BACON AND MUSHROOM SMOTHERED PORK CHOPS
One-Pan Smothered Pork Chops with creamy mushroom, bacon and fresh thyme sauce. Use boneless pork loin chops. Everything is cooked in one large skillet. Easy recipe. Minimal cleanup. Low carb, high fat, KETO friendly, gluten free recipe.

- Chop bacon into smaller bites. In a large skillet, cook on medium heat until the bacon is cooked. Remove bacon from the pan to a plate, leaving the fat in.
- Season pork chops with salt and pepper. In the same pan, on high-medium heat, cook pork chops 4 minutes on each side in bacon fat, until nicely seared. Reduce heat to medium midway through cooking. Remove the pork chops to a plate from the pan.
- Add sliced mushrooms and minced garlic to the same pan. If needed, add 1 tablespoon olive oil. Season with salt. Sprinkle with fresh thyme leaves. Cook on medium heat for about 5 minutes, stirring, until mushrooms soften and release juices. Sprinkle 2 tablespoons of flour all over the mushrooms, and stir the flour in on medium heat.
- Add chicken broth and raise the heat to bring to boil, constantly stirring. You should have a smooth slurry from the flour and the chicken broth. Add heavy cream and stir it in while boiling until everything is smooth. Then reduce heat to low.
- Add back the pork chops and the bacon. Cook on low heat, covered, until the pork chops are cooked through.
- To serve, top pork chops with mushroom and bacon mixture and with more fresh thyme leaves.

- Season pork chops with salt, pepper, and garlic salt to taste.
- In a large skillet, brown the chops over medium-high heat. Add the onion and mushrooms, and saute for one minute. Pour cream of mushroom soup over chops. Cover skillet, and reduce temperature to medium-low. Simmer 20 to 30 minutes, or until chops are cooked through.

PORK CHOPS IN GARLIC MUSHROOM SAUCE
This recipe is my twist on a fancy restaurant meal we got on Valentine's Day. The recipe has half the amount of garlic than was originally used. Hope everyone else enjoys it just as much as we do. Garnish with fresh parsley, chives, or thyme leaves.

- Season both sides of pork chops with paprika, salt, and pepper.
- Heat a large skillet over medium-high heat; add 2 tablespoons butter. Sear pork chops until golden brown and no longer pink in the center, 2 to 4 minutes per side. Remove pork chops from the skillet and set aside.
- Melt remaining butter in the same skillet over medium-high heat. Add mushrooms and cook until golden and excess moisture evaporates, about 5 minutes. Add garlic and mustard; cook until garlic is fragrant, about 1 minute.
- Add flour to the skillet, stirring to remove any lumps. Slowly add beef broth, whisking until incorporated. Season with salt and pepper. Reduce heat to medium and simmer, stirring often, until sauce thickens, about 5 minutes. Check for seasoning again.

SMOTHERED PORK CHOPS WITH BOURBON AND MUSHROOMS
This is a updated version of my mom's pork chops with cream of mushroom soup. I don't care for the canned soup due to the high sodium. I use cream, mushrooms, onions and bourbon along with beef stock to make a sauce that is out of this world. I like to serve this with mashed potatoes and grilled asparagus.

- Preheat the oven to 375 degrees F (190 degrees C).
- Season pork chops with salt and pepper. Heat oil in a frying pan over medium-high heat. Add pork chops; cook until browned, 3 to 4 minutes per side. Place browned chops in a 9x13-inch baking dish. Wipe out any residual oil from the pan.
- Melt butter in the same pan over medium heat. Add onion, mushrooms, and sugar. Cook and stir for 1 minute. Cover pan and reduce heat to medium-low. - Trim fat off pork chops and season generously with seasoning salt.
- Heat oil in a large skillet over medium heat. Add pork chops and cook until browned, 3 to 4 minutes per side. Transfer pork chops to a plate.
- Pour chicken broth into the skillet and bring to a boil while scraping the browned bits of food off the bottom of the pan with a wooden spoon. Add mushrooms, onion, and butter; simmer for 5 minutes. Transfer 2 tablespoons of sauce to a small bowl.

- 1. Cook bacon in lg skillet, over med-high heat. Drain on paper towels, let cool, crumble, set aside. In small bowl, whisk together 1/2 cup flour , 1 tsp garlic and herb seasoning, salt and pepper.
- 2. Season the chops w/ flour mix. In lg skillet, add a little oil and brown chops 2 mins, each side. Remove chops from pan. Add onion, mushrooms, worcestershire sauce and 1/2 the thyme to skillet. Scrape the bits up from skillet. Add remaining garlic and herbs and 1/2 tsp salt.
- 3. Cook, stirring 10 mins.Add garlic, cook 1 min. Sprinkle onion and mushrooms w/ 1/4 cup flour. Cook over med-low until flour is dissolved. Add milk, slowly while stirring over med-high heat until it starts to thicken. Mix in remaining thyme, add chops to pan, simmer 10 mins. Sprinkle w/ bacon.

- Preheat oven to 375°F and Grease a 9" X 16" dish.
- Melt 2 tablespoons butter in large skillet over high heat.
- Season chops with salt and pepper. Sear chops 2 minutes on each side.

I was trying to figure out what way I could fix the pork chops and then I thought about using the mushroom soup and adding onions and mushroom pieces into the dish and then I just put them into the oven and let them bake a little bit and then I served them with mashed potatoes and whatever else I was wanting to add to the side dishes. This is a really easy recipe to follow and use.

- Peel and slice the onion thinly.
- Preheat oven to 350°F.

- Fry bacon in a large fry pan on medium heat.
- When done, remove and drain on paper towels.
- Saute onion in the same skillet with the bacon fat.
- Remove to paper towels to drain.
- Season pork chops with salt and pepper and dredge in flour.
- Fry on medium heat in the same skillet with bacon fat until light brown; remove to warm plate.
- Put remaining flour into skillet (add oil if necessary).
- Brown flour lightly.
