SOAK AND ROAST PECANS NO ADDED OIL OR BUTTER
Simple yet taste so good. My MIL makes these a lot. Think the original recipe, which has been altered, came out of Southern Living last year. You can add any dry flavoring and seasonings you would want on them I believe. Unsure of serving size, just had to put a number there. I'm just sticking numbers in spaces so zaar can publish it. Nothing has to be measured, you just roast how many you want and eat how many you dare! Prep time is soak time and oven preheating.

Steps:
- Preheat oven to 450 degrees.
- Soak desired amount of pecans in water for 20 minutes.(I use warm water for the soak).
- Drain water from the nuts and toss a little salt around on them.
- Salt a shallow pan.
- Arrange nuts in single layer on presalted pan.
- TURN THE OVEN OFF.
- Place the pan in the hot BUT OFF oven and let it sit for 90 minutes.
- Remove and eat!
- Note: I sometimes add things like garlic powder or pepper to the mix. You could add any dry ingredients to this and it would come out. I tried it with walnuts just because I had extra -- ewwwwwww nasty.

TOASTED BUTTER PECANS
This recipe comes from the cookbook that accompanied my first microwave, in 1974. These salty, crunchy pecans are good for snacking. They also go well with drinks. You may want to adjust the amount of seasoned salt to your taste, particularly if you use salted butter.

Steps:
- Put pecans in a 1½-quart microwave-safe casserole. Sprinkle with seasoned salt and arrange the four pieces of butter evenly.
- Microwave on HIGH for 5-6 minutes or until pecans are crunchy.
- Stir to distribute seasoned salt and butter. Serve warm or cold.
TOASTED BUTTER-GLAZED PECANS
A nice treat to have when serving martinis or top your favorite pie, salad or veggie dish with them. Wrap in a air-tight container. Give as a gift. Appetizer or dessert you choose.

- Preheat oven to 350°F.
- Lightly spritz baking sheet with cooking spray.
- To toast pecans, put them on a baking sheet and toast them just until they become aromatic, about 5 minutes.
- You have to watch them carefully as they are easily scorched.

Adapted from Pampered Chef's Season's Best. I love these pecans on a spinach salad with strawberries and feta... mmmmm! I've also been known to eat them all before they get on the salad!

- Combine brown sugar, butter, corn syrup and salt in a large skillet.
- Stir over medium heat until butter is melted.
- Add pecans and cook, stirring constantly, for 5-7 minutes. Make sure pecans are all coated evenly.
