8 ounces uncooked fettuccine
1-1/2 cups sliced fresh mushrooms
1 small zucchini, sliced
2 tablespoons chopped onion
2 tablespoons butter
1 tablespoon all-purpose flour
3/4 cup milk
3/4 cup canned or fully cooked salmon chunks
1/2 cup frozen peas, thawed
1/2 cup diced fresh tomato
1 tablespoon minced parsley
1/4 teaspoon salt
1/8 to 1/4 teaspoon pepper
1/8 teaspoon dried basil
1/8 teaspoon dried oregano

Steps:

  • Cook fettuccine according to package directions. Meanwhile in a large skillet, saute the mushrooms, zucchini and onion in butter until crisp-tender. , Stir in flour until blended. Gradually add milk. Bring to a boil; cook and stir for 1 minute or until thickened. Add the salmon, peas, tomato, parsley and seasonings; heat through. Drain fettuccine; serve with salmon mixture.

1 tbsp olive oil
1 red chilli, deseeded and finely chopped
120g pack smoked salmon trimmings
zest 1 lemon and juice to taste
good handful snipped chives or finely chopped spring onions

Steps:

  • Cook the spaghetti for 10 mins or following pack instructions until al dente.
  • Meanwhile, heat the oil in a wok or large frying pan and briefly fry the chilli to soften it.
  • Drain the spaghetti, reserving a little of the water, then tip into the wok and, using 2 wooden spoons, toss in the chilli oil until well mixed. Add the salmon, lemon zest and chives or onions, then toss again. Season and add lemon juice to taste.

1 tablespoon butter
1 tablespoon extra-virgin olive oil
1 shallot, minced
1 ounce smoked salmon, cut into small pieces
1 tablespoon reduced-fat cream cheese

Steps:

  • Fill a large pot with lightly-salted water and bring to a rolling boil. Stir the linguine into the water and return to a boil. Cook uncovered until the pasta has cooked through but is still firm to the bite, about 11 minutes; drain, reserving 2 tablespoons of the water.
  • Melt the butter with the olive oil in a saucepan over medium-low heat; when the mixture begins to bubble, add the shallots and cook until softened. 1 (8 ounce) package cream cheese
3/4 cup grated parmesan cheese
1/2 cup margarine
1/2 cup milk
1 teaspoon garlic powder
1/4 teaspoon dried basil
1 pinch ground nutmeg

1 tomatoes, seeded and cut

Steps:

  • Bring a large pot of lightly salted water to a boil.
  • Add pasta and cook for 8 to 10 mis or until al dente; drain.

This is an awesome pasta that is quick to make and very satisfying. I first copied a recipe from Bon Appetit and then combined it with several recipes from my cookbooks. Over the years I have tweeked it to the recipe it is today. I have used fresh salmon in place of smoked salmon when I have not been able to get smoked salmon, and it was very good as well. Served with a salad it makes a very lovely meal.

1/4 cup olive oil
1 cup mushroom, sliced
2 shallots, sliced thinly
1 garlic clove, minced
1 pinch cayenne
1/3 lb smoked salmon, cut into 2-inch pieces
1/4 cup white wine
1 cup heavy cream
2 tablespoons lemon juice
1 tablespoon lemon zest, grated
3 tablespoons capers, drained
1 teaspoon parsley
1 lb linguine or 1 lb spaghetti
1/2 cup parmesan cheese, freshly grated
salt and pepper

Steps:

  • Cook Pasta as directed. Drain.
  • Meanwhile, in a large skillet, heat oil. Add mushrooms, shallots, garlic and cayenne. Saute until veggies are tender.
  • Add white wine and bring to boil. Add cream and bring to boil. Let simmer for 3minutes.
  • Add lemon juice, lemon zest and salmon. Bring to boil and let simmer 1 to 2 minutes.
  • Add capers, parsley, salt and pepper. Mix well.
  • Pour salmon mixture onto hot drained pasta. Toss to mix. Add Parmsean and toss well. Let set for 2 minutes as pasta will absorb any extra liquid.
  • Serve.

1 pound long, flat pasta, such linguine, fettuccini, or tagliatelle
6 ounces smoked salmon, cut into pieces
6 tablespoons (3 ounces) butter
2 lemons, zested and juiced
2/3 cup heavy cream
3 tablespoons minced chives (can substitute 2 tablespoons thinly-sliced scallions)
kosher salt

Steps:

  • Bring a pot of salted water to a boil and cook pasta until just shy of al dente. Drain, reserving some pasta water.
  • While the water is boiling, melt the butter in a large skillet over medium heat. Add the salmon, lemon juice, half of the lemon zest, and half of the chives. Cook for a few minutes, stirring occasionally. Stir in the cream and cook over low heat (the cream should be at a simmer) for about 5 minutes.
  • Add the drained pasta to the cream mixture. Cook for a few minutes, tossing to coat. Taste for seasoning. If the pasta looks a little dry, add pasta water a tablespoon or two at a time until it is creamy enough.
  • Serve immediately, topped with the remaining chives and lemon zest.

8 oz fettuccine pasta
2 cups heavy cream
1/2 cup butter ((1 stick of butter, or 8 tablespoons))
1/2 tsp garlic powder ((or 1 teaspoon minced garlic))
1 cup Parmesan cheese ((grated))
1/4 cup Romano cheese ((grated))
4-6 oz smoked salmon ((4 ounces if mixed in, 6 ounces if you'd like to garnish with more when serving))
dill weed ((optional))

Steps:

  • Boil the pasta in a large saucepan or pot of salted water according to the package instructions. For perfectly al dente pasta, check the pasta texture 1-2 minutes before the full cooking time (per boxed instructions). Remove from heat when done, drain pasta, and set aside.
  • In a large frying pan or non-stick skillet, warm the heavy cream over medium heat. Once the cream is warmed (and has formed a skin over the top) add the butter and melt into the cream.
  • Add the grated Parmesan and Romano cheeses (you can also use Parmesan cheese, or a Parmesan and Romano blend) stirring until the cheese is fully melted. Add the garlic powder, taste, and add salt and pepper if desired.
  • Add the smoked salmon (flaked or cut into small pieces) into the sauce once the cheese is melted and simmer for 2 minutes, or until the alfredo sauce thickens slightly.
  • Toss the pasta in the alfredo sauce, either in the skillet with the sauce, or add the sauce to the saucepan of pasta. Coat thoroughly and serve immediately.
  • Portion out the smoked salmon fettuccine alfredo and garnish with more smoked salmon, fresh dill weed, and freshly grated Parmesan cheese.

4 -5 spring onions (shallots)
2 stalks celery
2 tablespoons oil
1/2 cup chopped parsley
1/2 cup capers (optional)

Steps:

  • Cook the fettucine in the usual way, and drain.

This was first made for me by a friend, and I've tweaked it over the years to make it my own. Although it is by no means a healthy recipe to have in your everyday rotation, it makes a very easy and impressive dish to serve for company. The original recipe did not call for mushrooms, so feel free to subsitute another vegetable or leave them out completely. If you like a spicier dish, add chili flakes to taste with the onions, or a bit of hot sauce after the alfredo is added. If you don't want to use liquid smoke, you can replace the fresh salmon fillet with prepared smoked salmon- just begin the recipe with step seven. Serve with garlic bread and a green salad for a complete meal.

16 ounces salmon fillets
salt

1/4 teaspoon liquid smoke
1 lb fettuccine, uncooked
1 tablespoon cooking oil
1 large onion, roughly chopped
1/2 teaspoon kosher salt
1/4 teaspoon fresh ground pepper
8 ounces mushrooms, quartered
16 ounces alfredo sauce, jarred (I use Classico garlic alfredo)

Steps:

  • Prepare your grill, or preheat your broiler for high heat.
  • Season the salmon with salt and pepper to taste.
  • Drizzle the liquid smoke over the salmon.
  • Grill or broil the salmon until it is just barely done. (Note- when I use the grill for this, I place the salmon skin side down on a piece of foil so that it doesn't stick to the grill.).
  • Remove the salmon for the heat, and set aside to cool slightly.
  • When it is cool enough to handle, remove the skin (if needed) and break the fish into bite sized pieces.
  • Cook the pasta as directed on the package.
  • Heat the oil in a large skillet over medium heat.
  • Add the onions, and season with kosher salt and fresh ground pepper. If you would like to add some heat, add a pinch of chili flakes at this time.
  • Cook the onions, stirring frequently, for one minute.
  • Add the mushrooms, and continue to cook, until the onions are soft and golden.
  • Add the alfredo sauce, and bring to a simmer, stirring occasionally.
  • Add the reserved salmon, and gently fold into the sauce.
  • If the sauce is too thick, add a little of the pasta cooking water to thin it to your liking.
  • Taste the sauce, and add salt, pepper, or liquid smoke if necessary.
  • When the pasta is al dente, drain and add to the sauce, tossing gently, so the salmon doesn't break up further.
  • Serve immediately.

  • Bring a large pot of water to a boil. Add enough salt to make the water taste quite salty, like seawater. Add the pasta.
  • In a large saute or frying pan, heat the butter over medium heat and add the shallot. Saute the shallot, stirring often. You want it soft but not browned. Add the flaked salmon and spread it in one layer in the pan. Let this cook to sear a bit. Don't move the fish for at least a minute, maybe two.
