CHICKEN AND MANGO SOBA SALAD WITH PEANUT DRESSING

Chicken and Mango Soba Salad With Peanut Dressing image

Japanese buckwheat noodles are usually served cold or in a hot soup, but here, they're given a bright jolt of color and texture. Delightfully chewy soba noodles are combined with chicken, mango, snap peas, cucumber and a spicy peanut dressing for a great warm-weather lunch that's also picnic-friendly. Serve it alongside any grilled meat or fish, or leave the chicken out to make it vegetarian. To make this ahead, prepare all the salad components in advance, but wait until serving time to combine to keep flavors and textures vibrant.

Time 25m

Yield 4 to 6 servings

Number Of Ingredients 17

1/2 cup smooth peanut butter, natural or regular
1/4 cup hot water
3 tablespoons low-sodium soy sauce
2 tablespoons rice wine vinegar
1 tablespoon sesame oil
1 tablespoon finely grated fresh ginger
1 tablespoon lime juice (from 1 lime)
1/2 teaspoon Sriracha or other hot sauce
Kosher salt and black pepper
1/2 teaspoon granulated sugar (optional)
10 ounces sugar snap peas (about 2 cups)
8 ounces soba noodles
2 cups shredded cooked chicken
1 small or 1/2 large mango, peeled and thinly sliced
2 mini cucumbers, thinly sliced (or 1/2 English cucumber)
1 cup loosely packed fresh cilantro leaves
2 Fresno chiles, thinly sliced

Steps:

  • Bring a large pot of water to a boil. In a medium bowl, whisk peanut butter, hot water, soy sauce, rice wine vinegar, sesame oil, ginger, lime juice and Sriracha until smooth. Season to taste with salt. Add sugar, if using, and stir. Set aside.
  • Drop the snap peas into the boiling water and cook until they just turn bright green, about 30 seconds. Using a mesh strainer or a spider (leave the water in the pot), transfer to a colander and rinse under cold water until cool. Drain and slice each pea lengthwise into 2 or 3 pieces. Set aside.
  • Return water to a boil and cook soba noodles according to package instructions. Drain and rinse under cold water until cool (if noodles get sticky, rinse again with cool water).
  • In a large serving bowl, toss noodles with the chicken, mango and peanut dressing. Add two-thirds of the snap peas, cucumbers, cilantro and chiles, reserving the rest for garnish. Season to taste with salt and pepper.
  • When ready to serve, top with remaining snap peas, cucumbers, cilantro and chiles and serve immediately.

  • In a medium sized pot, cook 2 bundles of soba noodles in boiling water for about 5-6 minutes until the noodles are al dente. Once the noodles are cooked to your liking, drain them and run them through cold water to stop the cooking process and to prevent them from sticking to each other.
  • In a large skillet, add olive oil over medium to low heat. Once the olive oil has heated, add minced garlic. Cook until the garlic becomes golden brown and aromatic, about a minute. Next, add the broccoli florets. Cook the broccoli for several minutes until tender. Toss in shredded chicken, and cook until warmed, then remove from heat. Season lightly with a pinch of salt.
  • In a small bowl, whisk together peanut butter, rice vinegar, granulated sugar, soy sauce, water, crushed red pepper, and finely minced garlic until well combined. If the peanut sauce is too thick for your liking, add more water to thin out the sauce.

  • Cook the soba noodles: Boil a large pot of water. When it comes to a boil, add the soba noodles and cook according to the directions on the package. (typically 3-6 minutes) Rinse the soba noodles in cold water and set aside.
  • Season the sliced chicken with salt and pepper. Heat 1 tablespoon of sesame oil in a large skillet and add the chicken. Allow to brown for 3-4 minutes, then stir fry until it is fully cooked (about 3-4 more minutes). Set cooked chicken aside.
  • Prepare the peanut sauce: Combine all the ingredients in a medium bowl and stir until they are well combined. The sauce will look chunky at first until the peanut butter gets mixed with the rest of the liquid ingredients, but it will turn smooth if you keep stirring. Start with 1 Thai chili pepper (or 1/4 tsp red pepper flakes) and see how you like the spiciness. Add the second one if you want more heat.
  • In a large wok or skillet with high sides, heat up the other tablespoon of sesame oil. Stir fry the sliced onion for 2-3 minutes, or until it starts to soften. Add all the vegetables - sliced peppers and snow peas - and stir fry for another 2-3 minutes to get them warmed up as well.

  • Bring medium pot, filled half with water, to a boil. In the meanwhile, get all ingredients ready, most importantly, cut the chicken, chop vegetables and measure peanuts. In a medium bowl, whisk Sauce Ingredients and set aside.
  • Add soba noodles to a pot with boiling water and cook for 2 - 3 minutes or al dente, stirring constantly and making sure the noodles do not stick. Reserve about a cup of noodles' water (starchy water is great for diluting the sauce), transfer noodles to a colander, rinse with cold water and leave to drain.
  • Preheat non-stick wok or large deep skillet on high heat and add chicken. Cook until golden brown, stirring occasionally. This should take about 10 minutes (depending how much water your chicken contains). Add 1/3 of prepared Sauce and stir constantly for a minute or until sauce thickens and coats the meat. Remove from heat and transfer a bowl. Set aside.
  • Rinse and dry wok/skillet and return to the stove, on high heat. Add bell peppers and stir fry until fragrant and some peppers are golden brown, stirring constantly. Reduce heat to medium and add kale, soba noodles, chicken and remaining sauce. Stir gently until mixed, about a minute and remove from heat. Sauce will thicken as it warms up. If noodles absorb too much sauce, add some reserved noodles' water. Add peanuts, green onions and red peppers flakes. Serve hot.
