1 medium onion (finely diced)
3 cloves garlic (minced)
1/4 cup tomato paste
1 can (28 oz diced tomatoes, undrained)
1 can (15 oz black beans, drained)
1 cup chicken broth
1 teaspoon ground cumin
1 teaspoon chili powder
Salt and pepper to taste
2 cups white whole wheat flour
1/2 cup cold butter (cubed)
1 tablespoon baking powder
1 teaspoon salt
1/2 cup shredded cheddar cheese
1 tablespoon agave syrup
3/4 cup milk
Additional milk for brushing

Steps:

  • Make the chili: In a large skillet over medium-high heat, brown turkey with onion and garlic until no longer pink. Stir tomato paste, diced tomatoes, black beans, broth, and seasonings into chili. Bring to a simmer over medium-high heat, then reduce heat, season with salt and pepper to taste and keep warm.
  • Make the biscuits: In a large bowl, combine flour and butter until crumbly and butter is in pea-sized crumbs. Mix in baking powder, salt, cheese, and agave syrup. Pour milk over top and gently fold until a shaggy dough forms.
  • Turn dough onto a floured surface and knead several times until dough just comes together. Pat dough into 1 -in thick round and use a 2-in biscuit cutter to cut out biscuits.
  • Pour chili into a greased 9x13 baking pan. Arrange biscuits on top of chili and brush biscuits with additional milk.
  • Bake casserole at 400F 18-20 minutes or until biscuits are golden-brown and chili is bubbly. Let cool 5 minutes then serve warm. Enjoy!

This is yummy and filling; good comfort food. My husband calls it Chili Pot Pie. If you like it spicy you can add red pepper flakes or other spices with some heat. Don't let the list of ingredients or steps intimidate you, it is really easy and many of the ingredients you probably already have on hand. This is super simple and easy to make throughout the year.

1 lb lean ground turkey or 1 lb ground beef
1/2 cup bell pepper, chopped
1/3 cup onion, chopped
1 (14 ounce) can diced tomatoes, undrained
1 (14 ounce) can kidney beans, drained and rinsed
1/2 teaspoon garlic powder
1/2 teaspoon chili powder
1/2 teaspoon cumin
1/4 teaspoon paprika
1/4 teaspoon oregano leaves, dried and crushed

Steps:

  • Brown turkey in 12-inch skillet, drain grease. Add onion and bell pepper to the ground meat and cook until veggies are crisp tender.
  • Stir tomatoes with juice, beans, spices and Tabasco sauce into meat mixture. Simmer over medium heat for 10 (you can simmer longer if you'd like).
  • Remove meat mixture from stove, add 1/3 cup salsa and 1/3 cup cheese and stir until well blended.
  • Pour mixture into 13 X 9 inch casserole dish, level out mixture.
  • Sprinkle 1/3 cup cheese over beef mixture in casserole.
  • Split each biscuit in 1/2 lengthwise, this is why the layered biscuits are important, it makes it easier. Arrange biscuits over the cheese and beef mixture, covering the top of the casserole.
  • Add remaining 1/3 cup of cheese on top of biscuits.
  • Bake at 350°F for 15 minutes on bottom shelf of oven, and 15 additional minutes on top shelf of oven until biscuits are deep golden brown.
  • Serve with sour cream, salsa and additional cheese if desired.

From Gourmet Magazine, November 2007, page 208. Made this for lunch New Year's Day and it was a hit. Substitute chicken if you wish. If you don't feel like messing with the vegetables, use a thawed bag of frozen stew veggies or mixed veggies. Works great. I am not including the stock recipe from the magazine as it is a standard carcass/skin one that doesn't need explanation. I cut the recipe in half and cooked it in an 11-inch enameled cast iron frying pan. Works great. If you are feeling adventurous, sub. chunks of beef, beef stock and some red wine, maybe some garlic and a shot of Worcestershire and make a beef pot pie. If you try it, let me know how it turns out.

2 cups flour
2 teaspoons baking powder
1 teaspoon baking soda

1 cup extra-sharp cheddar cheese, coarse grated
1/4 cup parmesan cheese, grated
6 teaspoons cold butter, cut in chunks
1 1/4 cups buttermilk, well shaken

Steps:

  • Filling:.
  • Cook onion, carrots, celery, parsnip and thyme in butter with salt and pepper in a 3 - 4 quart oven proof shallow pot. Stir occasionally, cook until almost tender, about 10 - 12 minutes.
  • Add mushrooms and cook, stirring, until tender, 5 - 7 minutes.
  • Sprinkle with the flour and cook, stirring constantly, for 2 minutes.
  • Stir in stock, bring to a boil, reduce to a hard simmer while stirring. This should thicken in about 3 minutes.
  • Stir in turkey, peas, salt and pepper to taste.
  • Remove from heat while making biscuits.
  • Biscuit crust:.
  • Preheat oven to 400°F.
  • Sift dry ingredients into medium bowl. Add cheeses and toss around to cover cheese with flour mixture.
  • Add cold butter and work into cheese/flour mixture until it is the consistency of a coarse meal.
  • Stir in buttermilk. Stir only until a dough forms.
  • Assembly:.
  • Return pan with filling to heat. Bring up to a hard simmer again and drop biscuit mix onto filling.
  • Place in oven and bake for around 40 minutes, or until filling is bubbly and crust has puffed up and is golden brown.
  • Remove from heat and let stand for about 10 minutes before serving.

Add beans and remaining 1/2 teaspoon salt, and scrape up any brown bits on the bottom of the pan. Reduce heat to medium-low and simmer until slightly thickened, 3 to 5 minutes. If the mixture seems very dry, add a few tablespoons water. It should be juicy-looking but not wet. Remove from heat and stir in cilantro. Taste and add more salt, if needed.
  • Divide biscuit dough into 6 equal balls. Use your palm to flatten each ball into a 3/4-inch-thick disk. Arrange on top of turkey chili. Brush biscuits lightly with milk, and sprinkle grated Parmesan on top. Transfer skillet to oven and cook until biscuits are golden at the edges, 25 to 30 minutes. Let cool for 10 minutes before serving. Serve with sour cream and pickled jalapeños, if you like, and more scallions.
