- Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
- Place the flour, baking powder, salt and 2 tablespoons plus 1 1/2 teaspoons sugar in a large mixing bowl. Cut the butter into 1/2-tablespoon-size bits and add to the flour. Using your fingertips or a pastry cutter, work the butter into the flour mixture until it resembles a coarse meal. Make a well in the center of the flour and pour in all the heavy cream, sour cream and 2/3 cup plus 1 tablespoon half-and-half.
- Stir the dry ingredients into the cream, then add the chives and mix with a wooden spoon until the dough just begins to come together into a ball. Turn the dough onto a lightly floured surface and knead 2 or 3 times to form a cohesive mass. (Do not overwork the dough.)
- Using a rolling pin, roll the dough to a 1-inch thickness. Dip a 2 1/2-inch biscuit cutter in flour, then cut the dough. Repeat until all the dough has been cut. Scraps can be gathered together and re-rolled one more time.
- Place the biscuits on the prepared baking sheet, leaving about 1/4-inch between them.
- Brush the tops of the biscuits with the remaining tablespoon half-and-half, and sprinkle with the remaining tablespoon sugar.
- Bake until lightly browned on top and flaky in the center, about 20 minutes.
CRISPY ONION RINGS RECIPE WITH DIPPING SAUCE

- Heat a dutch oven over medium heat with 1" of oil (or enough to cover the onion rings). You can use a deep fryer if you have one.
- In a medium bowl, whisk together 1 cup milk with 1 Tbsp vinegar and let sit 5 minutes. Whisk in 1/2 cup sour cream.
- In a separate bowl, whisk together: 1 cup flour, 1/2 Tbsp salt, 1/4 tsp black pepper, and 1 tsp garlic powder.
- Separate the onion rings and dip each ring in the milk mixture, then dredge with flour. (I used a fork to transfer from the wet bowl to the dry bowl so my hands didn't get as gunky). Repeat by dipping in milk mixture a second time and dredging again in flour. Place the finished onion rings on a plate until ready to fry.
- Once the oil is at 375˚F on a thermometer, or hot enough for the onion rings to sizzle, place 3-4 double battered onion rings in a single layer in the hot oil and cook for about 3 minutes, flipping halfway and fry until exterior is crisp and light golden brown. Let onion rings cool on paper towels so soak up any excess oil.

SOUR CREAM AND ONION SAUCE

- Mince and mash 1 garlic clove with 1/4 teaspoon kosher salt into a chunky paste. Whisk the garlic paste, 1/2 cup sour cream, 1/3 cup buttermilk, 1/4 cup mayonnaise, 2 teaspoons vinegar and 2 tablespoons chopped chives in a bowl. Season with salt and pepper.

- Heat the oven to 400 degrees, and line a baking sheet with parchment paper. Arrange the onion slices in a single layer on the prepared sheet, leaving room between each. (Use 2 baking sheets if the onions won't all fit comfortably on 1.) Drizzle with olive oil, sprinkle with 1 teaspoon salt and the sugar and gently flip to coat, keeping the rings as intact as possible. Cook for 30 to 40 minutes, turning once, until soft and browning (It's O.K. if some parts get crisp and charred).
- Let the onions cool slightly, then transfer to a cutting board and roughly chop. (You want to have small pieces of onion without making a paste.)
- Transfer the onions to a medium bowl and add the sour cream, yogurt, mayonnaise, garlic, remaining 3/4 teaspoon salt, lemon juice and black pepper. Fold to combine.
- Transfer to a serving dish and garnish with minced chives. Serve with potato chips.

- Make the onion rings-fill a countertop fryer with oil or pour a few inches of oil into a large Dutch oven.
- Heat the oil to 350° (the oil is ready when a 1-inch cube of white bread cooks to golden brown in 40 seconds).
- Combine buttermilk and sour cream in a bowl and add the onion rings; soak for a few minutes.
- On a plate, toss the flour with the chives; season generously with salt and pepper.
- Dip the onion rings in the seasoned flour, then again in the buttermilk, and again in the flour.
- Fry 1 or 2 rings at a time in the hoi oil, turning once, until golden, about 4 minutes.
- Transfer to a rack to cool.
- Make the burgers-heat a large skillet or griddle over med-high heat.
- In a large bowl, combine the beef, Worcestershire sauce, lots of pepper, and a little salt; mix thoroughly.
- Score the mixture into 4 equal portions and form them into patties slightly thinner at the center than at the edges for even cooking and to ensure a flat surface.
- Drizzle the patties with olive oil.
- Cook the burgers, flipping once, 10 minutes for medium.
- While the burgers cook, make the dressing; in a small bowl combine the buttermilk, sour cream, ketchup, garlic, herbs, and lemon juice; season with salt, pepper, and hot sauce.
- Place the burgers on the roll bottoms and top with the lettuce, onion rings, and ranch dressing.
- Set the roll tops in place.
