SPRING VEGETABLE SALAD WITH ASPARAGUS, PEAS AND RADISHES



Spring Vegetable Salad with Asparagus, Peas and Radishes image

This fresh and healthy salad is packed with all of your favorite spring veggies: thinly shaved asparagus, English peas, snap peas, and radishes.

For the salad:
1 teaspoon extra virgin olive oil
1/4 heaping cup sliced almonds
1/8 teaspoon salt, plus more for seasoning the salad
1/2 cup fresh or frozen (defrosted) English peas
6 stalks asparagus, tough ends trimmed
15 snap peas, strings stripped off
4 radishes
1 head butter lettuce, washed and torn into large pieces
1/4 cup loosely packed fresh mint (or fresh dill, tarragon or a combination), roughly chopped
Freshly ground black pepper
For the dressing:
2 tablespoons crème fraîche
1/4 cup extra virgin olive oil
1 tablespoon fresh lemon juice
Zest from 1/2 lemon
3 tablespoons fresh chives, minced
1 teaspoon Dijon mustard
1/2 teaspoon kosher salt

Steps:

  • Blanch peas if needed: If using fresh or frozen peas that are sweet and tender, leave them as is and add into a large bowl. If the peas are a bit starchy, blanch in a pot of salted boiling water until just tender, 2 to 3 minutes. Drain peas, and immerse in ice water, then drain and put in a large serving bowl. Set aside.

Asparagus Salad with Tender Greens and Mint image

This light, spring salad includes speck, a flavorful smoked ham that's a specialty of the South Tyrolean region of Italy.

1/4 cup champagne vinegar
1 spring onion (bulb only) or shallot, finely chopped
Coarse salt
1 pound green asparagus
1 pound white asparagus
1 tablespoon grainy Dijon mustard
1 teaspoon fresh lemon juice
3/4 cup extra-virgin olive oil
Freshly ground pepper
4 ounces mixed tender salad greens, such as mâche and baby arugula
3/4 cup loosely packed mint leaves
8 thin slices speck (about 4 ounces)

Steps:

  • Bring vinegar and spring onion to a boil in a small saucepan over medium heat. Cook until liquid is reduced by half, about 2 minutes. Set aside.
  • Bring a medium saucepan of water to a boil; add salt. Prepare an ice-water bath, and set aside. Peel bottom 2 inches of asparagus, reserving peels. Blanch asparagus peels 2 minutes; immediately transfer with tongs to ice-water bath to stop the cooking. (Keep water at a boil.) Remove peels with a slotted spoon; set aside. (Reserve ice-water bath.) Blanch asparagus until crisp-tender, about 4 minutes. Immediately transfer with tongs to ice-water bath. Drain; set aside.
  • Cut lower third from each asparagus spear, and transfer pieces to a food processor. Set remaining asparagus aside. Add reserved peels, the vinegar mixture, and mustard to processor; process until smooth. With processor running, pour in lemon juice and then oil in a slow, steady stream. Pass mixture through a fine sieve into a small bowl; discard solids. Season vinaigrette with salt and pepper.
  • Put salad greens and mint in a large nonreactive bowl (glass or ceramic). Drizzle with vinaigrette, and gently toss. Divide asparagus among serving plates. Top each serving with dressed salad greens and a slice of speck.

Raw Asparagus Salad with Breadcrumbs, Walnuts, and Mint image

Make this dish before you do any cooked asparagus dishes, at the start of the season when you get pristine spears. At first glance, the dish looks kind of "meh," but once you taste it, the flavor and texture blow you away. Be sure to cut the asparagus very thin.

1/3 cup dried breadcrumbs
1/2 cup freshly grated Parmigiano-Reggiano cheese
1/2 cup finely chopped lightly toasted walnuts
1 teaspoon finely grated lemon zest
Kosher salt and freshly ground black pepper
Dried chile flakes
1 pound asparagus, tough ends trimmed
About 1/4 cup fresh lemon juice
1/4 cup lightly packed mint leaves
Extra-virgin olive oil

Steps:

  • Put the breadcrumbs, Parmigiano, walnuts, and lemon zest in a large bowl. Add 1 teaspoon salt, a bunch of twists of black pepper, and 1/2 teaspoon chile flakes. Toss to combine everything.
  • Cut the asparagus on a sharp angle into very thin slices and add to the crumb mixture. Add 1/4 cup lemon juice and toss some more. Taste and dial in the flavors by adding more salt, black pepper, chile flakes, or lemon juice.
  • When the flavors are bright and delicious, add the mint and 1/4 cup olive oil and toss. Taste and adjust again, and serve.

I've been saving this since 1997 from McCall's magazine. There are 9 Passover recipes in it. The menu they gave is Gefilte Fish (no recipe), Chicken Soup With Matzo Balls, Mixed Green Salad (no recipe), Stuffed Tarragon Roast Capon With Rich Pan Gravy, Matzo Walnut and Mushroom Stuffing, Roasted Tzimmes, Asparagus With Lemon and Mint, Chocolate-Almond Torte With Strawberry Sauce, and Assorted Macaroons. One of these days I may get this made but for safe keeping I'm saving it here.

2 lbs asparagus, pencil-thin trimmed and cut diagonally into 2-in . lengths
2 tablespoons extra virgin olive oil
2 teaspoons lemon zest, finely grated
1/2 teaspoon salt
1/2 teaspoon fresh ground pepper
3 tablespoons very fresh mint mint leaves, finely shredded
1 tablespoon lemon juice

Steps:

  • In large pot of boiling salted water, cook asparagus 3 to 5 minutes, until crisp-tender. Drain in colander; dry on paper towel.
  • In serving bowl, combine olive oil, lemon zest, salt and pepper. Add hot aspargus. Toss mixture to bring to room temperature.
  • Just before serving, stir in mint and lemon juice.
  • Serve at room temperature.

A Scandinavian Vegetarian/Vegan salad from Eating Well Magazine. I have fond memories of simple salads such as these during my travels to Sweden. They recommend you use thin, tender asparagus for this recipe. NOTE: I found the raw asparagus kind of strange for me, so next time I am going to cook it slightly before putting it in the salad.

2 teaspoons freshly grated lemon zest
1/4 cup lemon juice
1/4 cup canola oil (may sub extra-virgin olive oil)
1 teaspoon sugar (may sub Splenda)
1/2 teaspoon salt
1/4 teaspoon fresh ground pepper
2 heads bibb lettuce, torn into bite-size pieces (may sub Boston lettuce)
2 cups very thinly sliced fresh asparagus (I only used 1 cup)
2 cups shelled fresh peas (may sub thawed previously frozen peas, I only used 1 cup)
1 pint grape tomatoes, halved
2 tablespoons minced chives (may sub scallion greens)
1/2 avocado, cubed (optional, but a great addition)

Steps:

  • Combine lemon zest and juice, oil, sugar, salt and pepper in a large salad bowl.
  • Add lettuce, asparagus, peas, tomatoes, chives (or scallion greens), and avocado if using; toss to coat.
