2 tablespoons extra-virgin olive oil
½ head green cabbage, cut into 4 wedges
1 pinch garlic powder, or to taste
1 pinch red pepper flakes, or to taste
salt and ground black pepper to taste
2 lemons, halved

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Brush both sides of each cabbage wedge with olive oil. Sprinkle garlic powder, red pepper flakes, salt, and pepper over each wedge. Arrange wedges on a baking sheet.
  • Roast in the preheated oven for 15 minutes; flip cabbage and continue roasting until browned and charred in some areas, about 15 minutes more. Squeeze lemon over each wedge.

A nice roasted cabbage that becomes a warm salad when using the balsamic vinegar option. **Two cutting options provided both tend to want to separate just because it is cabbage.

1 head green cabbage
3 tablespoons olive oil
1 teaspoon salt
1 teaspoon sugar
1/4 teaspoon pepper
2 teaspoons balsamic vinegar (optional)

Steps:

  • Pre-heat oven to 425°F.
  • Combine salt, pepper, and sugar in small bowl. Set aside.
  • **Cutting option 1- Quarter cabbage through core and cut each quarter in to 1-inch wedges, leaving core intact. You'll have about 16 wedges.
  • **Cutting option 2- Slice into 1-inch-thick rounds, leaving core in to help hold it together.
  • Brush a rimmed baking sheet with 1 tablespoon olive oil.
  • Arrange cabbage in single layer on baking sheet and brush with remaining 2 tablespoons olive oil. Sprinkle with salt mixture.
  • Roast until cabbage is tender and edges are golden, 25 to 35 minutes.
  • Sprinkle hot cabbage with balsamic vinegar if using.

If you're tired of the old boiled cabbage and like roasted veggies this will bring you back to one of our favorites. This is particularly good with ribs. Use crushed garlic to taste. I also like it a little burnt. Also watch out with those vegans because if you like leftovers you might have to make two pans at a time!

1 head cabbage, or more to taste, quartered and cored
salt and ground black pepper to taste
8 cloves garlic, crushed, or to taste
¼ cup olive oil, or to taste
¼ cup water

Steps:

  • Center a rack in the middle of the oven and preheat oven to 400 degrees F (200 degrees C).
  • Slice each cabbage quarter into 1/2-inch or 1/4-inch wedges. Spread half of the cabbage in a large roasting pan. Season lightly with salt and black pepper; scatter 4 garlic cloves on top. Drizzle 2 tablespoons olive oil over cabbage; do not mix. Layer remaining cabbage on top. Season with salt and black pepper; scatter remaining garlic cloves on top. Drizzle remaining 2 tablespoons olive oil on top.
  • Roast cabbage in the preheated oven until slightly softened, about 20 minutes. Add water if cabbage looks dry. Continue roasting until wilted, about 20 minutes more.

I made this one night to go along side a casserole. I was short options for a vegetable dish, and this is what I came up with. It turned out wonderful. This is for 2 servings. I like to use the leftover cabbage for coleslaw or chopped cabbaged gives a lovely texture to lettuce salads.

1 green cabbage (medium-sized and firmly-packed leaves)
3 tablespoons olive oil
2 tablespoons apple cider vinegar
1 tablespoon caraway seed (that is approximate, I really didn't measure. The small container allowed me to sprinkle the seeds o)
2 teaspoons garlic powder
salt and pepper

Steps:

  • Preheat oven to 375°F.
  • Line a sheet pan with foil. (I used an 8x2").
  • Treat the pan with 1 Tbsp of olive oil and spread to coat evenly.
  • Slice cabbage with core-side down. You should end up with 6-8 slices. Don't slice into core. Just use sides of the cabbage.
  • Place sliced cabbage in two rows, each slice slightly overlapping.
  • Drizzle 2 Tbsp of olive oil and apple cider vinegar over each row. (If your cabbage is rather large, increase it to 3 tablespoons Again, use your own judgement).
  • Next, sprinkle on Caraway seeds, garlic powder and salt-n-pepper.
  • Cover with another sheet of foil.
  • Bake for 45 min - 1 hour -- ovens vary.
  • To serve, arrange slices along side your favorite meat dishes or casseroles.
  • Variation: You can also add sliced bell pepper and sweet onion to this, by putting the vegies in between the sliced cabbage.

One of my favorite side dishes, as it's very easy to make! I personally love garlic so I go crazy with it, but put as much as is good for you. This is a very simple recipe and you can put as much or as little of the seasonings you want.

2 tablespoons light olive oil
2 tablespoons minced garlic
½ teaspoon salt, or to taste

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cut the bottom off of the cabbage and set it so that the flat end is on the cutting board; cut into 1-inch thick slices. Arrange slices in a single layer in a large casserole dish.

2 -3 large garlic cloves, smashed
1 teaspoon kosher salt

Steps:

  • 1. Preheat oven to 400F and spray a baking sheet with non-stick cooking spray. Pull outer leaf off cabbage (it's usually dirty and nasty looking), cut cabbage from top to bottom (bottom being root) into 1″ thick slices.
  • 2. Rub both sides of cabbage with smashed garlic.
  • 3. Use a pastry brush to evenly spread the olive oil over both sides of the cabbage slices.
