3 lb country style pork ribs
1 medium green cabbage head -- chopped
1 medium white onion
4 medium yukon potatoes -- peeled & cubed
1/4 c apple cider vinegar
2 Tbsp brown sugar
2 Tbsp cooking oil -- your choice
as needed salt & pepper -- season your pork

Steps:

  • 1. Heat your oven to 325° F.
  • 2. Place the cabbage, onion, and potatoes in the bottom of a Dutch oven.
  • 3. Heat a couple of tablespoons of oil in a pan over medium-high heat.
  • 4. Add seasoned pork ribs and cook until browned on each side. Remove pork and place over cabbage. Pour off fat.
  • 5. Combine vinegar and brown sugar in a small bowl.
  • 6. Add to frying pan, stirring to remove browned pork bits from bottom of pan.
  • 7. Pour over ribs and veggies.
  • 8. Cover & bake for 2 hours or until the internal temperature reaches 155° F.

2 pounds boneless country-style pork ribs
1/2 teaspoon salt
1/4 teaspoon pepper
8 small red potatoes (about 1 pound), halved
4 medium carrots, cut into 1-inch pieces
3 celery ribs, cut into 1/2-inch pieces
1 medium onion, coarsely chopped
3/4 cup water
1 garlic clove, crushed
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted

Steps:

  • Sprinkle ribs with salt and pepper; transfer to a 4-qt. slow cooker. Add potatoes, carrots, celery, onion, water and garlic. Cook, covered, on low until meat and vegetables are tender, 6-8 hours., Remove meat and vegetables; skim fat from cooking juices. Whisk soup into cooking juices; return meat and vegetables to slow cooker. Cook, covered, until heated through, 15-30 minutes longer.

Country-style Pork Ribs ribs are a great rich and fall-apart tender alternative to traditional ribs. Cheap, easy to make, and SO good, this might just be your new favorite way to eat pork.

Roasting pan (or rimmed baking sheet)
Silicone basting brush (optional)
Country-style pork ribs*
Salt and pepper
Your favorite BBQ sauce

Steps:

  • Preheat your oven to 300°F. Salt and pepper both sides of your ribs and place in a single layer in your pan, fattier side up.
  • Cover the pan tightly with foil and bake for 2 hours. Carefully (steam and liquid in the tray will be hot!) remove ribs from the oven and check the meat. They should be starting to become tender. If they still feel tough, re-cover them and place them back in the oven for 15 to 30 minutes.
  • Transfer ribs to a plate and drain liquid from the pan. Return ribs to tray and brush with a generous coating of BBQ sauce.
  • Turn oven down to 275°F and bake ribs, uncovered, for 1 hour more, or until you can pull the meat apart with a fork (if your ribs were small and already pretty tender when you put them back in the oven, start checking after 20 minutes). Brush with another coat of BBQ sauce, rest for 5 minutes, serve and enjoy!

1/2 teaspoon onion powder
1 medium onion, sliced
1/2 cup barbecue sauce

Steps:

  • Preheat oven to 325 degrees Fahrenheit.
  • Combine garlic powder and onion powder.
  • Rub seasoning mixture over the ribs.
  • Line a shallow baking pan with foil; oil or spray foil with nonstick cooking spray.
  • Arrange ribs on the foil.
  • Top ribs with onion slices.
  • Cover with another piece of foil and bake for 1 hour and 15 minutes, or until very tender.

This is a very economical recipe that I came up with out of sheer boredom. Country ribs are always on sale and because of that, I buy them often, but we got tired of BBQ ribs fast! I used very lean, boneless ribs and they came out flavorful and fork tender. I made the entire recipe in my cast iron skillet, but you can also bake it in a casserole dish. As always, this is a base recipe. Feel free to adapt to your family's tastes.

3 country ribs
1/4 cup flour (for dredging)
1/2 teaspoon sage
salt and pepper
1 tablespoon butter
1 tablespoon olive oil
3/4 cup onion (coarsely chopped)
1 garlic clove (minced)
1 (10 3/4 ounce) can cream of mushroom soup
1/4 cup beef broth
1/4 cup water
1/2 teaspoon Kitchen Bouquet (optional)
1/4 teaspoon sage

Steps:

  • Heat oven to 350°F.
  • Dredge in flour sage, salt and pepper mixture.
  • Heat oil and butter in a medium high fry pan.
  • Add ribs and brown on all sides, then remove from pan.
  • Lower heat and brown onions and garlic lightly, about 2 to 3 minutes.
  • Add soup, broth, water and Kitchen Bouquet, stir to combine.
  • Add ribs back to pan and spoon soup mixture over meat.
  • Bake covered for 35 minutes then flip ribs and check thickness of gravy, add more liquid at this point if necessary.

1/2 cup sugar
1/2 cup catsup
1/4 cup cider vinegar

1/4 cup onion, minced
1 roasted garlic clove, minced
1/4 cup spicy brown mustard
1/2 cup light beer
1/4 cup brown sugar
2 tablespoons apple cider vinegar

2 teaspoons smoked paprika
2 tablespoons brown sugar
fresh ground black pepper, to taste
4 medium russet potatoes, cut into wedges
2 tablespoons oil

Steps:

  • Saute onion in 1 tbps oil until softened, add remaining sauce ingredients, and cook until reduced to a thick barbecue sauce consistently, about 20-30 minutes. Puree in blender or with stick blender, if desired. Allow to cool to room temperature.
  • Preheat oven to 400°F.
  • Meanwhile, sprinkle ribs generously with rub. You will probably not use all the rub, leftovers are good on chicken, vegetables, etc. Allow to sit while the sauce finishes reducing.
  • Toss potatoes with remaining oil and a little more rub.
  • Cook ribs on charcoal or indoor grill, on medium heat until cooked through and nicely browned, about 20 minutes.
  • Meanwhile, bake potatoes on a large baking sheet, about 20 minutes.
  • Toss ribs in sauce, reserving some for dipping, if desired.
