Steps:
- Shell and devein shrimp.
- Rinse and pat dry with a paper towel.
- Combine marinade ingredients in a ziplock bag.
- Add shrimp.
- Mix well.
- Let stand 30 minutes.
- Pat dry with a paper towel.
- Heat oil in a wok 30 seconds over high heat.
- Stir-fry garlic until golden, 30 seconds.
- Add shrimp.
- Stir-fry about 30 seconds until shrimp are pink.
- Remove from wok with a slotted spoon, draining well over wok.
- Add salt and snow peas to oil in wok.
- Stir-fry until sauce thickens slightly.
- Add cooked shrimp.
- Stir-fry to coat shrimp with sauce.
- Serve hot.
SHRIMP WITH SNOW PEAS
A delicate Chinese dish that's available at many Chinese restaurants; unfortunately, if I get take out and bring it home, the snow peas continue to cook in the heat, and lose their crunch by the time I eat it. This sauce is a bit darker in color, but the taste is the same. Make sure you have everything measured, cut, and ready to go before starting - this is one of those Chinese dishes that must be cooked fast and served immediately.

- Combine the water and cornstarch.
- Heat the oil and fry the onions and ginger for 1 minute.
- Add shrimp and cook for another minute.
- Add snow peas and cook for 30 seconds.
- Push the shrimp and snow peas to the side of the wok and add the cornstarch mixture, soy sauce, and salt and cook until thickened.
- Blend the sauce with the shrimp, onion and snow peas and serve over steamed rice immediately.

- Combine the shrimp and the marinade ingredients in a medium-size bowl. Mix well with your hands and set aside while you prepare the rest of the ingredients.
- Combine the sauce ingredients in a small bowl. Stir to mix well.
- In a large carbon steel skillet (or non-stick pan) heat 1 tablespoon of oil over medium-high heat until hot. Add the shrimp and spread it into a single layer. Cook undisturbed until the bottom is cooked, 1 minute or so. Flip to cook the other side. Stir a few times until the shrimp are not translucent any more and are fully curled. Transfer them to a large plate.
- Add the remaining 1/2 tablespoon of oil and the ginger. Stir a few times to release the fragrance.
- Spread out the snow peas in the pan into a single layer with minimal overlapping. Let cook for 30 seconds without touching, until the bottom browns slightly. Flip to cook the other side for 30 seconds or so, until the snow peas begin to soften.
- Add the cooked shrimp back into the skillet. Stir the sauce again to dissolve the cornstarch completely and pour it into the pan. Add the frozen peas (if using). Stir and cook until the sauce is fully thickened. Transfer everything to a serving plate.
- Serve hot over rice.

- Cover snow peas with boiling water and let stand for 1 minute.
- Drain well and plunge into ice water.
- Drain again.
- Remove stem and strings from peapods, carefully open with a toothpick.

- Chill and serve.

I tried this unusual recipe years ago and just unearthed it again. Shrimp, tart apples and snow peas are combined with a sweetish and creamy mustard sauce; serve over rice or pasta. It's just a little bit odd, but it's a nice combination of flavors.

Steps:
- Blanch snow peas in boiling water for about 3 minutes, then plunge into ice water to stop the cooking process; set aside.
- In a large skillet, melt 2 tablespoons of the butter and saute apple slices over medium heat about 5 minutes.
- Sprinkle slices with the sugar and raise the heat, stirring slices constantly until they are lightly caramelized; reserve slices.
- In the same skillet, melt the remaining 3 tablespoons butter and lightly cook the minced onion, covered, about 25 minutes or until soft and lightly colored; raise heat and add shrimp, cooking about 3 minutes or until firm and pink.
- Remove shrimp from skillet and reserve.
- Pour the wine into the skillet and reduce it by 2/3 over high heat.
- Reduce heat and whisk in the mustard.
- Pour in the cream and simmer uncovered for 15 minutes or until sauce is reduced slightly.
- Drain snow peas thoroughly and pat dry; add them to the mustard-cream sauce along with the apples and shrimp; simmer together for 1 minute and serve over rice or pasta.

- Peel and devein shrimp. Combine the sherry and soy sauce in a medium bowl and add shrimp. Marinate in the refrigerator for 30 minutes.
- Meanwhile, heat a wok or large skillet over high heat and add the oil. Add ginger and stir-fry for 1 minute. Add the shrimp (reserving the marinade) and cook until light pink, 2 to 3 minutes.

- Combine egg white, 1 tablespoon cornstarch and wine in medium bowl. Add shrimp and stir to coat. Let stand 30 minutes. Combine catsup, soy sauce and sugar in small bowl. Set aside.
