I taught my daughter to make this when she was three. It has become our signature cake with her friends, and mine as well. This recipe is so easy and so good. Could be topped with cinnamon sugar, if desired.

½ cup butter, softened
1 cup white sugar
2 eggs, beaten
1 cup sour cream
1 teaspoon baking soda
1 ½ teaspoons baking powder
1 ½ cups all-purpose flour
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9 inch pan.
  • In a small bowl, mix flour, baking powder, baking soda and chocolate chips. Set aside.
  • In a large bowl, cream butter and sugar until light. Add eggs and mix thoroughly. Add sour cream and vanilla extract; mix well. Add flour mixture and mix thoroughly.
  • Pour batter into 9 inch pan and bake at 350 degrees F (175 degrees C) for 30 minutes or until golden brown and springy on the top.

3/4 cup (105 grams) all-purpose flour
1/2 cup plus 2 tablespoons (105 grams) sweet rice flour, such as Mochiko
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon kosher salt
1/2 cup (1 stick) unsalted butter, softened
1 cup (200 grams) granulated sugar
2 large eggs, at room temperature
1 teaspoon pure vanilla extract
1/2 cup plus 1 tablespoon (150 grams) full-fat sour cream, at room temperature
2 tablespoons milk, at room temperature
1 heaping cup (200 grams) semisweet chocolate chips, plus more for topping

Steps:

  • Position an oven rack in the middle of the oven and preheat to 350 degrees F. Lightly grease an 8-inch square pan with nonstick cooking spray. Line the bottom with parchment, leaving a 2-inch overhang on the sides (to make it easier to remove the cake after baking) and grease the parchment.
  • Combine the all-purpose flour, sweet rice flour, baking powder, baking soda and salt in a medium bowl and whisk until combined.
  • Beat the butter in a large bowl with an electric mixer until smooth. Add the sugar and cream the mixture until light and fluffy, 2 to 3 minutes. Scrape down the bowl with a rubber spatula. Add in the eggs one at a time, beating after each addition until combined. Scrape the bowl once more, then beat in the vanilla. Sift half of the dry ingredients over the egg mixture and beat just until combined. Beat in the sour cream and milk, then sift in the rest of the dry ingredients and beat just until the batter is smooth. Fold in the chocolate chips.
  • Spread the batter into the prepared pan, smoothing the surface with a small offset spatula. Sprinkle additional chocolate chips on top. Bake the cake, rotating the pan halfway through, for about 40 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool in the pan for 20 minutes, then gently loosen the edges with a small offset spatula and carefully transfer the cake (using the parchment sling to assist) onto a rack to cool completely.

  • 1 egg.
  • 1 teaspoon of vanilla extract.
  • NOW add 1/3 flour mixture and stir.
  • Add another 1/3 four mixture and stir.
  • Add remaining 1/3 flour mixture and stir.
  • Add one package of chocolate chips and stir.
  • Add nuts if desired (I don't).
  • Place on a lightly greased cookie sheet by the teaspoon, 2 inches apart.
  • Bake at 350 for 10 minutes.
  • Makes 40-50 cookies.

2 ¾ cups all-purpose flour
¼ teaspoon baking soda
¼ teaspoon salt
2 tablespoons unsweetened cocoa powder
1 cup sour cream
2 teaspoons vanilla extract
1 cup unsalted butter
2 ½ cups white sugar, divided
6 eggs, separated
¼ teaspoon cream of tartar
½ cup semisweet chocolate chips

Steps:

  • Before you begin, bring all of the cold ingredients to room temperature: set out the sour cream, butter, and the eggs (separate the eggs while they are still cold) for about half an hour before making the cake batter.
  • Preheat an oven to 325 degrees F (165 degrees C). Grease and lightly flour a 10-inch tube pan. Sift together the flour, baking soda, salt, and cocoa powder. Combine the sour cream and vanilla extract in a separate bowl.
  • Beat the butter with an electric mixer in a large bowl until creamy, about 30 seconds. Gradually add 2 cups of sugar and beat on high speed until light and fluffy. The mixture should be noticeably paler in color. Add the room-temperature egg yolks one at a time, allowing each yolk to blend into the butter mixture before adding the next.

  • Let the cake cool in the pan for ten minutes before inverting the cake onto a wire rack to cool completely.

  • Adjust oven rack one-third up from the bottom of the oven; preheat oven to 325°.
  • Butter a 9x5 inch loaf pan; dust it lightly with fine, dry bread crumbs; invert pan over paper and top to shake out excess.
  • Place the chocolate and instant coffee in a small mixing bowl; add in the boiling water; stir occasionally until the chocolate is melted.

  • Bake for 60-75 minutes, until pick comes out clean.
  • Cool the cake in the pan for several minutes; then cover with a rack, invert pan and rack, remove pan, and let cake cool upside down.
  • When the cake is cool, prepare icing.
  • Icing: place the chocolate in the top of a small double boiler over hot water on low heat.
  • Cover and let the chocolate melt.
  • Meanwhile, place the butter, vanilla, powdered sugar, and the egg in the small bowl of an electric mixer; beat until smooth.
  • Add in the warm melted chocolate; continue to beat until smooth and creamy.
  • Spread the icing over the top of the cake; smooth it, or you can make deep zigzag ridges by moving a spatula or the back of a spoon through this thick, creamy icing.
  • Let the cake stand for an hour or so until the icing is set (if you refrigerate this cake, the icing will become firm fudge candy).

1 teaspoon baking powder
½ cup unsalted butter, softened
1 cup white sugar
2 eggs

1 cup sour cream
6 ounces semisweet chocolate chips
½ cup finely chopped walnuts
¼ cup white sugar
1 teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 8x8 inch or 4 mini loaf pans.
  • In a medium bowl, mix flour, soda, baking powder and baking soda. Set aside.
  • In a large bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, mixing well each time. Add vanilla.
  • Add flour mixture alternately with sour cream. Mix until well blended. Stir in chocolate chips.
  • Make streusel mixture: In a medium bowl, mix walnuts, sugar and cinnamon together until blended.

This is a wonderful, moist banana cake. This can also be made in mini loaf cake pans also, they freeze very well. This cake is even better the next day.

1/2 cup butter or 1/2 cup margarine
1 2/3 cups sugar (or more or less to suit taste)
2 eggs, slightly beaten
1 teaspoon salt
2 teaspoons baking powder
1/2 teaspoon baking soda
1/3 cup sour cream
1 cup mashed banana (about 3 medium)
2 cups cake flour
2 teaspoons vanilla
2 cups miniature semisweet chocolate chips
1/2-1 cup chopped walnuts (optional)

Steps:

  • Set oven to 350 degrees F.
  • Grease a 9 x 5-inch loaf pan OR 3 mini loaf pans.
  • In a bowl, cream together the butter or margarine and the sugar, until light and fluffy.
  • Add in the eggs and the salt; beat until well mixed.
  • In a small bowl, dissolve the baking powder and the baking soda in the sour cream, and add to the creamed mixture; mix well until blended.
  • With a wooden spoon, stir in the banana pulp.
  • Gradually, add in the flour mixture, vanilla; mix well with a wooden spoon, until well combined.
  • Add in the chocolate chips, and the chopped nuts (if using).
  • Transfer the batter into a prepared baking pan.
  • Bake for 1-1/2 hours (for 9x5" baking pan), or until cake test done.
  • For the mini loaf pans, bake for 45-50 minutes, or until they test done.
