Yield Makes 4 side-dish servings

Number Of Ingredients 8

1/4 teaspoon red-curry paste or 1 1/4 teaspoons Thai Kitchen roasted red-chile paste
3 tablespoons water
1 tablespoon vegetable oil
1/2 cup thinly sliced shallots (about 2 medium)
1 lb sugar snap peas, trimmed
1 teaspoon salt
2 teaspoons fresh lime juice
1/2 cup loosely packed thinly sliced fresh mint

Steps:

  • Stir together chile paste and 2 tablespoons water in a small cup.
  • Heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then sauté shallots, stirring, until edges are starting to brown, about 2 minutes. Add snap peas and salt and stir-fry 2 minutes. Add chile paste mixture and stir-fry until snap peas are just tender and beginning to brown in spots, about 3 minutes.
  • Stir in remaining tablespoon water, scraping up any brown bits from bottom of skillet.
  • Transfer snap peas to a bowl and stir in lime juice and mint. Serve immediately.

  • Add sugar snap peas, green onions and water. Cook, shaking skillet occasionally for 3 to 5 minutes, until peas are bright green and tender-crisp and water evaporated.
  • Add mint or serve without. Add salt and pepper if necessary. Serve at once.

I found this recipe on the Safeway website. It was listed as an appetizer recipe, but I think it could easily be served as a side dish, too.

1 lb sugar snap pea, trimmed
3 tablespoons garlic-flavored olive oil
1/4 cup soy sauce, low sodium
1/4 teaspoon sesame oil
2 drops chili oil
1/4 teaspoon packed brown sugar
2 tablespoons toasted sesame seeds

Steps:

  • Preheat oven broiler, and move rack to top position.
  • Place the snap peas in a baking dish, and drizzle olive oil and toss to coat. Spread the snap peas in a single layer.
  • Broil the snap peas about 5 minutes.
  • Meanwhile, mix together the soy sauce, sesame oil, chili oil, brown sugar, and sesame seeds in a large bowl. When snap peas are removed from the oven, toss them immediately with the sauce.

1 shallot , chopped
1 garlic clove , grated
1 red chilli , sliced
400g frozen peas , defrosted
small handful mint , leaves roughly chopped
3 pork scratchings , crushed, to serve (optional, don't use if you want this to be veggie or gluten-free)

Steps:

  • Heat the butter in a small frying pan, once bubbling, add the shallot and fry for 1 min. Add the garlic and chilli and cook for 1 min more, then tip in the peas and reheat. Take off the heat and stir in the mint, season and serve. Sprinkle over the pork scratchings, if using - they add a nice crunchy texture.

Steps:

  • In a 12-inch nonstick skillet, bring 1/4 cup water and butter to a boil over high. Add snap peas; cover, and cook until bright green, about 2 minutes.
  • Remove lid; reduce heat to medium. Continue cooking, tossing occasionally, until peas are crisp-tender and water has evaporated, 2 to 4 minutes. Remove from heat.
  • Toss with mint leaves; season with coarse salt and ground pepper.

1 pound sugar snaps or snow peas
Salt and freshly ground pepper to taste
4 plum tomatoes, about 3/4 pound, cored
2 tablespoons butter
1 tablespoon shredded fresh mint
2 teaspoons lemon juice

Steps:

  • Pluck off and discard the end of each pea pod.
  • Bring enough water to boil to cover the peas. Add salt to taste.
  • Add the peas. When the water returns to a boil, simmer the peas for about 3 to 4 minutes. Do not overcook. Drain.
  • Meanwhile, drop the tomatoes into boiling water and boil them for 10 seconds. Drain, let cool. Remove the skins and cut the tomatoes into 1/4-inch cubes.
  • Heat the butter in a saucepan; add the tomatoes; cook and stir for one minute. Add the peas, mint, and salt and pepper to taste. Stir to blend. Cook for one minute. Add the lemon juice and serve.
