6 medium ears sweet corn
2 tablespoons olive oil
1 teaspoon chili powder
1 teaspoon smoked paprika
1/2 teaspoon seasoned salt
1/8 teaspoon cayenne pepper

Steps:

  • Carefully peel back corn husks to within 1 in. of bottoms; remove silk. Brush corn with oil. In a small bowl, combine remaining ingredients; sprinkle over corn. Rewrap corn in husks; secure with kitchen string. Place in a Dutch oven; cover with cold water. Soak 20 minutes; drain., Grill corn, covered, over medium heat 25-30 minutes or until tender, turning often.

Steps:

  • Preheat an outdoor grill for high heat and lightly oil grate.
  • Peel back corn husks and remove silk. Place 1 tablespoon butter, salt and pepper on each piece of corn. Close husks.
  • Wrap each ear of corn tightly in aluminum foil. Place on the prepared grill. Cook approximately 30 minutes, turning occasionally, until corn is tender.

8 ears corn
Kosher salt
BBQ Butter, recipe follows
Herb Butter, recipe follows
2 tablespoons canola oil
1/2 small red onion, chopped
2 cloves garlic, chopped
2 teaspoons Spanish paprika
1/2 teaspoon cayenne powder
1 teaspoon toasted cumin seeds
1 tablespoon ancho chili powder
1/2 cup water
1 1/2 sticks unsalted butter, slightly softened
1 teaspoon Worcestershire sauce
Salt and freshly ground black pepper
2 sticks unsalted butter, at room temperature
1/4 cup chopped fresh herbs (basil, chives or tarragon)
1 teaspoon kosher salt
Freshly ground black pepper

Steps:

  • Heat the grill to medium.
  • Pull the outer husks down the ear to the base. Strip away the silk from each ear of corn by hand. Fold husks back into place, and place the ears of corn in a large bowl of cold water with 1 tablespoon of salt for 10 minutes.
  • Remove corn from water and shake off excess. Place the corn on the grill, close the cover and grill for 15 to 20 minutes, turning every 5 minutes, or until kernels are tender when pierced with a paring knife. Remove the husks and eat on the cob or remove the kernels. Serve with the BBQ Butter and/or Herb Butter. Spread over the corn while hot.
  • Heat the oil in a medium saute pan over high heat until almost smoking. Add the onion and cook until soft, 2 to 3 minutes. Add the garlic and cook for 30 seconds. Add the paprika, cayenne, cumin and ancho powder and cook for 1 minute. Add 1/2 cup of water and cook until the mixture becomes thickened and the water reduces. Let cool slightly.
  • Place the butter in a food processor, add the spice mixture and Worcestershire sauce and process until smooth. Season with salt and pepper, scrape the mixture into a small bowl, cover and refrigerate for at least 30 minutes to allow the flavors to meld. Bring to room temperature before serving.
  • Combine in a food processor and process until smooth.

I make this corn with the Cajun butter very often in the summer season, after you try this recipe, you will always be making this corn on the grill! Low temperature heat on the BBQ for about 30 minutes on indirect heat produces the best tender corn, the Cajun butter makes this corn so good! Don't forget, soak the corn for 1 hour, with the husks on, and only heat up one side of the barbecue for this. Double up on the Cajun butter if you are making more than 8 corn.

7 -8 ears of fresh corn on the cob
1 lb butter, softened
3 teaspoons cayenne pepper
1 1/2 teaspoons salt (or to taste)
2 teaspoons crushed hot red pepper flakes (or to taste)
1 tablespoon dried thyme
1 tablespoon dried basil
1 teaspoon dried oregano
2 tablespoons minced fresh garlic
2 tablespoons Worcestershire sauce

Steps:

  • Carefully remove the "silks" from the cornhusks (keeping the husks intact).
  • Place the corn cobs with the silks removed in a large pot of COLD water (the corn should be completely covered with the cold water).
  • Soak the corn for 1 hour.
  • In the meantime prepare the cajun butter, by mixing all of the cajun butter ingredients together, adjusting ingredients to taste).
  • Remove the corn from the water and shake off any excess moisture.
  • Pull husks back gently.
  • Smear the butter (with your hands) over all sides of the corn.
  • Pull the husks back over to cover corn.
  • Place the corn on a baking tray large enough to hold the cobs.
  • Preheat only ONE SIDE of the barbecue to 275 degrees or to low temperature.
  • Leave the other side of the grill off.
  • Place the corn on the tray onto the side of the grill that has NO heat.
  • Close lid, and cook the corn for about 30 minutes (the corn kernels will turn a bright yellow colour, and the butter will be fully absorbed into the flesh of the corn).
  • Remove from the grill and serve immediately.

4 -6 fresh ears of corn
12 pack of your favorite beer
1 bag ice
2 tablespoons margarine or 2 tablespoons butter
2 teaspoons lemon juice
1 teaspoon snipped fresh thyme, or
1/4 teaspoon dried thyme, crushed

Steps:

  • Peel husks back, but do not remove.
  • Using a stiff brush or your fingers, remove silk from corn.
  • Pull husks back up around corn.
  • In an ice chest, cover corn (husks on) with 12 pack of beer.
  • Then cover with bag of ice.
  • Soak for at least 1 hour.
  • Drink the beer.
  • Pull corn from cooler shaking corn to remove excess water.
  • Cover corn as much as possible with husks.
  • If necessary, tie the tips of the husks together with wet kitchen string.
  • Grill corn (with husks) on an uncovered grill directly over medium-hot coals about 25 minutes or until tender, turning several times.
  • Carefully remove the husks and strings.
  • Meanwhile, in a small saucepan combine margarine or butter,lemon juice, and thyme.
  • Heat on the grill or stovetop until margarine is melted.
  • Brush mixture over the corn before serving.
