½ tbsp olive oil , plus extra for drizzling
½ small onion , sliced
½ small red pepper , thinly sliced into strips
1 garlic clove , halved
227g can chopped tomatoes
½ tsp smoked paprika
2 tsp red wine vinegar
210g can butter beans or chickpeas, drained
¼ tsp sugar
1 slice seeded bread
a few parsley sprigs, finely chopped

Steps:

  • Heat the oil in a small pan, add the onion and pepper, and fry gently until soft, about 10-15 mins. Crush half the garlic and add this to the pan, along with the tomatoes, paprika, vinegar, beans, sugar and some seasoning. Bring to a simmer and cook for 10-15 mins or until slightly reduced and thickened.
  • Toast the bread, rub with the remaining garlic and drizzle with a little oil. Spoon the beans over the toast, drizzle with a little more oil and scatter over the parsley.

4 strips thick sliced bacon, cut into 1/4-inch slivers
2 medium onions, finely chopped (about 2 cups)
1/2 green bell pepper, finely chopped
2 gloves garlic, minced
2 (15-ounce) cans great northern or kidney beans, drained and rinsed in a colander
1/3 cup molasses
1/4 cup barbecue sauce
1/4 cup ketchup
3 tablespoons dark brown sugar, or to taste
1 tablespoon Worcestershire sauce
1 tablespoon prepared mustard
1 tablespoon dry mustard
1 tablespoon cider vinegar
1/4 tablespoon liquid smoke, or to taste
Salt and freshly ground black pepper

Steps:

  • In a heavy pot, cook the bacon over medium heat to render the fat, about 5 minutes. Discard all but 2 tablespoons fat.
  • Add the onion, pepper, and garlic and cook until the vegetables are soft, about 5 minutes. Stir in the beans, molasses, barbecue sauce, ketchup, sugar, Worcestershire sauce, mustards, vinegar, and liquid smoke. Simmer the beans, uncovered, until rich and thickly flavored, 10 to 15 minutes, stirring with a wooden spoon. Alternatively, place the baked beans in a deep baking dish and bake in a 350 degree oven for about 30 minutes. Add salt, pepper, or any other ingredient to taste.

Her suggestion, and my favorite accompaniment to these red beans and smoked ham, is Recipe #76899, posted separately. And bicuits, don't forget the biscuits. Cook time includes soaking the beans.

1 lb dried red kidney beans
2 medium onions, peeled and quartered
1 smoked ham hock, split or 8 ounces smoked pork butt
2 garlic cloves, peeled
3 bay leaves
1 -2 teaspoon salt, to taste
fresh ground black pepper

Steps:

  • Soak beans overnight in water to cover plus 2"; drain; place beans in a pot of cold, fresh water to cover plus 2"; add the onions and ham and bring to a boil; cover, reduce heat and simmer for 1 hour, skimming foam off occasionally.
  • Add the salt and continue simmering, uncovered, over low heat for 1 1/2-2 hours more, stirring frequently; season with pepper; cut meat off bones, chop and return to the pot.
  • The soup is actually best when refrigerated for a couple of days and then served.
  • May be served over rice as a main course.

3 pounds sliced bacon, diced
3 medium sweet onions, chopped
6 cans (28 ounces each) baked beans, undrained
6 cans (16 ounces each) kidney beans, rinsed and drained
6 cans (16 ounces each) butter beans, rinsed and drained
4 packages (12 ounces each) miniature smoked sausages, cut in thirds
3 cups packed brown sugar
1-1/2 cups ketchup
1-1/2 cups cider vinegar
1 tablespoon garlic powder
1 tablespoon ground mustard

Steps:

  • In a Dutch oven, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels; drain, reserving 3 tablespoons drippings. Saute onions in reserved drippings until tender. , In a very large bowl, combine the beans, sausages, bacon and onions. Combine the remaining ingredients; stir into bean mixture. , Pour into four greased 13-in. x 9-in. baking dishes. Bake, uncovered, at 350° for 45-55 minutes or until heated through.

8 ounces dried red beans
3 cups chicken stock
2 cups beef stock
1 onion, chopped
1 small smoked ham hock
1/2 green bell pepper, chopped
2 tablespoons minced garlic
1 tablespoon salt
1/2 teaspoon coarsely ground black pepper
1/2 teaspoon cayenne pepper
1 tablespoon grapeseed oil
1/2 pound smoked sausage, diced
Steamed white rice, for serving

Steps:

  • In a large Dutch oven over medium heat, add the beans, chicken and beef stock, onions, ham hock, green pepper, garlic, salt, black pepper and cayenne. Stir and bring the mixture to a boil. Reduce the heat and simmer for approximately 2 hours.
  • In a medium saute pan over high heat, add the grapeseed oil. When the oil is hot, add the smoked sausage and brown evenly for 2 to 3 minutes. Add the sausage to the pot with the beans. Continue simmering the beans until tender, about 20 minutes more. Transfer to a serving bowl and serve over hot rice.

Smoky Peruvian (Peruano) Beans image

Creamy Peruvian beans prepared in a smoldering chipotle sauce with vegetables

Number Of Ingredients 18

For the Beans:
​​1 ​large ​onion, chopped
3 garlic cloves, (crushed, salted and chopped)
1 tsp smoked paprika powder
1 tsp cumin powder
​10 or so baby carrots, thin sliced (or any carrots you have on hand)
​1 sweet bell pepper, diced (I used red)
4 cups cooked peruvian beans​ (from 1 rounded cup dry)
2 cups veg stock​ (or stock of choice)​
½ cup water
3 Tbsp tomato paste
2 individual chipotle chiles (the ones in adobo sauce), chopped (seeds and all!) + 3 tsp reserved adobo sauce​ (or less, see Notes)
1 Tbsp red wine vinegar
1 Tbsp honey (or sweetener of choice)
For the Tapioca (or Cornstarch) Slurry:
Dissolve 1 round Tbsp tapioca (or cornstarch) into equal parts water and whisk together to fully blend.
For Garnish:
Fresh cilantro, sliced avocado, dollop plain yogurt, lime wedges, as desired. Serve accompanied by salad of choice or, as pictured here, brown basmati.

Steps:

  • Prepare your dry Peruvian beans by soaking them overnight (simply cover in a pot with cool water) and drain/rinse in the morning. Pre-soaking can help ease digestive distress in those susceptible.
  • Transfer the drained beans to a cooking pot on stove and cover with generous amount of water - bring the beans to a boil and then reduce to a gentle simmer for the duration (you may need to add water as the beans cook). Allow beans to simmer until desired texture is achieved (I like them tender but still slightly firm) about 45 mins - 1 hour. Rinse cooked beans and set aside.
  • In a large skillet set over low-medium heat, s​auté onion/garlic for about 4 minutes in some olive oil - add carrots, bell pepper and continue to sauté for another minute or two.
  • Sprinkle mixture with paprika and cumin and mix in chopped chipotle peppers.
  • Add veg stock, water, tomato paste, reserved adobo sauce, vinegar and honey. Stir to combine. Finally, add cooked Peruvian beans stirring gently to integrate.
  • Simmer ingredients for about 10-15 mins to reduce liquid base (stirring occasionally).
  • To the remaining base (there should still be a generous amount after reduction), add the tapioca (or cornstarch) slurry and simmer for another 3 minutes just long enough to allow sauce to thicken slightly. The way I do it is to move some of the beans aside with a spoon and then add the slurry directly into the exposed liquid stirring/whisking vigorously before the final simmer. Taste and add salt as desired.

2 cups uncooked white long grain rice
1 tablespoon butter
4 strips bacon
2 15 oz cans red beans
1/4 cup water
1/2 teaspoon garlic salt
1/2 teaspoon onion powder
1 teaspoon creole seasoning
1/4 teaspoon liquid smoke

Steps:

  • In a large saucepan or pot, bring 4 cups of water to a boil. Add rice and butter and lower to a simmer. Cover and cook for 15-20 minutes or until rice is cooked.
  • Add chopped bacon a large deep skillet or saucepan. Cook over medium heat and stir until bacon starts to crisp. ( If you don't want bacon in the beans, carefully remove the bacon bits but leave the bacon grease. )
  • Pour in whole cans of red beans. Using a potato masher, mash some of the beans but leave some of them whole.
  • Pour in water, garlic salt, onion powder, creole seasoning, and liquid smoke. Stir to combine.
  • Let simmer for 15 minutes or until beans start to soften. Make sure to stir so that the beans don't stick.
  • Serve beans in a bowl with a scoop of rice on top.
