3/4 cup warm water (110 degrees F)
1 3/4 cups flour
1 tablespoon dry milk
1 teaspoon salt
1 1/2 tablespoons butter
1/4 cup rye flour
2 tablespoons brown sugar
1 egg
2 tablespoons instant mocha-flavored coffee powder
1/8 cup pecans, chopped
1/8 cup almonds, chopped
2 teaspoons active dry yeast

Steps:

  • Place ingredients in bread machine pan in the order suggested by the manufacturer.
  • Select white bread setting.
  • Push Start.
  • Or to Bake Bread in Your Oven; select dough or manual cycle on your bread machine.
  • Once the cycle is complete, shape dough and place in a greased loaf pan.
  • Allow to rise in a warm spot until the dough has doubled in size.
  • Bake in a preheated 350 degrees F oven for 35 to 45 minutes.
  • Makes 1 - 1 pound loaf.

2 teaspoons instant coffee granules
2 tablespoons strong brewed coffee
2 tablespoons milk
¼ cup butter, softened
¼ cup cocoa powder
2 ½ cups confectioners' sugar
6 ounces white chocolate
½ cup butter
½ cup white sugar
1 teaspoon vanilla extract
1 egg
2 cups graham cracker crumbs
½ cup finely chopped walnuts
¾ cup flaked coconut

Steps:

  • To make Pastry: Combine 1/2 cup butter, white sugar, vanilla and the egg in a double boiler over low heat. Stir until thick. Add the graham cracker crumbs, coconut and nuts and mix well. Pour into baking pan and let cool.
  • To prepare Filling: In medium-sized bowl, dissolve the instant coffee in the hot coffee. Mix in powdered sugar, cocoa, 1/4 cup of butter and milk. Spread filling over pastry and chill for 15 minutes.
  • To prepare Topping: Melt white chocolate in double boiler over low heat. Spread over filling and cut into squares. Store in refrigerator.

This delicious smoothie comes from Ellie Krieger's "So Easy" Cookbook. I make it for my teen daughter to take with her on her way to school. I really have to whir the blender to get the frozen bananas incorporated, so next time I plan to cut my bananas into smaller chunks before I freeze them. I also halved the recipe and still came out with two decent sized smoothies. I think a full recipe would make three large smoothies.

1 tablespoon sugar
2 teaspoons instant espresso powder
2 teaspoons unsweetened cocoa powder
1/4 cup boiling water
2 cups nonfat milk
2 ripe bananas, peeled, cut into chunks and frozen
1 cup ice

Steps:

  • In a small bowl, stir together the sugar, espresso powder and cocoa. Add boiling water and stir until dissolved. Combine the coffee mixture in the blender with the bananas, milk and ice and blend on high until smooth.
  • Can be partially combined in blender and refrigerated overnight. In the morning, just add ice and bananas and blend.

Number Of Ingredients 6

3 ounces expresso coffee beans, finely ground
4 ounces sugar
1 tablespoon cocoa, eg dutch process
1 teaspoon vanilla essence
1 egg white
2 1/2 cups boiling water

Steps:

  • Place the ground espresso in the paper filter of a drip coffee maker.
  • Pour the boiling water over the top and let drip.
  • Mix the hot coffee with the sugar and cocoa, stirring until the sugar has dissolved.
  • Allow to cool completely.
  • Pour the coffee mixture into an ice cream freezer and process until partially frozen.
  • Stir in the vanilla.
  • Beat the egg white until it forms stiff but not dry peaks.
  • Fold it into the coffee mixture and return to the ice cream freezer.
  • Process until it is slightly firm again.
  • Freeze in a freezer for 1 hour before serving.
