GRILLED SALMON PATTIES

Grilled Salmon Patties image

This recipe has been altered and tweaked with each batch until I felt it couldn't suit us any better. I used to remove the bones and skin, which was time consuming, but found after smashing everything the bones are not noticed and the skin adds flavor! This is quick and easy and flavorful enough for the toddler in my house. Grilling these salmon patties is a healthy alternative to beef burgers. Serve alone, on a bun, or on a bed of fresh greens.

Time 40m

Yield 4

Number Of Ingredients 8

¼ cup cracker crumbs
1 large egg, beaten
1 tablespoon lemon juice
1 tablespoon hot sauce
1 teaspoon prepared yellow mustard
½ teaspoon paprika
1 (14.75 ounce) can salmon, drained and flaked
¼ cup honey mustard

Steps:

  • Combine cracker crumbs, egg, lemon juice, hot sauce, mustard, and paprika in a bowl; add salmon, stirring well. Allow the mix to stand for at least 5 minutes so that the flavors can join hands.
  • Preheat a grill to 300 degrees F (150 degrees C). Line a grill pan with foil.
  • Squeeze excess liquid from the mixture; this will allow the patties to hold together and turn that pretty golden brown. Form into patties.
  • Cook on the preheated grill until golden brown and fish flakes easily with a fork, about 10 minutes on each side. Serve with honey mustard.

GRILLED SALMON PACKS WITH SUGAR SNAP PEAS AND CORN

Grilled Salmon Packs with Sugar Snap Peas and Corn image

Can't get much easier than this easy way to grill fish and a frozen vegetable medley together in a foil packet, with seasonings tucked inside too.

Provided by Betty Crocker Kitchens

Categories     Entree

Yield 2

Number Of Ingredients 5

1 cup frozen sugar snap peas
1/2 cup frozen corn
1/2 teaspoon garlic-pepper blend
2 (4 to 6-oz.) salmon steaks
1/4 cup purchased Dijon and honey marinade with lemon juice

Steps:

  • Heat gas or charcoal grill. Cut two 18x12-inch sheets of heavy-duty foil; spray foil with nonstick cooking spray.
  • For each packet, place 1/2 cup sugar snap peas and 1/4 cup corn onto center of foil sheet. Sprinkle with 1/4 teaspoon garlic-pepper blend. Wrap each packet securely using double-fold seals, allowing room for heat expansion.
  • Sprinkle both sides of each salmon steak with remaining 1/4 teaspoon garlic-pepper blend.
  • When grill is heated, place salmon and foil packets, seam side up, on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Cook 10 to 15 minutes or until fish flakes easily with fork and vegetables are tender. Turn salmon once and brush with 2 tablespoons of marinade during last 5 minutes of cooking time.
  • Open packets carefully to allow steam to escape. Serve vegetables with salmon. Drizzle salmon with remaining marinade.

Smoked Salmon, Sugar Snap Peas and Pasta image

Provided by Food Network

Categories     main-dish

Time 15m

Yield 2 servings

Number Of Ingredients 7

3 cups sugar snap peas, ends snapped off
8 ounces fusilli (corkscrew pasta)
1 green onion, cut on bias, in quill like shapes
1/2 cup of a mustard vinaigrette
1/2 pound smoked salmon cut into thin julienne
1/2 cup, packed fresh parsley leaves, minced
Salt and pepper

Steps:

  • Bring a large pot of salted water to a boil. While this is coming to a boil prepare the remaining ingredients. When the water comes to a boil, add sugar snap peas and cook for about a minute or until crisp tender. Retrieve them from water with a sieve and run under cold water to stop the cooking. Pat dry and set aside. Add pasta to water and cook until al dente, about 8 to 10 minutes. When pasta is done, drain and refresh under cold water. Pat dry. Combine in a bowl with green onion, mustard vinaigrette, smoked salmon and parsley. Season well to taste with salt and freshly ground black pepper.

SMOKED SALMON AND SUGAR SNAP PEA SALAD-IN-A-JAR

Smoked Salmon and Sugar Snap Pea Salad-in-a-Jar image

Love bagels, cream cheese and smoked salmon? Well, here they are, stacked along with spring's best produce and finished with an everything-bagel-inspired dressing (which you can also use on any non-vertical salad). The jar makes this salad super portable and shows off its pretty layers.

Provided by Food Network Kitchen

Categories     main-dish

Time 1h

Yield 4 servings

Number Of Ingredients 17

1 tablespoon toasted sesame seeds
1 teaspoon poppy seeds
1 teaspoon dried onion flakes
8 radishes, cut into thin wedges
8 cups baby arugula (about 5 ounces)
1 cup broccoli sprouts or alfalfa sprouts
8 ounces smoked salmon, torn into bite-size pieces
2 cups bagel chips, slightly crushed
1/2 small red onion, thinly sliced
3 tablespoons white wine vinegar
Kosher salt
4 large eggs
3/4 pound sugar snap peas, halved crosswise
1/2 cup milk
4 ounces cream cheese
2 tablespoons mayonnaise
1 small clove garlic

Steps:

  • Make pickled onions: Toss the onions with 2 tablespoons each vinegar and cold water and a large pinch of salt in a small bowl. Let sit for at least 30 minutes, tossing occasionally. (The onions will turn bright pink.) Strain.
  • Cook the eggs and peas: Put the eggs in a medium saucepan, and add water to cover by an inch. Bring to a boil, add the peas, cover and remove from heat. Let sit for 10 minutes. Run the eggs and peas under cold water to cool. Remove the eggshells and roughly chop the eggs.
  • Make the dressing: Pulse the milk, cream cheese, mayonnaise, remaining 1 tablespoon vinegar, garlic and 1/2 teaspoon salt in a blender until smooth. Pour the mixture into a small bowl, and stir in the sesame seeds, poppy seeds and onion flakes. Refrigerate the dressing, covered, until ready to serve.
  • Assemble the salads: Using four 32-ounce wide-mouthed glass jars with lids, evenly divide the radishes among the jars, then add the following in separate layers: the arugula, sprouts, smoked salmon, peas, chopped eggs and pickled onions. Pack the dressing and bagel chips (1 serving is about 1/3 cup dressing and 1/2 cup chips) in separate small containers for transporting.
  • Just before serving, transfer the jarred ingredients to a large bowl, add the bagel chips, toss with the dressing and season with salt and pepper.

SPICED SALMON WITH SUGAR SNAP PEAS AND RED ONION

Spiced Salmon With Sugar Snap Peas and Red Onion image

Seared sugar snap peas and red onions make a sweet accompaniment to silky salmon fillets in this lovely springtime one-pan meal. The salmon fillets, coated in a garlicky spice blend, are briefly browned, leaving fragrant, savory drippings in the pan. Those drippings then season the vegetables, infusing them as they cook. Keep an eye on the salmon, especially if you prefer it on the rare side. Thin fillets in particular are all too easy to overcook.

Time 30m

Yield 4 to 6 servings

Number Of Ingredients 9

4 tablespoons extra-virgin olive oil
2 garlic cloves, finely grated or minced
1 teaspoon baharat spice blend , or use another warm and earthy spice blend, such as garam masala
4 (6- to 8-ounce) salmon fillets
Kosher salt and black pepper
2 medium red onions
1 pound sugar snap peas (4 cups)
Lime wedges
1/2 cup chopped fresh cilantro or mint leaves and tender stems

Steps:

  • Heat oven to 400 degrees. In a small bowl, stir together 1 tablespoon oil, garlic and baharat. Season salmon all over with salt and black pepper. Rub spice mixture all over salmon. Set salmon aside while slicing the onions and sugar snap peas.
  • Cut the onions in half root-to-stem, then peel them and slice into 1/4-inch-thick half-moons. Trim the peas and cut them in half crosswise.
  • In a large, preferably nonstick ovenproof skillet, heat 2 tablespoons oil over high heat. Add fish, skin-side down if there's skin, and cook until browned, 3 to 4 minutes. Transfer salmon to a plate, browned-side up. (Don't sear the other side; the salmon will finish cooking in the oven.)
  • Reduce heat to medium and add the remaining tablespoon of oil to the skillet. Stir in onions and cook until lightly golden, 3 minutes. Add snap peas and a pinch each of salt and pepper, stirring everything to coat with pan juices. Cook until peas have softened and browned slightly, 5 to 7 minutes. Put salmon, browned-side up, on top of peas and transfer pan to the oven. Roast until fish is just cooked through, 5 to 8 minutes longer.
  • Squeeze a little lime juice over salmon and transfer fish to serving plates. Stir herbs into peas and onions. Taste, and add more salt and lime juice, if needed. Serve with the salmon, with the lime wedges on the side.

CREAMY SALMON & SUGAR SNAP PASTA

Creamy salmon & sugar snap pasta image

You'll love the classic combination of salmon, lemon and peppery rocket in this tasty summer pasta

Provided by Jane Hornby

Time 15m

Number Of Ingredients 6

400g fusilli pasta or other pasta shape
150g pack sugar snap peas , halved lengthwise
2 salmon steaks, 300g/10oz in total
zest and juice ½ lemon
4 tbsp reduced-fat crème fraîche
100g bag rocket

Steps:

  • Boil the pasta, adding the sugar snaps to the water 2 mins before cooking time is up. Cool under running water, then drain. You can steam the salmon over the pasta pan for about 7 mins if you have a steamer basket, or put onto a heatproof plate and microwave on High for 2-3 mins until the flesh flakes easily. Peel away any skin, break into large flakes, then allow to cool.
  • Mix the lemon zest, juice and crème fraîche together, then season to taste. If you need to, loosen with a few tbsp of water to make the consistency of double cream. Toss the pasta, peas and rocket into the dressing, flake in the salmon, then gently turn in the bowl a few times.
