This creamy fall favorite is perfect for those following a keto or low-carb diet, and the whole family will love it! I use bone broth if I have it on hand, however chicken stock works just as well. Use a keto-friendly brown sugar substitute that measures 1:1 like sugar, such as Lakanto® Golden or Swerve® Brown Sugar Substitute.

1 tablespoon olive oil
1 small onion, diced
2 cloves garlic, minced
2 tablespoons zero-calorie brown sugar substitute (such as Lakanto Golden®)
1 ½ teaspoons pumpkin pie spice
1 teaspoon salt
2 ½ cups chicken stock
1 (15 ounce) can pumpkin puree
1 cup heavy cream
2 tablespoons heavy cream, or to taste
3 tablespoons crushed walnuts

Steps:

  • Heat oil in a saucepan over medium heat. Add onion and saute for 2 to 3 minutes. Reduce heat to medium-low and add garlic. Saute until onion is beginning to soften, 2 to 3 more minutes. Stir in sugar substitute, pumpkin pie spice, and salt. Pour in chicken stock and stir to combine. Whisk in pumpkin puree, cover, and simmer over medium-low heat for 10 minutes.
  • Blend soup carefully until smooth using an immersion blender. Stir in 1 cup heavy cream and adjust salt, if necessary. Garnish with a drizzle of heavy cream and crushed walnuts.

2 tablespoons olive oil
1/4 cup diced onion
4 garlic cloves, minced
1 inch ginger root, grated
1 jalapenos, finely diced & seeds removed
1 teaspoon ground cumin
1 teaspoon smoked paprika
1 teaspoon salt
14 oz can 100% pumpkin puree
3 cups chicken broth or vegetable broth
1/2 cup canned coconut cream
1/4 cup peanut butter
2 teaspoons lime juice
2 tablespoons butter, optional

Steps:

  • In a large stock pot, heat olive oil over medium heat and sauté onions, garlic, ginger and jalapeno. Cook, stirring frequently, until softened.
  • Stir cumin, smoked paprika and salt. Then add pumpkin puree. Whisk in the stock.
  • Bring to a boil. Reduce the heat and allow to simmer on low for 20 minutes, stirring occasionally. Simmer until soup has reduced slightly and thickened.
  • Stir in coconut cream, peanut butter, lime juice and butter (if using). Using an immersion blender (or pour into a standing blender), puree the soup until smooth. Serve with crème fraiche, sour cream or yogurt. Top with fresh chives or cilantro.

3 tablespoons butter
3 large tablespoons tomato paste
14 oz. can or 2 cups pumpkin puree
4 cups chicken broth
2 teaspoons apple cider vinegar
3 tablespoons brown Swerve
1/2 teaspoon sage
2 teaspoons cinnamon
1/2 teaspoon nutmeg
1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon pepper
4 oz. cream cheese, cubed and at room temperature
1/3 cup heavy cream
crumbled bacon
shredded parmesan cheese
pumpkin seeds

Steps:

  • In a large saucepan, whisk all ingredients together, except for the cream cheese and heavy cream, over medium heat for 10 minutes.
  • Add in the room-temperature cream cheese and heavy cream and stir. Let the soup simmer on low heat for 20 minutes.
  • Serve soup and top with crumbled bacon, parmesan cheese, and pumpkin seeds. Enjoy!

Steps:

  • In a medium sized pot or saucepan combine the pumpkin puree, chicken broth, cream, salt, pepper, garlic, ginger and thyme.
  • Cook over medium heat for 10-15 minutes, or until the soup is warm and fragrant. Be sure to taste the salt level before serving.
  • Remove from heat and allow to cool for 5 minutes before serving. Top will a splash of cream and roasted pumpkin seeds (optional).
