1 container (16 oz) sour cream such as Daisy® Brand Sour Cream
1 package taco seasoning mix
1 package (8 oz) shredded Cheddar cheese such as Sargento® (2 cups)

1/2 cup sliced green onions
1/2 cup sliced black olives
Tortilla chips

Steps:

  • Spread refried beans in shallow serving dish.
  • Mix sour cream and Taco Seasoning Mix in small bowl until well blended. Spread over refried beans.
  • Top with layers of cheese, guacamole, tomatoes, onions and olives. Serve 7 layer dip with tortilla chips.

1 (4.5 ounce) can chopped green chiles, undrained
1 tablespoon fresh lime juice, plus
2 tablespoons fresh lime juice for avocado layer
2 teaspoons chili powder
¼ teaspoon ground cumin
Salt
3 avocados, halved, pitted, flesh spooned out
1 cup sour cream
½ cup mayonnaise
1 cup salsa (drain to equal 1 cup if salsa is especially runny)
¾ cup sliced canned black olives, drained
1 cup grated pepper Jack cheese
½ cup thin sliced scallion greens, green part only

Steps:

  • Mix beans, chiles, 1 Tb. of lime juice, chili powder, cumin, and a pinch of salt in a small bowl. In a second small bowl, mash avocados with a fork; stir in remaining 2 Tbs. lime juice and 1/2 teaspoon of salt to make guacamole. In a third small bowl, mix sour cream and mayonnaise.
  • Spread bean mixture, then guacamole, then sour cream mixture, and finally salsa over the bottom of a 9-inch deep-dish pie plate or similar size pan. Sprinkle with olives, then cheese. (Dip can be covered and refrigerated up to 2 days) To serve, sprinkle with green onions.

The order of the layers offers some delightful moments, like where the cheese melts into the warm refried beans or where the cool sour cream meets the fiery salsa. Cilantro and scallions serve as a refreshing counterpoint, and Fritos lend added crunch. No need to dig out your trifle bowl: A platter with a lip is preferred here for easier scooping.

1 cup freshly grated Cheddar (about 4 ounces)

Steps:

  • In a small bowl, stir together the sour cream and half the jalapeño (about 1 tablespoon). Season with salt and pepper. In another small bowl, coarsely mash the avocado, lime juice and remaining 1 tablespoon jalapeño, then season with salt and pepper.
  • In a small saucepan over medium-low heat or in a microwave, warm the refried beans with the cumin. Season with salt and pepper.
  • Spread the beans on a platter with a rim or lip. Top evenly with the cheese, followed by the olives, avocado mixture and salsa. Top with dollops of jalapeño-sour cream and sprinkle with crumbled Fritos, scallions and cilantro. Serve with tortilla chips.

1 baguette, thinly sliced
1/4 cup extra-virgin olive oil
1 teaspoon salt
1 teaspoon garlic powder
Freshly ground black pepper
2 cups ricotta
Kosher salt and freshly ground black pepper
2 tablespoons olive oil
1 medium onion, chopped
2 cups grape tomatoes, halved
1/2 cup chicken stock
5 cloves garlic, chopped
12 ounces spicy Italian sausage, casings removed
1/2 cup sliced pepperoncini, drained
One 12-ounce jar marinated artichoke hearts, drained and chopped
One 12-ounce jar roasted red peppers, drained and chopped
One 8-ounce container fresh mozzarella ciliegine, drained and cut in half
8 leaves basil, cut into chiffonade

Steps:

  • Preheat the oven to 350 degrees F.
  • For the crostini: Lay the baguette slices on a baking sheet. Brush with the oil and then sprinkle with the salt, garlic powder and some fresh pepper. Bake for 15 minutes, rotating the pan halfway through. Remove the crostini from the oven and set aside. Turn the oven to broil.
  • For the dip: In medium bowl, combine the ricotta with salt and pepper to taste. Mix until fully combined, then transfer to an 8-by-8-inch pan, spreading the mixture evenly across the bottom. Set aside.
  • In a large pan with a lid, heat the oil over medium heat. Add the onions, and sweat for 3 to 5 minutes. Add the halved grape tomatoes, chicken stock and garlic and bring to a boil; cover and reduce the heat to low. Cook until the tomatoes have softened and the mixture has thickened, about 15 minutes.
  • While the tomatoes are cooking, add the sausage to a saute pan over high heat. Break up sausage with a wooden spoon and cook it through. When the sausage is finished, spoon it directly over the ricotta and spread it out evenly.
  • When the tomatoes are done, spoon them over the sausage layer. Top the tomato layer with the sliced pepperoncini, marinated artichokes and roasted peppers. Place the halved ciliegine on top.
  • Place the dip under the broiler and broil on high heat until the cheese has browned slightly, 2 to 3 minutes.
  • Remove the dip from the broiler and top with the basil. Serve immediately with the crostini.

4 green onions (28 grams), dark and light green parts only, sliced
Hot sauce, optional
One 17-ounce bag lime-flavored tortilla chips
1 1/2 tablespoons (20 grams) olive oil
1 small yellow onion (97 grams), roughly chopped
2 cloves garlic (8 grams), roughly chopped
2 teaspoons kosher salt, plus more as needed
Two 15.5-ounce/465-gram cans pinto beans, drained and rinsed
One 4-ounce/117-gram can diced green chiles (mild, medium or hot-your choice!)
2 chipotle peppers in adobo (52 grams) with 1 tablespoon sauce (from a 7-ounce can)
1 1/4 cups (287 grams) low-sodium chicken broth, plus more as needed
4 large avocados, halved, peeled and pitted
1/2 cup (20 grams) cilantro leaves and tender stems, finely chopped
Zest of 1 large lime, plus the juice of 2 limes (40 grams)
1 teaspoon kosher salt, plus more to taste

Steps:

  • To make the roasted corn salsa: Heat 1 tablespoon olive oil in a 12-inch cast-iron skillet over medium-high heat. Add the corn kernels and stir to coat in the oil. Season with salt. Cook until the corn kernels are browned and blistered, 6 to 8 minutes. Remove from the heat and pour into a bowl. While still hot, add the cilantro, chile, lime juice, onion and the remaining tablespoon olive oil. Stir to combine. Season with salt, if needed, and a couple turns of black pepper. Allow to cool to room temperature.
  • Spread the Refried Beans on the bottom of a 9-by-13-inch baking dish in an even layer.
  • Carefully spread the Guacamole in an even layer over the beans.
  • Mix together in a medium bowl the sour cream, coriander, smoked paprika and 1 teaspoon salt until thoroughly combined. Carefully spread the sour cream on top of the layer of Guacamole.
  • To complete the remaining layers, sprinkle the Cotija evenly over the corn salsa. Top the Cotija with the radishes. Sprinkle the green onions on top. Drizzle with hot sauce, if desired. Serve with the limey tortilla chips.
  • Heat the oil in a 12-inch cast-iron pan over medium heat. Add the onion and garlic. Season with 1 teaspoon salt. Cook until the garlic and onion are softened and fragrant, about 5 minutes. Add the beans, green chiles, chipotles and sauce. Season with the remaining teaspoon salt. Stir to combine until the beans are coated, then cook for 2 minutes. Add the chicken broth and stir to incorporate. Increase the heat to medium-high. Bring to a boil and reduce to a simmer. Simmer until the chicken broth is slightly reduced and thickened to a gravy, 10 to 12 minutes. Turn off the heat and transfer the beans to a food processor with a blade attachment or to a high-speed blender. Puree until smooth. Season with salt.
  • In a large bowl, add the avocados, cilantro, lime zest and juice and salt. Mash until smooth but still slightly chunky.

Steps:

  • Spread the refried beans in an even layer into the bottom of a 9x13 in baking dish. Spoon on the guacamole, smoothing into a second even layer. Pour over the salsa, smoothing into a third even layer. Sprinkle on an even layer of green onion, then iceberg lettuce, and then tomatoes.
  • In a small bowl, whisk together the mayonnaise, vegannaise or sour cream with the lime juice. Drizzle the mixture over the tomato layer.
  • Serve immediately or refrigerate, covered, for up to 2 days.

4 ounces green chiles, diced
1/4 teaspoon cumin
1/8 teaspoon coriander powder
1/2 teaspoon red chili powder
1/4 teaspoon garlic powder
1-3 dashes hot sauce
5 plum tomatoes, diced
1 jalapeños jalapeño, seeds removed and minced
1/4 red onion, minced
1 tablespoon fresh lime juice
1/4 bunch fresh cilantro, chopped
salt, to taste
2 avocados, peeled and pits removed
4 tablespoons fresh lime juice
1/2 cup reduced fat shredded cheddar cheese
1/2 cup shredded reduced fat monterey jack cheese
1/3 cup fat free sour cream
1/4 cup black olives
2-3 tablespoons fresh cilantro, chopped
1 cup pico de gallo

Steps:

  • In a skillet set over medium heat, add refried beans, diced green chilies, cumin, coriander, chili powder, garlic powder and hot sauce. Stir together and allow flavors to meld and warm through, about 5-7 minutes. Remove from heat and set aside. In a medium size bowl, mix together all of the pico de gallo ingredients (tomatoes, jalapeno, red onion, lime, salt and cilantro) and set aside. In a second medium size bowl, mash avocados with a fork, potato masher or pastry blender. Add 1 cup of the pico de gallo mixture and the juice of two limes and mix well to combine. Spread the refried bean mixture evenly over a medium sized platter with slightly rimmed edges. Then layer the ingredients in the following order on top of the beans, making sure to spread each layer evenly over the top of the previous: sour cream cheddar cheese guacamole jack cheese black olives 1 cup of pico de gallo chopped cilantro 5. Serve dip with tortilla chips and enjoy!
