2 pounds pork tenderloins
1/4 cup plus 2 tablespoons balsamic vinegar
2 tablespoons honey
1 whole head garlic, minced
1 onion, minced
1/4 cup fresh rosemary leaves, minced
2 teaspoons kosher salt
1/4 teaspoon freshly ground black pepper
2 pounds baby potatoes, halved or quartered
1 pound carrots, cut into 1/2-inch-thick sticks

Steps:

  • Preheat the oven to 350 degrees F. Line a large baking pan with aluminum foil. Grease the foil with oil or cooking spray.
  • Place the tenderloins in the center of the prepared pan and set aside.
  • Combine the 1/2 cup oil with the vinegar, honey, garlic, onion, rosemary, salt and pepper in a large bowl. Whisk to combine. Reserve 2/3 cup of the marinade in a small saucepan. Stir the potatoes and carrots into the large bowl. Toss to combine.
  • Drizzle 1/3 cup of the reserved marinade over the pork, coating all the sides. Set the remaining 1/3 cup marinade aside to serve as a sauce. Scatter the potatoes and carrots evenly around the pork. Roast in the oven until the pork reaches an internal temperature of 145 degrees F, about 50 minutes. Let the pork rest for 5 to 10 minutes before slicing.
  • While the pork is resting, heat the remaining marinade in the small saucepan.
  • Slice the pork and drizzle with the warm marinade.

6 garlic cloves, minced

4 lbs center-cut bone-in pork loin roast (rib)
4 large russet potatoes, peeled, cut into 1 inch pieces

Steps:

  • Preheat oven 375°.
  • Whisk 1/4 cup oil, garlic, butter, sage and rosemary in a small bowl to blend.
  • Place pork in large roast pan.
  • Sprinkle with salt and pepper.
  • Rub herb mixture over pork (can be made 1 day ahead. Cover and chill).
  • Cover pork loosely with foil and roast 2 hours.
  • Divide remaining 1/4 cup oil between 2 heavy skillets.
  • Heat oil over medium-high heat.
  • Divide potatoes between skillets.
  • Sprinkle with salt and pepper.
  • Sauté until potatoes are golden brown but not tender, about 15 minutes.
  • Transfer potatoes to roasting pan with pork.
  • Toss potatoes in pan juices.
  • Continue roasting, uncovered, until pork browns, potatoes are tender, about 40 minutes.
  • Place pork in center of platter, surround with potatoes.
  • Pour pan juices into glass measuring cup.
  • Spoon off fat.

1 - 1 1/2 pound pork tenderloin
1/2 medium onion (or one small)
3 medium carrots
1 pound small potatoes
2 tablespoons olive oil
1 teaspoon kosher salt
1/2 teaspoon pepper
2-4 cloves crushed garlic (2 for most people. 4 for my wife.)

Steps:

  • Preheat oven to 400° convection or 425° conventional.
  • Trim a pork tenderloin of fat and silverskin.
  • Peel and cut 3 medium carrots into 1/2 inch medallions. Clean and cut 1 pound of red potatoes into about 1 inch pieces. Roughly chop one half of a medium onion.
  • Add all the veggies to a 1-gallon ziplock bag. Add the trimmed tenderloin to the bag. Add 1 teaspoon kosher salt, 1/2 teaspoon pepper, 2-4 cloves of crushed garlic, and 2 tablespoons olive oil. Seal bag and mix well.
  • Prep a large baking dish or smaller sheet pan with a spray of PAM. Dump the tenderloin and veggies and spread evenly.
  • Bake until tenderloin is 150°-160° per your taste and potatoes are tender. About 30-35 minutes. The last few minutes, turn on the broiler and get the color you want. Your cooking time may be a bit longer depending on tenderloin size, the veggies, and your oven.
  • Allow the tenderloin to rest for at least 5 minutes before cutting.

2 garlic cloves, minced
1-1/2 teaspoons dried rosemary, crushed
1/2 teaspoon salt

Steps:

  • In a small bowl, mix oil, garlic, rosemary, salt and pepper. Place half of the marinade in each of two resealable plastic bags. Add pork to one bag and potatoes to the other bag. Seal bags and turn to coat; refrigerate 8 hours or overnight., Preheat oven to 425°. Drain and discard marinades. Place meat and potatoes in a greased 2-qt. broiler-safe baking dish. 4 strips bacon, cut into lardons
3 tablespoons fennel seeds
2 small pork filet mignon, about 10 ounces each
Kosher salt and freshly ground pepper
1 tablespoon extra-virgin olive oil
1 shallot, minced
1/2 cup port wine
2 cups seedless red grapes
1 1/2 cups chicken stock
3 tablespoons chopped fresh chives, for garnish
4 sweet potatoes, peeled and cut into large dice
2 tablespoons heavy cream, warmed
4 tablespoons unsalted butter, cubed
Pinch of cayenne pepper
Pinch of ground cumin
1 tablespoon light-brown sugar
Kosher salt

Steps:

  • For the Pork Tenderloin with Roasted Grapes: Preheat the oven to 375 degrees F.
  • Cook the bacon lardon in a large skillet over medium heat until crisp, 5 to 6 minutes. Use a slotted spoon to remove the bacon and drain on a towel-lined plate. Reserve the bacon for the potatoes. Reserve the skillet with bacon fat to cook the pork.
  • Toast the fennel seeds in a small skillet over medium heat until fragrant, about 2 to 3 minutes. Transfer to a spice grinder and grind into a fine powder.
  • Season the pork generously with salt and pepper. Return the large skillet with bacon fat to medium-high heat. Place the pork in the pan and cook on all sides until rich golden brown, about 8 minutes. Remove the pork from the pan, dust the pork with the toasted ground fennel seeds, and place on a sheet pan fitted with a rack. Roast in the oven until the internal temperature reaches 150 degrees F, about 14 minutes. Allow to rest 10 minutes until ready to serve.
  • Drain the fat from the skillet and place over medium-low heat. Add the extra-virgin olive oil and shallots and cook until softened, about 2 minutes. Season with salt then pour in the port and scrape with a wooden spoon to release the bits from the bottom of the pan. Add the grapes and cook the grapes until they split and let out their juices, about 10 minutes.
  • Add half of the chicken stock, let it reduce slightly, then add the remaining stock and let cook until sauce is reduced by half and thickened, 8 to 10 minutes. Taste and re-season if needed.
  • For the Mashed Sweet Potatoes: Add the sweet potatoes to a large pot and cover with cool water. Bring to a boil and cook until tender, about 15 minutes. Drain and return the cooked potatoes to the pot.
  • Add the heavy cream and butter and combine with a hand mixer until smooth. Mash with a potato masher. Add the brown sugar, heavy cream and cumin and mix with a spatula to combine. Season to taste with salt. Add the cayenne, cumin, light brown sugar, reserved bacon and some salt and fold to combine.
  • Slice the pork on a bias. Serve with the sweet potatoes and top with the grapes, sauce and chives.

2-3 heaping Tablespoons pure honey
1 whole head garlic (peeled and minced)

1/4 cup fresh rosemary leaves (minced)
2 tsp kosher salt
1/2 tsp freshly ground black pepper
2 lbs baby potatoes (roughly diced (about 2/3-inch diameter))
1 lb baby carrots (cut into 1/4-inch thick pieces)

Steps:

  • Prepare: Preheat oven to 350F with rack on lower middle position. Line a large baking pan with foil and generously grease foil. Use paper towels to pat-dry all excess moisture from the pork tenderloins; place tenderloins in center of greased-foiled pan and set aside.
  • Combine: In a large bowl, combine olive oil, balsamic vinegar, honey, garlic, onion, rosemary, salt, and pepper. Use a whisk to combine well to form the marinade. 3 Tbs Irish whisky (I used Bushmill's)

Steps:

  • Mix the rub ingredients in a bowl, then spread on the pork on all sides, and rub it into the meat.
  • Let sit in the fridge for a few hours.
  • Melt the butter in a saucepan over medium heat.
  • Add the garlic and cook for a minute, then add the whisky, and the rest of the glaze ingredients
  • Bring to a boil, then reduce the heat to a fast simmer - whisking (so it doesn't burn). Reduce to a thick syrup (3-5 minutes)
  • Remove from the heat and season to taste.
  • Preheat the oven to 350.
  • Add the pork in a large roasting dish, and cook 40-45mins.
  • During the last 5 minutes, baste the pork with some of the glaze.
  • Remove to a cutting board, and rest 5 minutes.

  • Sprinkle the tenderloins with salt, pepper and cumin.

Sheet Pan Pork Tenderloin and Potatoes is a fabulous sheet pan recipe you'll want to make over and over. Coming together in just 35 short minutes, once you make this, you'll wonder why this hasn't been your go-to dinner all along.

1 ½-2 pounds pork tenderloin
⅓ cup brown sugar
2 teapsoons garlic
2 tablespoons reduced sodium soy sauce
2 tablespoon balsamic vinegar
⅛ teaspoon crushed red pepper flakes
¼ teaspoon smoked paprika (optional)
1 ½ - 2 pounds baby red and/or gold potatoes (halved)
3 tablespoons oil
salt and pepper to taste
½ teaspoon Italian blend herbs
½ teaspoon garlic powder
⅓ cup grated parmesan cheese

Steps:

  • Preheat oven to 425 degrees and grease a sheet pan. Line one half of the sheet pan with foil, folding up the sides about 2 inches from the edge to make a "tray" (to prevent pork juices from spilling out). Place tenderloin in the center of the foil tray.
  • Pat tenderloin dry with a paper towel. Whisk together brown sugar, garlic, soy sauce, balsamic vinegar, red pepper flakes, and paprika. Pour over pork tenderloin, then turn the tenderloin over a couple of times to make sure all sides are coated.
  • Arrange potatoes on the other half of the sheet pan (non-foil half). Drizzle with oil, toss to coat, then season with salt and pepper to taste, Italian herbs, garlic powder, and parmesan cheese.
  • Bake in preheated oven for 20-25 minutes, using tongs to turn the pork over in the sauces every 5-10 minutes. *I like to switch the oven to BROIL for the last 2-3 minutes to brown the pork and potatoes - but watch carefully so it doesn't burn! Allow pork to rest for 5 minutes before slicing into 1-inch sections and serving.
