Steps:
- Divide the beef into 2-ounce portions and form into balls; you will have 28.
- Heat a large skillet or griddle over medium-high heat. Working in batches, place the beef balls on the surface and use a large spatula to smash them as flat as they can possibly go. Sprinkle with salt and pepper. Cook for 2 minutes.
- Flip and immediately place a slice of cheese on half of the patties. Thirty seconds later, transfer the other patties onto the ones with the cheese. Wait a few seconds, then place on the buns. Keep going until you have 14 burgers.
- Serve with lettuce, pickles and tomatoes on the side.
SOUPED UP BURGERS
I love these burgers. They are packed with so much flavor. I started making these last summer and the kids ask for them a lot. I used ground sirloin and found that it was really juicy. When I make these burgers, I put a slice of tomato on top while they are still on the grill and melt garlic cheddar over the tomato, WOW! Sometimes I even shred the cheese and ix it in as well.

SURPRISE BURGERS
My favorite burgers are 'Surprise Burgers'. The pineapple inside the burger adds a hint of sweetness, while the sauce adds some tanginess! Warning: the added sauce and pineapple makes for a mess with little ones!

- Preheat a grill for high heat.
- Divide the ground beef into four portions, and form patties around pineapple rings so that none of the pineapple is showing. In a small saucepan, mix together the ketchup, brown sugar, and mustard. Heat until sugar is dissolved. Set aside.
- Place burgers on the grill, and cook for about 5 minutes per side, or until well done. Spoon some of the brown sugar sauce over the burgers before serving.

HAMBURGER SOUP
I made this glorious hamburger soup one Sunday in winter for three very important reasons: One, it was so ding dang cold outside, all I could think about was soup. Two, church was canceled (Church? Canceled? I don't understand.) and I didn't have anything else to do. Three, I was hungry, man. I love hamburger soup so much because it's meaty and hearty and flavorful and satisfying. Mmmmmm! It just feels good to eat it, and as a bonus, it always reminds me of my grandmother Ga-Ga. And that always means it's going to be delicious.

- 1. In a large pot, combine the meat, onion, celery, and garlic. Cook the mixture over medium-high heat until the meat is totally browned, then drain off and discard as much fat as you can.
- 2. Add the tomatoes and their juices, bell peppers, and carrots. Throw in the potatoes, beef stock, tomato paste, salt, black pepper, parsley, oregano, and cayenne. Stir everything together, then bring the mixture to a boil.
- 3. Reduce the heat, cover the pot, and simmer the soup for 15 to 20 minutes, or until the potatoes are tender but not overly mushy. If the soup is too thick for your taste, just splash in a cup or two of beef broth until it's the consistency you like.
- 4. Dish it up and serve it piping hot!
- Make Ahead:
- For some reason, this soup always seems to taste better the next day! Feel free to make this ahead of time and store it in the fridge for up to 3 days. If soup is overly thick when reheated, add a little extra beef broth or water to thin it to your liking.
