This recipe suits any greens you have to hand - from shredded kale to Brussels sprouts. For the less adventurous, less chilli can be used

1 tbsp vegetable oil
1 tsp cumin seed
½ tsp mustard seed
4 green chillies , finely chopped
large piece fresh root ginger , grated
½ tsp turmeric
500g shredded greens, such as kale , Brussels sprouts, or any other
100g pea
juice 1 lemon
½ tsp ground coriander
small bunch coriander , roughly chopped
2 tbsp unsweetened desiccated coconut

Steps:

  • Heat the oil in a large non-stick pan or wok, sizzle the cumin and mustard seeds for 1 min, then add the chilli, ginger and turmeric. Fry until aromatic, then add the greens, a pinch of salt, a splash of water and the peas.
  • Cover the pan and cook for 4-5 mins until the greens have wilted. Add the lemon juice, ground coriander, half the fresh coriander and half the desiccated coconut, then toss everything together. Pile into a serving dish and scatter with the rest of the coconut and coriander.

2 cups chopped cabbage
1 -2 green chili
1/4 teaspoon mustard seeds
1/4 teaspoon cumin seed
1/4 teaspoon turmeric powder
1/4 teaspoon garam masala
1/2 teaspoon ginger paste
1/2 teaspoon garlic paste
1/2 cup chopped onion
1 teaspoon oil
1 teaspoon chopped cilantro
1 dash asafoetida powder
salt

Steps:

  • Heat the oil.
  • Add the cumin and mustard seeds.
  • Add the asafoetida powder.
  • Add ginger, garlic, chillies and onions.
  • Cook till the onions are a little soft.
  • Add the cabbage.
  • Add salt and turmeric powder.
  • Cook till the consistency which you like your cabbage to be cooked. *I cook about 5 minutes because I like my cabbage crunchy.
  • Add chopped cilantro.
  • Serve with Indian bread.
  • Variations:.
  • I have these variations which I use depending on what I am in the mood for
  • 1. Add chopped tomato along with the onions.
  • 2. Add boiled, diced potatoes.
  • 3. Add grated fresh coconut or dry coconut with the cabbage.

  • Heat the vegetable oil in a saucepan over medium heat. Add the mustard seeds, dried chili, and red onion, while stirring.
  • Add the green chili, crushed garlic, 1 tablespoon turmeric, and bay leaves. Cook and stir for 1-2 minutes.
  • Add the cabbage and the remaining turmeric, then season with salt. Mix for a while, then cook for 10 minutes on low heat.

1 teaspoon chopped fresh ginger
1 serrano pepper, finely chopped
1 teaspoon caraway seed
1 teaspoon cumin seed
1 teaspoon crushed fennel seed
1 teaspoon black mustard seed
1 teaspoon fenugreek seeds
1 teaspoon ground dried turmeric
¼ teaspoon asafoetida powder
5 cardamom pods
½ medium head cabbage, sliced into strips
1 teaspoon salt
¼ cup water, or as needed
juice from one lime
1 (12 ounce) can kidney beans, garbanzo beans, or black eyed peas, drained

Steps:

  • Heat the oil in a large pot over medium-high heat. Sautee the ginger and serrano pepper for about one minute until soft. Season with caraway, cumin, fennel, mustard, fenugreek, turmeric, and asafoetida; cook until fragrant, about 20 to 30 seconds. Stir in the cardamom pods and cabbage. Season with salt and mix well.
  • Pour in the water and lime juice, bring to a simmer, and cook, covered for 5 minutes. Pour the beans over the cabbage, cover, and cook an additional 2 minutes to reheat. Remove the lid and simmer until the liquid is absorbed, about 1 to 2 minutes.

3/4 lb cabbage, cored and shredded
3/4 lb carrot, grated
1 jalapenos or 1 serrano pepper, cut into thin strips
4 tablespoons vegetable oil
1 tablespoon yellow mustard seeds or 1 tablespoon black mustard seeds
1 whole dried red chili
1 1/4 teaspoons salt
1/2 teaspoon sugar
1/4 cup fresh cilantro, chopped
1 tablespoon lemon juice

Steps:

  • Heat oil in a wok or deep, wide skillet over a medium-high flame.
  • When hot, put in mustard seeds.
  • As soon as the seeds begin to pop (this takes only a few seconds, really), put in the dried chili.
  • Stir once.
  • Within seconds the chili will turn dark red.
  • Put cabbage, carrots, and hot pepper in the pan.
  • Turn the heat down to medium and stir the vegetables for about 30 seconds.
  • Add salt, sugar and cilantro.
  • Stir and cook for another 5 minutes or until the vegetables are just done and retain some of their crispness.
  • Stir in lemon juice.
  • Remove red chili and serve.
  • Note: You may want to have a lid handy for when the mustard seeds begin to pop.
  • They're hot little projectiles before they're mixed with the veggies.

Healthy & simple sautéed cabbage with cumin seeds and turmeric

1 lb green cabbage
2 tablespoons moong dal (optional)
1½ tablespoons oil
1 teaspoon cumin seeds
½ teaspoon ground turmeric
½ teaspoon red chili powder (or 1 small green chili chopped )
1 teaspoon kosher salt
3 tablespoons water
¼ cup cilantro (finely chopped for garnish)

Steps:

  • Soak the mung dal in ¼ cup of hot water while you prep the cabbage
  • Cut the head of cabbage in half. Then take one half and place it with the flat side down on the cutting board and thinly slice the cabbage into long strips. Then cut the strips in half. Chop about 6 cups of cabbage
  • Set the Instant Pot to saute mode and heat oil. Add cumin seeds and allow them to sizzle. Turn Saute off. Add turmeric, red chili powder, and cabbage. Add salt and mix. Add water and layer the soaked dal on top. NOT: Do not mix as the dal can stick to the bottom of the pot.
  • Close the lid and cook for 1 minute followed by quick release. Press cancel and open the Instant Pot. Mix well and garnish with cilantro
  • In a large nonstick pan heat oil. Add cumin seeds and allow them to sizzle. Add turmeric, red chili powder and cabbage, salt, and soaked mung dal. Mix well and cook covered with the lid on for 5 minutes on medium heat
  • After 5 minutes taste and if the texture is good for you, turn the heat off and enjoy the cabbage. If you like it cooked soft, mix well and cook covered for another 5 minutes

I am trying to duplicate a cabbage dish we have eaten up at the East Indian restaurant, the Taj Palace. I found this recipe on the internet, it's not exactly the same as the one we eat, but it's close and really delicious.

1 tsp extra virgin coconut oil
1 tsp black mustard seeds, toasted
3/4 tsp turmeric powder
2 Tbsp raw sesame oil
1 tsp unrefined sea salt
1/2 large head green cabbage, shredded

Steps:

  • 1. Combine the shredded cabbage and the salt in a large bowl. Mix it up well with your hands and let it sit for 1 hour so the salt can extract the water from the cabbage.
  • 2. When the hour is up put the cabbage on a cotton tea towel and roll up the ends and squeeze the water out of the cabbage. Blot the cabbage with paper towels, you want it as dry as possible. You want it to be crunchy but not hard.
  • 3. Clean out the bowl you used to emaciate the cabbage and dry it well. Put the cabbage back into the bowl.
  • 4. Heat the coconut oil with the mustard seeds until they start to pop. The pour the oil and seeds through a fine sieve so the oil drains off. Cool the seeds in the sieve.
  • 5. Add the cooled mustard seeds to the cabbage along with the turmeric and sesame oil.
  • 6. Toss this very well. The mustard seed in this is slightly pungent. If you don't eat this right away, the salad will last 2-3 days in the fridge.
  • 7. This is a very tasty and healthy salad.
  • 8. Enjoy!
