Delight your guests by serving this sweet and tangy pineapple raita - a yogurt-based condiment that is a cooling accompaniment to spicy biryanis and parathas.

2 cups pineapple chunks
2 tablespoons sugar
2 cups thick yogurt
1/4 teaspoon chili powder
1/4 teaspoon ground black pepper
1/4 teaspoon roasted cumin powder
1/2 teaspoon black salt
1 tablespoon dried (crushed mint leaves (or use fresh ones))
1/4 cup chopped cilantro (optional)
1/4 cup pomegranate arils (optional)

Steps:

  • Place a pan over medium heat and add pineapple chunks and sugar.
  • Cook for about 2-3 minutes and turn the pineapple chunks once. Shake the pan to allow the caramelized sugar to coat the pineapple nicely. Cook for another 2-3 minutes till the pineapple turns golden brown.
  • Whisk the yogurt till it is smooth. Add the remaining ingredients (chili powder, pepper powder, black salt, roasted cumin powder, and mint leaves) and mix well.
  • Do a taste test and adjust the seasonings as needed. Refrigerate for an hour.
  • Sprinkle with cilantro and pomegranate arils before serving.

This Pineapple Raita recipe is sweet, sour, salty, refreshing and made with curd (yogurt), pineapple, herbs, spices and pomegranate. A delightful addition to any plate!

1 cup Curd ((yogurt) or any plant-based yogurt)
½ cup chopped pineapple (- chopped in small cubes)
¼ cup pomegranate arils (- optional)
½ teaspoon red chili powder (or cayenne pepper or paprika)
1 teaspoon roasted cumin powder
1 to 2 tablespoons sugar (or add as per taste)
salt (or edible, food grade rock salt ot black salt as required)
1 to 2 tablespoons chopped coriander leaves ((cilantro) - for garnish)

Steps:

  • With a wired whisk, whip the curd till its smooth.
  • Add the spice powders, sugar and salt to the curd. Mix well.
  • Add the chopped pineapple cubes and half of the pomegranate arils.
  • Reserve the other half for garnishing.
  • While serving garnish pineapple raita with the remaining pomegranate arils and chopped coriander leaves.
  • Serve pineapple raita immediately with any North Indian main course.

2 cup thick beaten yogurt
1/2 tsp cumin powder
1/2 tsp finely chopped green chilli
1 tsp coriander leaves finely chopped
1 tsp pomegranate seeds
1 tsp black pepper
Salt to taste

Steps:

  • 1. Take yogurt in a bowl. 2. Add cumin seed powder & salt. Beat the yogurt until it becomes smooth. 3. Add chopped green chili in it & mix well. 4. Add pineapple chunks & mix well. 5. Take out pineapple raita in a serving bowl & garnished with chopped coriander leaves & pomegranate seeds. 6. Keep it in refrigerator for 1-2 hours. Serve chilled.

1 teaspoon oil
1/4 teaspoon mustard seeds
1/2 teaspoon ginger, grated
1/2 cup canned pineapple, finely chopped
2 tablespoons pineapple syrup, from the can
1 cup yogurt, beaten till smooth
salt
1/4 teaspoon red chili powder, to taste
3 -4 curry leaves

Steps:

  • Heat oil in a pan.
  • Add mustard seeds.
  • Allow to splutter.
  • Once they stop spluttering, add ginger, chopped pineapple and the pineapple syrup.
  • Simmer on low heat for 3 minutes or until thick.
  • Remove from heat.
  • Allow to cool.
  • Pour into a bowl that has the beaten yogurt.
  • Add salt, red chilli powder and curry leaves.
  • Mix well.
  • Garnish with a few slices of pineapple from the can.
  • Serve chilled.
