • Make the crust: Pulse the flour, 2 tablespoons butter, the shortening, granulated sugar and salt in a food processor until it looks like fine meal. Add the remaining 4 tablespoons butter and pulse until it is in pea-size pieces. Drizzle in the vinegar and 2 tablespoons cold water and pulse until the dough just comes together. Turn out onto a piece of plastic wrap; use the plastic to help form the dough into a disk. Wrap tightly and refrigerate until firm, at least 1 hour or overnight. (The dough can be frozen for up to 2 months; thaw at room temperature.)
  • Roll out the dough into a 12-inch round on a lightly floured surface. Ease into a 9-inch pie plate, fold the overhanging dough under itself and crimp the edge with your fingers. Chill at least 30 minutes.
  • Meanwhile, make the filling: Position a rack in the lower third of the oven; preheat to 425 degrees F. Spread the pecans on a baking sheet and toast until darkened, about 8 minutes. Transfer to a plate and return the empty baking sheet to the lower oven rack. Melt the butter in a small skillet over medium heat and cook, stirring with a rubber spatula, until brown flecks appear, about 8 minutes; let cool slightly. Whisk the browned butter, eggs, brown sugar, molasses, bourbon and salt in a bowl. Scatter the toasted pecans in the prepared crust; pour in the brown sugar mixture.
  • Put the pie directly on the hot baking sheet in the oven and reduce the temperature to 325 degrees F. Bake until the crust is golden brown and the filling is set, 45 to 55 minutes. (Cover the edge with foil if it is browning too quickly.) Transfer to a rack and let cool at least 1 hour before serving.

PECAN PIE RECIPE

Pecan Pie Recipe image

It's a proven tradition that Thanksgiving dinner just isn't complete without a pecan pie; and at a Southern holiday meal, there's really nothing better than showcasing the classics. This pecan pie recipe is a true classic: simple, reliable, and darn good. We can appreciate pecan pies infused with bourbon, filled with chocolate, or drizzled with caramel, and we find pecan pie bars and bites incredibly tasty forms of the dessert too; but if you're a committed traditionalist (which we can definitely relate), a classic pecan pie recipe like this is the way to go. This recipe uses refrigerated pie crust for a process made easier and quicker without sacrificing a lick of that ooey, gooey flavor we love, and it only takes about 10 minutes to get this indulgent holiday pie ready to pop right in the oven, which makes it that much more appealing. You can decide how finely you want your pecans chopped to change up the presentation and amount of crunch in every bite. We usually go with very roughly chopped nuts for a great texture that complements the gooey filling perfectly, but finely chopped pecans make for a cohesive texture you might enjoy too! No matter how you slice it (or, in this case, chop it), nothing satisfies a Southerner's sweet tooth around the holidays quite like pecan pie. You can serve this pie with a dollop of homemade sweetened whipped cream for a finishing touch that works superbly with the nuttiness of the pie.

SOUTHERN-STYLE BOURBON SWEET POTATO PIE

Southern-Style Bourbon Sweet Potato Pie image

Sweet potato pie just like your southern grandma would make with a healthy dose of bourbon.

Provided by Jazz

Categories     Dessert

Time 2h

Number Of Ingredients 14

2 large sweet potatoes ((about 6 inches long and 3 inches thick))
1/4 cup heavy cream
6 tablespoons butter (melted)
2 eggs (beaten)
2 tablespoons bourbon whiskey
1/2 cup brown sugar (packed)
1/2 cup granulated sugar
1 teaspoon Nutmeg
1/2 teaspoon cinnamon
1/2 teaspoon sea salt
3/4 cups cold butter (cut into cubes)
1 1/2 cup flour
1/4 teaspoon sea salt
1 tablespoon cold water

Steps:

  • Make the pie crust by incorporating sea salt, flour, and butter until a coarse, sandy-looking meal forms. This can be done in a bowl with your hands or in a food processor. Add cold water and continue working or pulsing the mixture until a dough forms. Shape into a disc (like a hockey puck), wrap in plastic, and chill for at least 30 minutes.
  • Meanwhile, preheat oven to 400 degrees. Using a fork or knife, pierce sweet potatoes several times then place directly on oven rack with a sheet pan underneath to catch any drippings. Roast for about 45 minutes or until tender then set aside to cool. You can place them in the refrigerator to speed up this process.
  • Reduce oven heat to 375 degrees. Roll out chilled pie crust and place in a 9-inch pie pan. Remove excess dough from around sides of pan and crimp or style edges, as desired. Prick bottom of dough with a fork a few times then par bake for about 15 minutes then remove and decrease oven heat to 350 degrees. See notes about par baking below.
  • While the crust par bakes, process cooled sweet potatoes in a food processor until smooth. Add heavy cream, butter, eggs, bourbon, brown sugar, granulated sugar, nutmeg, cinnamon, and sea salt then or pulse until uniform, pausing to scrape down sides of bowl as necessary.
  • Spread filling into prepared pie crust. Return to oven and bake for about one hour and 10 minutes or until top of filling is firm to touch. Cool completely before slicing and serving.

CHOCOLATE BOURBON PECAN PIE

Chocolate Bourbon Pecan Pie image

Provided by Damaris Phillips

Categories     dessert

Time 4h35m

Yield One 9-inch pie (6 to 8 servings)

Number Of Ingredients 12

1/2 teaspoon kosher salt
1/2 teaspoon granulated sugar
1 1/4 cups plus 2 tablespoons all-purpose flour, plus more for dusting
4 ounces (8 tablespoons) cold unsalted butter, cut into pieces
2 to 4 tablespoons ice water
1/3 cup firmly-packed light brown sugar
3 large eggs, at room temperature
1/4 cup coconut oil, melted
3/4 cup sorghum (See Cook's Note)
3 to 4 tablespoons bourbon
1 1/2 cups roughly chopped pecans
1/2 cup dark chocolate chips

Steps:

  • Preheat the oven to 400 degrees F.
  • Combine the salt, granulated sugar and 1 1/4 cups of the flour in the bowl of a food processor and pulse a few times. Add the butter and pulse until there are pea-size pieces. Add the ice water, a few tablespoons at a time, and pulse until the mixture barely comes together. Turn it out onto a piece of parchment paper and press into a disc. Refrigerate for 1 hour.
  • Roll out the dough on a lightly-dusted surface so it is large enough to fit into a 9-inch pie pan with a slight overhang. A little trick to make sure the pie crust is round: Roll out the dough from the center outward, like the rays of the sun. Place the dough in the pie pan and fold over the overhang to create a nice crust ¿ no need to cut off scraps. Pierce the base all over with a fork, line with foil and fill with baking weights or beans. Bake on the bottom rack of the oven for 12 minutes. Remove the foil and pie weights. Return the pie crust to the oven and bake for an additional 5 minutes to ensure the crust will be crisp. Allow to cool, about 30 minutes.
  • Lower the oven temperature to 350 degrees F.
  • Beat the brown sugar and eggs in a stand mixer fitted with a paddle attachment until fluffy, about 2 minutes. Add the coconut oil and remaining 2 tablespoons of flour and mix for another 2 minutes. Add the sorghum and bourbon and mix until combined. Finish by stirring in half of the pecans.
  • Sprinkle the bottom of the crust with the chocolate chips and remaining pecans. Gently pour in the pie filling. Bake until the top is firm but the center is slightly gooey, 35 to 45 minutes. Cool on the counter for 4 hours or in the fridge for 2 hours before serving.

BOURBON SWEET POTATO PECAN PIE

Bourbon Sweet Potato Pecan Pie image

Two southern Thanksgiving classics collide in a perfectly sweet and easy-to-make pie that has something for everyone at your table.

Provided by Jazz

Categories     Dessert

Time 2h5m

Number Of Ingredients 21

1 1/2 large sweet potatoes (about 6 inches long and 4 inches across)
2 tablespoons heavy cream
3 tablespoons butter (melted)
1 egg (beaten)
1/2 cup brown sugar (packed)
1/2 cup granulated sugar
2 tablespoons bourbon whiskey
1/2 teaspoon Nutmeg
1/2 teaspoon cinnamon
1/2 teaspoon sea salt
1 1/2 cups pecan halves
1 cup Karo Light Corn Syrup
1 cup brown sugar
2 eggs
1 tablespoon butter (melted)
1 teaspoon vanilla
1/4 teaspoon cinnamon
3/4 cup butter (cut into cubes)
1 1/2 cup flour
1/4 teaspoon sea salt
1 tablespoon cold water

Steps:

  • Preheat oven to 400 degrees. Using a fork or knife, pierce sweet potatoes several times then place in oven to roast for about 45 minutes or until tender.
  • While sweet potatoes roast, make pie crust. Start the crust by incorporating sea salt, flour, and butter until a coarse meal forms. This can be done in a bowl by hand by hand or in a food processor. Add cold water and continue working or pulsing mixture until a dough forms. Shape dough into a disc (like a hockey puck), wrap in plastic, and chill for at least 30 minutes.
  • Once sweet potatoes are roasted, carefully remove from oven and place in fridge to cool to room temperature. Reduce oven heat to 375 degrees.
  • Remove pie crust dough from fridge and roll out into about 1/4-inch thickness. Place dough into a 9-inch pie pan and fold or crimp edges, as desired. Place into oven to par bake for about 10 minutes then remove and reduce oven heat to 350 degrees.
  • While crust par bakes, make sweet potato filling. Remove skin from roasted sweet potatoes and combine with heavy cream, butter, egg, brown sugar, granulated sugar, whiskey, nutmeg, cinnamon, and sea salt. This step can be done with a mixer, by hand, or in a food processor. I recommend using a food processor for the smoothest filling. The result should be thick, custard-like, and free of lumps. If filling is too thin, place in the fridge to stiffen up a bit before assembling pie.
  • In another bowl, mix together the corn syrup, brown sugar, eggs, butter, vanilla, and cinnamon until smooth and uniform. Stir in pecans.
  • To assemble pie, spread sweet potato filling into prepared crust. There should be about one inch of space between the top of the sweet potato filling and the edges of the pie crust. Next, gently pour pecan pie filling over top. This layer should be almost flush with the top of the pie pan.
  • Bake pie for one hour. Top of pie will puff up as it bakes but will settle as it cools. Cool pie completely before cutting.

THE BEST PECAN PIE

The Best Pecan Pie image

This pie delivers plenty of classic flavors like brown sugar, vanilla and toasted nuts. We found that bourbon made a welcome addition. The alcohol bakes off leaving behind irresistible notes of smoke and caramel. Our all-butter crust perfectly balances the sweetness of the filling.

Provided by Food Network Kitchen

Categories     dessert

Time 3h35m

Yield 1 pie or about 8 servings

Number Of Ingredients 13

1 1/4 cups all-purpose flour, plus more for dusting (see Cook?s Note)
2 teaspoons granulated sugar
1/8 teaspoon fine salt
1 stick (8 tablespoons) cold unsalted butter, diced
1 large egg, lightly beaten
5 tablespoons unsalted butter
1 cup packed light brown sugar
3/4 cup light corn syrup
1/2 teaspoon fine salt
2 cups chopped toasted pecans
1 to 2 tablespoons bourbon
2 teaspoons pure vanilla extract
3 large eggs, lightly beaten

Steps:

  • For the crust: Whisk together the flour, granulated sugar and salt in a medium bowl. Using your fingers, work the butter into the dry ingredients until it resembles yellow cornmeal mixed with bean-size bits of butter. (If the flour/butter mixture gets warm, refrigerate it for 10 minutes before proceeding.) Add the egg and stir the dough together with a fork or by hand in the bowl. If the dough is dry, sprinkle up to a tablespoon more of cold water over the mixture.
  • Alternatively, pulse the flour, sugar, and salt in a food processor fitted with the metal blade until combined. Add the butter and pulse until it resembles yellow cornmeal mixed with bean-size bits of butter, about 10 times. Add the egg and pulse 1 to 2 times; don't let the dough form into a ball in the machine. (If the dough is very dry add up to a tablespoon more of cold water.) Remove the bowl from the machine, remove the blade and bring the dough together by hand.
  • Form the dough into a disk, wrap with plastic wrap and refrigerate until thoroughly chilled, at least 1 hour.
  • Roll the dough on a lightly-floured surface into a 12-inch circle about 1/8-inch thick. Transfer the dough to a 9-inch pie pan and trim the edges, leaving about an extra inch hanging over the edge. Tuck the overhanging dough underneath itself to form a thick
  • edge that is even with the rim. Flute the edge as desired. Freeze the pie shell for 30 minutes.
  • Arrange the racks in the center and lower third of the oven and preheat to 400 degrees F. Put a piece of parchment paper or foil over the pie shell and fill with dried beans or pie weights. Bake on a baking sheet on the center rack until the dough is set, about 20 minutes. Remove from the oven and lift the sides of the parchment to remove the beans. Continue baking until the pie shell is lightly golden brown, about 10 more minutes. Reduce the oven temperature to 350 degrees F.
  • While the crust is baking make the filling: Combine the butter, brown sugar, corn syrup, and salt in medium saucepan. Bring to a boil over medium heat and, stirring constantly, continue to boil for 1 minute. Remove from the heat and stir in the nuts, bourbon and vanilla. Set it aside to cool slightly, about 5 minutes. (If the crust has cooled, return it to the oven for 5 minutes to warm through.) Whisk the beaten eggs into the filling until smooth. Put the pie shell on a baking sheet and pour the filling into the hot crust.
  • Bake on the lower rack until the edges are set but the center is still slightly loose, 40 to 45 minutes. (If the edges get very dark, cover them with aluminum foil half way during baking.) Cool on a wire rack. Serve slightly warm or at room temperature.

Press all four edges firmly to seal completely, making a little pillow. Drop gently into hot oil and cook 1-1 ½ minutes. Drain on a paper towel-lined plate. Repeat with each wonton, frying 3 at a time, until all filling is used.
  • 4. Place 2 little pillows on top of each plate. Sift tops lightly with powdered sugar and garnish each plate with ¼ of a cherry and 2 mint leaves and a drizzle of chocolate sauce on the plates.
