KAREN'S PHILLY CHILI
This was a friend's recipe that I modified so much I now call it my own. It is great on chilly days, but we have it in the summer also. You can make it as hot as you like, but with 4 kids, I have to keep it on the mild side. With a nice warm loaf of home baked bread, it is a hearty meal.

Steps:
- Brown meat over medium heat in a large pot or dutch oven and drain grease.
- Add Onion and Garlic and when transparent, add Chili Powder.
- Cook about 5 minutes and then add remaining ingredients.
- Simmer, uncovered for about 2 hours, stirring occasionally, until desired consistency.
- Serve with cheese, onions and sour cream for toppings if desired.

SOUTH PHILLY CHILI WITH HOMEMADE WHIZ WIT AND PRETZEL CROUTONS
Steps:
- South Philly Chili Preparation: In a large soup pot heat olive oil over medium high heat, saute garlic and sausages until golden brown. Add cherry peppers, eggplant and zucchini and saute until tender. Drain off excess oil and add beans, roasted peppers, crushed tomatoes, beef broth and tomato paste and stir to incorporate. Bring chili to a simmer, reduce heat to low and add chili powder, basil, oregano, salt and pepper. Cook chili for 25-30 minutes stirring occasionally. Keep hot until ready to serve. Homemade Whiz Wit Preparation: In a medium sauce pot melt butter over medium heat, add flour and stir to create a roux. Pour in whole milk, whisk and bring to a simmer. Whisk in cheddar and provolone cheese half a cup at a time until completely melted and sauce begins to thicken. Season with salt and pepper and reduce heat to low, making sure to stir occasionally to keep sauce from browning on the bottom. In a large skillet heat olive oil over medium high heat. Add onions add saute until caramelized, stirring frequently. Deglaze pan with cooking wine and continue to cook until wine has evaporated. Stir caramelized onions into cheese sauce. Keep hot until ready to serve. Pretzel Croutons Preparation: Preheat oven to 400 F. Toss pretzel cubes in a large metal bowl with olive oil, garlic powder and mustard powder. Bake for 8-10 minutes or until pretzels are crunchy and golden brown . To serve ladel chili into bowls, spoon cheese sauce over top and garnish with pretzel croutons.
'WHIZ WIT' CHILI
For those of you not from the Philadelphia area, 'whiz wit' it how we order our cheesesteaks (meaning Cheez Whiz® with onions). This is a recipe I came up with combining two of my favorite foods, the cheesesteak and chili. This is a great recipe to make for parties or the big game. Throw it in a slow cooker to keep warm, and it feeds an army.

Steps:
- Heat enough olive oil to lightly coat onions in a large pot over medium heat. Stir onion into the oil, season with garlic salt, and cook until tender, 7 to 10 minutes. Remove onions to a plate lined with paper towel to drain.
- Heat more oil in the pot as needed to coat bell peppers completely in oil. Stir green bell pepper into the hot oil and season with garlic salt. Cook and stir pepper until tender, about 5 minutes; transfer to plate lined with paper towel to drain.
- Heat more oil in the pot as needed to coat beef completely in oil. Stir sliced beef into the hot oil; season with garlic salt. Cook the beef, breaking apart clumped pieces with a spoon as you stir, until mostly browned, about 5 minutes. Season beef with chili seasoning mix and continue cooking until the beef is no longer pink, 2 to 3 minutes more.
- Stir processed cheese spread into the beef mixture. Pour spicy tomato sauce over the beef and stir until the cheese and sauce are smoothly mixed. Add just enough tomato sauce to the beef mixture so the beef can simmer in liquid but is not submerged; add kidney beans, cooked onion, and cooked pepper. Add more tomato sauce to the mixture again to just coat the ingredients. Reduce heat to medium-low and simmer until the beef and beans reach your desired texture, 30 to 60 minutes.

THE BEST PHILADELPHIA SOFT PRETZELS EVER
I read somewhere that Philadelphians eat nearly half of all the pretzels made in America. Well, these pretzels are to die for, and are just like the ones you pay several dollars for at the concession stand. I've made these many times with my kids, and we absolutely LOVE them, especially dipped in warm mustard or melted cheese. Prep time is approximate, and includes letting the dough rise for 30 minutes.

Steps:
- In mixing bowl add warm water and yeast. Stir until the yeast is completely dissolved.
- Add the sugar. Stir. Gradually stir in the flour. The dough will become stiff and dry. That's what you want.
- Sprinkle some flour on the counter or on a board. Flour your hands, too. Knead the dough for about 5 minutes.
- Form the dough into a ball. Place the ball of dough back in the bowl and cover the bowl with a dish towel. Let the dough rise in a warm, dark place for at least 30 minutes, or until the dough has doubled in size.
- While the dough rises, heat the oven to 400F degrees. Grease or butter a cookie sheet.
- Fill a saucepan half full of water, add the baking soda, and bring the water to a slow boil.
- When the dough is finished rising, put it on a floured surface. Flour a rolling pin and roll the dough into a square shape, about 1/4-1/2 inch (6-10 mm) thick. Cut the dough into 1/2-inch (or so) wide strips. They don't have to be perfect.
- Twist each strip into a pretzel shape, pinching the ends so they don't fall apart. Be careful not to let the strips stretch too thin as you handle them.
- Place a pretzel on a spatula and lower it into the boiling water for 5-10 seconds. It will puff up and float. Use the spatula to remove the pretzel from the water. Place the pretzel on the greased cookie sheet. Repeat this with the other pretzels.
- In a small bowl, beat the egg for 1 minute. Use a pastry brush to coat the top of each pretzel with the egg. Sprinkle salt over the pretzels.
- Bake for about 12-15 minutes, or until golden brown.
- Serve with warmed mustard or melted cheese. YUM!

PHILLY STYLE SOFT PRETZELS
These are great for a picnic or for a family BBQ! The kids will just gobble them up. Plus they're really easy to make. I hope you enjoy them as much as we do.

Steps:
- Dissolve yeast in warm water in large mixing bowl.
- Stir in teaspoon salt, sugar and 2-cups of flour.
- Beat until smooth. Stir in enough remaining flour t make dough easy to handle.
- Turn dough onto lightly floured surface; knead until smooth and elastic. (about 5-minutes).
- Place in greased bowl; turn greased side up. Cover: let rise until doubled (about 60-minutes). Dough is ready if an indentation remains when touched.
- Heat oven to 425°.
- Punch down dough and cut into 16-equal parts. Roll each part into a rope about 18� long. Twist each rope into a pretzel shape.
- Brush pretzels with beaten egg and sprinkle coarse salt. Bake until pretzels are golden brown (about 15-20 minutes).
- If using self-rising flour omit 1-teaspoon of salt.
SOUTH OF THE BORDER CHILI CROUTONS
Croutons perfect to dress up a salad, use for stuffing, eat for a snack, sprinkle over soups, even potatoes! If you like a little heat, add some red pepper flakes!

Steps:
- Combine chili powder, oregano, red pepper flakes if using, and salt in a small bowl; set aside.
- Place bread cubes in a large mixing bowl, and drizzle the oil over cubes. Stir until cubes are coated with oil. Sprinkle cubes with cheese and the amount of seasoning desired. Store unused seasoning mixture in a re-sealable container for future use.
- Spread seasoned croutons in a single layer on a 15 x 11-inch baking sheet.
- Bake in oven for 12-15 minutes until cubes are dried, stirring occasionally. Cool on baking sheet.
- Store in plastic, re-sealable bag.

PHILLY-STYLE PRETZELS
These old-fashioned "Philadelphia-style" pretzels are almost like bagels -- smooth and shiny on the outside, chewy within.

Steps:
- Mix the sugar, water and yeast; stir to dissolve.
- (If you're using instant yeast, skip this step, simply combining all of the ingredients at once.) Add the white wheat flour, malt, salt, and enough unbleached flour to make a soft (but not sticky) dough.
- Knead well, place in a bowl, and let rise till doubled.
- Divide the dough into 16 pieces.
- Roll each piece into a log, and shape the logs into pretzels.
- In a large pot, boil together 6 cups of water and 2 tablespoons baking soda.
- Put 4 pretzels at a time into the boiling water, and cook for 1 minute.
- Transfer boiled pretzels to a lightly greased baking sheet.
- When all the pretzels have been cooked, paint them with an egg glaze (1 egg mixed with 1 tablespoon water) and sprinkle with salt or seeds (if desired), then bake in a preheated 450°F oven for 12 to 15 minutes, or until the pretzels are well-browned.

THE 'WHIZ-WIT' DIP
If you live in Philadelphia, or have visited, you have probably gone to the famous Pat's or Geno's Steaks. When you order, you have to order a 'Whiz Wit' or a 'Whiz Wit-out.' This means a cheese steak with Cheeze Whiz® and with or without fried onions. This is a cheese steak in a dip. Perfect for tailgating or football games and is best served in a slow cooker with cut-up hoagie/sub rolls. Enjoy!
