2 limes , chopped into wedges, plus extra lime wedges to serve (optional)
5 tbsp golden caster sugar
200ml cachaça
ice

Steps:

  • Put the lime wedges in a large jug with the sugar, then use a muddler or the end of a rolling pin to break them down. Release as much juice from the wedges as possible, and let it mix with the sugar to create a syrup - you can also do this with a large pestle and mortar. Discard the lime peel.
  • Divide the syrup and cachaça between four glasses, then top with the crushed ice. Serve garnished with lime wedges, if you like.

Steps:

  • Cut the lime in quarters then cut them crosswise.
  • Put lime and sugar in a tall glass and mash with a pestle (or a wood spoon, rolling pin, etc).
  • Add the same amount of liquor on the lime juice and stirr.
  • Add ice and stirr again.
  • Here in Brazil, the guys that sell it at the beach put another glass upside down over it, hold both with one hand and shake.
  • Great trick at parties.

3 limes
1/2 cup sugar
1 1/2 quarts ice
1 cup cachaca (Brazilian brandy made from sugar cane)

Steps:

  • Cut the limes in half, and then cut each half into 8 pieces. Place 12 pieces of lime in each of 4 double old-fashioned glasses (or other 12-ounce glasses.) Sprinkle 2 tablespoons of sugar into each glass. Using a muddler or the butt end of a large wooden spoon, mash the limes into the base of the glass. Try to dissolve the sugar as you do this, and stir occasionally. Fill each glass with 1 1/2 cups of ice and 1/4 cup of cachaca. Pour the contents of the glass into a shaker, and invert the glass into the shaker to act as a lid. Shake the glass and shaker to combine the sugar and cachaca for several seconds. Lift the glass from the shaker, and pour the contents back into the glass. Repeat the process with the remaining 3 glasses.

Steps:

  • Place the lime pieces, pulp side up, in the bottom of an old fashioned glass or heavy tumbler. Add sugar to taste and crush the lime and sugar together with a pestle or the end of a wooden spoon (be sure to crush the pieces pulp side up or too much bitter lime oil will be released from the zest). Add the cachaca, stir to mix and add the ice cubes. Stir again and serve.

Caipirinha is the national drink of Brazil. The drink is made with cachaça (pronounced - kuh-sha-suh). It is technically a brandy and a member of the aguardente family. There is an old adage in Brazil: "quanto pior a cachaça, melhor a caipirinha" -- the worse the cachaça, the better the caipirinha. The name caipirinha is derived from the Portuguese word caipira (hick, hayseed, country bumpkin, rube, etc.) coupled with the -inha suffix (a diminutive denoting little or small) and can be roughly translated as little hick, little hayseed, little country bumpkin, little rube, etc., etc. Poor man's drink or not, cachaça has become an integral part of Brazilian culture and its significance ranks right up there with soccer/football (futebol), carnival and samba as Brazilian national icons.   • Cut the lime into small chunks, then put it into the bottom of a sturdy tumbler and add the golden granulated sugar. Crush really well with a muddler - you can also do this with a pestle and mortar.
  • Top up the tumbler with crushed ice, then add the vodka. Stir well to mix all the ingredients together, and serve.
