Quick, simple and delicious sopa de fideo (a Mexican noodle soup) is the ultimate easy Mexican comfort food made with pantry friendly ingredients in less than 30 minutes! Fideo is a robust, savory soup made with thin fideo pasta (like short vermicelli), simmered in a robust, rich, smoky, tomato-based broth dressed with cilantro and lime juice. Steps:
- Add tomatoes, onions, garlic, jalapeno and all seasonings to your blender and blend until completely smooth; set aside.
- Heat oil in a 4-quart or larger Dutch oven over medium heat. Add the fideo pasta and sauté, stirring constantly, until lightly browned about 3-5 minutes.
- Add the blender tomato sauce and chicken broth and bring to a boil. Reduce to a simmer for 8-10 minutes or until noodles are tender.
- Stir in lime juice and chopped cilantro. Season to taste with salt, pepper and/or cayenne pepper.
- Serve with your favorite toppings such as cheese, jalapenos, avocados, tortilla chips, Mexican crema/sour cream, crushed chips, etc.

Steps:
- Cut the tomatoes in half and remove the seeds. Puree the tomatoes, onion, and garlic and set aside.
- Preheat 3 tbsp. of vegetable oil to medium-hot. Add the noodles and stir to coat with oil. Continue stirring until the noodles have started to brown.
- Strain the pureed tomatoes, onion, and garlic into the noodles. Notice the color of the noodles. Some of them should be very brown. The browned noodles add depth of flavor to the soup.
- Add the chicken broth and stir.
- Bring the soup to a boil. Cover and reduce to low heat. Cook for 10 minutes.
- Check the salt and adjust to taste before serving.
- Serve your soup with a couple of lime halves. A squirt of lime brings the flavors together. A little chopped avocado is a nice touch.

I've been to many Mexican restaurants and they seem to always give you a small cup of Sopa de Fideos (noodle soup) before the meal. This can easily be made at home with just a few ingredients. This is my version of this tasty Mexican noodle soup.

Steps:
- Place the tomatoes, onion, and garlic into a blender, and pulse several times to get the mixture moving; blend until smooth, 30 seconds to 1 minute.
- Heat the olive oil in a skillet over medium-low heat, and stir in the pasta. Fry the pasta gently, stirring often, until the pasta is golden brown, 2 to 5 minutes. Remove from heat.
- Pour the tomato mixture into a large saucepan, and stir in chicken broth and noodles. Bring to a boil, and reduce heat to medium low; simmer until the noodles are tender, 7 to 8 minutes. Season to taste with salt and black pepper, and stir in the cilantro; simmer 2 more minutes to cook cilantro.

- *NOTE: original recipe specified 1 tablespoon chili powder.
- Leave the dried pasta in the bag and using a rolling pin, crush the pasta until it is 1/8"-1/4" long.
- Heat 2 tablespoons of the olive oil over medium heat. Add the pasta; stirring constantly until light browned, approximately 4-5 minutes.
- In another small pan, heat the remaining 1 tablespoon of olive oil and lightly saute the red bell pepper until softened.
- Place the white onion, garlic, tomatoes, oregano and jalapeno in a blender and puree until smoothe. Add the puree to the fideos pasta, then add the broth (or water) and the red bell pepper. Stir only a few times.
- Cover pan and cook over low heat 10 minutes or until all moisture is absorbed.
- Fluff with a fork, transfer to a serving platter and top with the cheese and parsley.

- 1.In a boiling pan heat oil, once warm add fideo, garlic, cumin & red pepper flakes. Stir constantly, until fideo turn golden brown.
- 2.Once this is brown add water and tomato sauce. Stir often until the fideo is soft. You may need to add more water, to get to soup consistency because the noodles will absorb some of the water.
- 3. Then if you have left over chicken or pork chops heat them, cut them into thin slices and place with soup.
- 4.Serve with tortillas, sour cream & limes. Enjoy!

TRADITIONAL TEX-MEX SOPA FIDEO/PASTA
This is a very old recipe around my home and in many other cities on the border. I used to eat this as a kid and I still enjoy it today. It is great as a side-dish or appetizer with Mexican food. It is also just a great snack. This is a vegetarian dish if you opt to use canola oil instead of lard. Also, note that you can use fideo (vermicelli) or any other type of small pasta such as small shells, alphabet, etc.

- Put oil or lard in pan and brown the pasta. Make sure to watch it carefully as it burns easily.
- Add the onion and garlic. Cook about 2 minutes, stirring frequently.
- Add 8 oz. of tomato sauce and 3 cups of water. Bring to a boil.
- Add bullion cubes and ground cumin.
- Taste after bullion dissolves. Add salt and/or pepper, if desired.
- Cook until pasta is tender, about 10 minutes. Add remaining 1 cup water if needed.
- Consistency will be thickish, but still soupy.

- Break the pasta into 1 inch pieces.
- In food processor, combine the tomatoes, onions, garlic, and chipotle. Process until smooth.
- In heavy soup pan, heat oil to med heat. Add pasta and cook, stirring, until pasta turns golden about 5 to 7 minutes.
- Then add the tomato mix and broth. Increase the heat to med high and bring to a boil. Cook uncovered until the pasta is a la dente. That should be about 5 minutes [angel hair cooks faster remember?].
- Place soup in bowls, garnish with cilantro or use parsley. Serve asap.
- Notes: Use a Roasted Vegetable Broth. You want it dark and rich. Add Mrs Dash seasoning [I use the Southwest but be warned it is going to spike your heat up] Also don't use Canned as the recipe calls for. Use fresh tomatoes diced with some chilies. Or use Rotel if you must use canned.
- The recipe above is the Journal's recipe and it is a simple recipe suited to smaller childrens tastes [no hot.] I prefer to kick it up. Seasoning is omitted because of this so you need to add it. If you don't it is going to be a bland broth spiced only by the Roasted Vegetable broth.
