- 1. Preheat oven to 400 degrees F. Wash and cut potatoes into bite-size pieces. Place potatoes in a medium sized roasting pan. Add diced onion, shallots, garlic and bacon. Mix potatoes and other ingredients with softened butter until ingredients are coated thoroughly with butter.
- 2. Cover with foil and cook approximately for 1 hour or until the potatoes are almost fork tender. Remove foil. Season with salt and pepper and place back in the oven for 20 to 25 minutes or until potatoes have a nice golden brown color. Garnish with grated cheese and chives.

CHUCK WAGON SANDWICH
These are great! They are kind of like a pork tenderloin sandwich, but made with a beef patty instead of pork. You can use precooked breaded beef patties or precooked breaded chicken-fried steak patties in this as well. Look for them in the freezer section (heat and eat).

- Heat beef patty by pan frying in shallow oil or baking in oven at 350F 10-12 minutes or until crispy, whichever is directed for your patty or whichever you prefer.

- Combine flour, salt and pepper in a large plastic bag. Place beef cubes in bag and shake to coat evenly. , In a Dutch oven or large skillet, brown beef in oil. Add onion, green pepper and garlic; cook until peppers are crisp-tender. Stir in chili powder, oregano and reserved vegetable liquid; bring to a boil. Reduce heat and simmer, covered, until meat is tender, about 45-50 minutes. Stir in beans and corn; simmer 10 minutes or until heated through.

SPICY CHUCK WAGON SOUP (TASTE OF HOME)
This soup is hearty and delicious! The meat just falls apart, and the spicy component is a nice change from traditional beef stews. Even a friend of ours who is a self-proclaimed soup hater liked this! We found this recipe in a Taste of Home Heartwarming Soups magazine. We make this a little ahead of time and let it sit on low for about an hour before eating it so the beef can get a little extra tender!

- In a large resealable plastic bag, combine the flour, paprika, 1 teaspoon chili powder, salt, and garlic powder.
- Add beef and shake to coat.
- In a large pot, brown the beef in oil (in batches if necessary).
- Stir in the onions, tomatoes, beef broth, bay leaf, cayenne, and remaining chili powder.
- Bring to a boil.
- Reduce heat, cover, and simmer for 30 minutes, stirring occasionally.
- Add potatoes and carrots.
- Cover and simmer 35-40 more minutes or until meat and vegetables are tender.
- Add corn.
- Reduce heat to low and let the flavors blend for 1 hour (you can skip this step if you're in a hurry!).
- Discard bay leaf before serving.
