GENTLEMAN'S WHISKEY BACON JAM

- In a large skillet, cook bacon over medium heat until crisp. Drain on paper towels. Discard all but 2 tablespoons drippings. Add shallots and onion to the drippings; cook over medium heat until caramelized, stirring occasionally., Stir in garlic; cook 30 seconds. Add seasonings. Remove from heat; stir in whiskey and maple syrup. Increase heat to high; bring to a boil and cook 3 minutes, stirring constantly. Add vinegar and brown sugar; cook another 3 minutes, continuing to stir constantly., Add crumbled bacon; reduce heat to low and cook 12 minutes, stirring every few minutes. Allow jam to cool slightly. Pulse half the jam in a food processor until smooth; stir puree into remaining jam. Serve with assorted crackers.

SMOKY-SWEET BACON CHEESE SPREAD
Who doesn't like smoky sweet salty flavors? This may be a mix of Mediterranean and Southwestern flavors but they really work well together. Give this as a gift in a basket along with things to serve it with and perhaps a bottle of ground chipotle chile powder. You could include a pretty serving platter and spreading knife as well. You can make tortilla wheels or stuffed mushrooms with this too!

- In a small bowl, cream together neufchatel and feta, scraping the bowl until well combined.
- Beat in chili powder and ground chipotle powder and adjust to taste.
- Scrape bowl and beat in bacon, olives, cranberries, and dates until well combined.
- Stir in last 1/4 cup of crumbled feta cheese.
- Put in a covered container and chill for at least 2 hours. The flavors will develop more the longer it sits. You can mold it by pressing plastic wrap into a bowl and pressing the spread into it, cover and chill, then turn out onto serving platter.
- To serve, spread into a pretty bowl on a platter or mound on a platter. Sprinkle with feta, chili powder and fresh chopped parsley. Surround with desired foods.
- For Tortilla Wheels, Spread this on flour tortillas, roll them up and tightly wrap in plastic wrap. Chill for a few hours until firm. Unwrap them, trim away ends and cut each roll into 8 slices crosswise to make wheels. You could try baking them too! I would try 400°F Place wheels on baking sheets and bake 15-20 minutes until browned.
- For stuffed mushrooms, hollow out mushrooms, you can add some chopped stems to the spread. Fill mushrooms with spread and bake at 350F for 20-25 minutes.

LINDY'S BACON AND ONION CHEESE SPREAD
This is a wonderful bacon and onion cheese spread (not dip) that is great for parties and year-round use. For Christmas, I shape this into a tree shape, on a flat tray. I sprinkle the trunk of the tree with crisp bacon and the tree itself with finely chopped green onion tops or chives. I have also shaped it into a cross for my children's confirmation parties, a Christmas stocking, and even a heart for a special Valentine's Day party. If you substitute creamy salad dressing for the mayonnaise it will not be the same. My mom tried that and it didn't turn out well. This is best made the day before and chilled. My family and friends all love this; it's one of those dishes that I have to make for every holiday and get-together.

- Cook the bacon in a large, deep skillet over medium-high heat, until evenly browned and crispy, about 10 minutes; drain on a paper towel-lined plate. Crumble once cool to the touch.
- Beat the cream cheese and mayonnaise together in a bowl until light and fluffy. Add the Parmesan cheese, most of the crumbled bacon, and most of the green onion into the cream cheese mixture, reserving just enough bacon and green onion for garnish; stir until all ingredients are evenly incorporated. Chill in refrigerator until slightly firm, 1 to 2 hours; shape the mixture into a ball and roll in the reserved bacon and green onions. Return to refrigerator until set, 8 hours or overnight.

- Cook bacon in a large, heavy-bottomed skillet over medium heat until the bacon is crispy and the rendered fat begins to foam, about 10 minutes. Transfer the bacon to a paper towel lined baking sheet and discard of all but about 1 tablespoon of the bacon fat.
- Return the skillet to medium heat and pour over the onions. Cook until soft and beginning to brown, about 10 minutes.
- Add in the brown sugar, apple cider vinegar, coffee, garlic, thyme, smoked paprika, black pepper, and cayenne pepper– if using. Stir and cook until the mixture is a warm brown and somewhat thickened, about 5 minutes.
- Finely chop the bacon. Then add the bacon back to the onion mixture and continue to cook until the mixture is dark reddish-brown and is jam-like in consistency, about 10 more minutes. If the mixture dries out as it cooks, add a couple of tablespoons of water at a time, as needed. Taste and season with kosher salt and adjust seasonings, as desired.
