Steps:
- Whisk together Greek yogurt, honey, 1 tablespoon water, vanilla bean paste, and salt in a medium bowl until smooth. (Store yogurt mixture, covered, in the refrigerator up to 2 days.)
- Cut peel and pith from oranges; cut oranges into ¼-inch-thick rounds. Cut pineapple lengthwise into ¼-inch-thick planks; cut planks into 2-inch pieces. (Store orange rounds and pineapple pieces in an airtight container in the refrigerator up to 1 day.)
- To assemble, spread yogurt mixture in a thick layer on a large platter. Arrange fruit over yogurt; drizzle with additional honey. Sprinkle with toasted coconut chips (breaking apart any larger chips), and serve.

- Position an oven rack in the center of the oven and preheat to 350 degrees F.
- Spread the pecans on a small baking sheet and bake, stirring once halfway through, until lightly browned and toasted, 6 to 8 minutes. Transfer the pecans to a medium bowl and cool completely.
- Whip the heavy cream in a medium bowl with an electric mixer to stiff peaks. Stir in the sour cream by hand until combined. Stir in the marshmallows, pineapple and coconut. Gently fold in the mandarin oranges. Cover with plastic wrap and refrigerate until chilled, at least 2 hours and up to overnight.
- Right before serving, roughly chop the pecans. Fold the pecans and maraschino cherries into the ambrosia salad. Transfer to a serving bowl and serve immediately.
SOUTHERN AMBROSIA
Steps:
- Drain the pineapple and the orange segments very well. Set aside.
- Drain the cherries and slice each one in half. Rinse the cherries well and allow to drain. Set aside.
- In a large bowl, mix together the whipped topping and the sour cream. Add in the coconut and mini marshmallows. Fold in the drained pineapple, oranges, and cherries. Add the pecans and gently stir to combine. Cover and chill in the refrigerator for about an hour before serving.

- Place the cream and sugar into the bowl of a stand mixer with the whisk attachment and whip until stiff peaks are formed. Add the sour cream and whisk to combine. - In a bowl, combine the corn syrup, orange marmalade, and orange liqueur. Stir in the crushed vanilla wafers until moistened and knead together until well mixed.
- Use your hands to shape the mixture into 1-inch balls, filling each with 2 mini marshmallows. Roll each ball in the coconut to coat and store in an airtight container for up to 1 week.
- If you're serving this dessert right after you prepare it, try sticking half a maraschino cherry in the center of each snowball for an extra surprise.
