1 package (9 oz) frozen diced cooked chicken, thawed
1 can (4.5 oz) Old El Paso™ chopped green chiles, drained
2 teaspoons Old El Paso™ taco seasoning mix (from 1-oz package)
1 cup shredded Mexican cheese blend (4 oz)
1/2 cup Original Bisquick™ mix
1/2 cup cornmeal
3/4 cup milk
1 egg
1 can (11 oz) whole kernel corn with red and green peppers, drained
Shredded lettuce, sour cream and Old El Paso™ Thick 'n Chunky salsa, if desired

Steps:

  • Heat oven to 400°F. In 9-inch glass pie plate, stir chicken, chiles and taco seasoning until mixed. Sprinkle with cheese.
  • In medium bowl, stir Bisquick mix, cornmeal, milk, egg and corn until blended. Pour over chicken mixture and cheese.
  • Bake 25 to 30 minutes or until toothpick inserted in topping comes out clean. To serve, cut into wedges and top with lettuce, sour cream and salsa.

2 cups cooked chicken, cut into 3/4-inch cubes
1 cup green enchilada sauce
1 cup plain nonfat yogurt, divided
2 tablespoons salsa
1 teaspoon ground coriander
1 (8 ounce) package cornbread mix
⅓ cup water
⅓ cup shredded pepperjack cheese
5 pitted green olives, sliced

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Spray a 9-inch glass baking dish with cooking spray.
  • Mix chicken, green enchilada sauce, 1/2 cup yogurt, salsa, and coriander together in a bowl.
  • Combine cornbread mix, remaining 1/2 cup yogurt, and water in a bowl. Spread half of the cornbread mixture in the bottom of the dish. Spoon chicken mixture evenly on top. Sprinkle pepperjack cheese and green olives over chicken mixture. Spread remaining cornbread mixture on top.
  • Bake in the preheated oven until top is golden brown, about 30 minutes.

1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon salt

1 can (15 ounces) black beans, rinsed and drained
1 can (14-1/2 ounces) diced tomatoes, undrained
1 can (11 ounces) whole kernel corn, drained
1 can (10 ounces) enchilada sauce
2 green onions, chopped
1/4 cup minced fresh cilantro
1 package (8-1/2 ounces) cornbread/muffin mix
2 large eggs, lightly beaten

Steps:

  • In a large skillet, cook chicken over medium heat until no longer pink, 6-8 minutes, breaking it into crumbles. Stir in seasonings., Transfer to a 4-qt. slow cooker. Stir in beans, tomatoes, corn, enchilada sauce, green onions and cilantro. Cook, covered, on low until heated through, 6-8 hours., In a small bowl, combine muffin mix and eggs; spoon over chicken mixture. 1 tablespoon olive oil
1 onion (peeled and diced)
2 cups shredded cooked chicken
1 1/2 cups prepared salsa or enchilada sauce
1 can (approximately 15 oz.) red or black beans (rinsed and drained)
1 teaspoon taco seasoning
For the Cornbread Topping:
2 eggs
1 tablespoon sugar
6 tablespoons unsalted butter (at room temperature)
1 cup milk

After wondering how Recipe #224699 would work with chicken, I began experimenting and came up with this dish. This is serious comfort food with a Tex-Mex twang. Small serving cooking means grabbing bits of leftovers in the fridge, so I've included a couple of ingredient options.

1/4 cup onion, small dice
2 tablespoons green peppers or 2 tablespoons red peppers, small dice
1 small garlic clove, minced
1 tablespoon fat free chicken broth
3 ounces cooked boneless skinless chicken breasts (comes to a loose 3/4 cup) or 3 ounces cooked boneless skinless chicken thighs, shredded or diced small (comes to a loose 3/4 cup)
1/4 cup fat free chicken broth
1 teaspoon chili powder
1/4 teaspoon cumin
1/3 cup red beans or 1/3 cup kidney bean, rinsed and drained
1/2 cup canned diced tomato, measure with juice
1/2 cup frozen corn
3 tablespoons yellow cornmeal (divided)
1 pinch salt
1/2 cup nonfat milk or 1/2 cup low-fat milk
1 egg white
2 tablespoons soy cheddar cheese (optional) or 2 tablespoons cheddar cheese, shredded (optional)

Steps:

  • Pre-heat oven to 350 degrees.
  • Prepare a non-stick skillet, with a light coating of cooking spray. Add the onions and green peppers and cook for a minute. Add 1 tablespoon of broth and cook an additional 2 minutes until the vegetables have softened.
  • Add the shredded chicken, chili powder, cumin and broth and stir until the broth is heated. Now add the tomatoes, corn, beans and 1/2 tablespoon of corn meal. Bring the mixture to a simmer. Transfer to a one quart casserole.
  • Place the milk, cornmeal and salt in a small saucepan and bring to a light boil. Reduce to a simmer and stir frequently until you have a thickened mush. Alternately, you can cook the ingredients in a microwave and cook for 2 and 1/2 minutes, stirring every 30 seconds.
  • In a small bowl beat the egg whites by hand until foamy. Slowly add in the corn meal, stirring to make sure it does not scramble the egg. Add the soy cheese/cheese if using.
  • Top the casserole with the cornmeal mush.
  • Place the casserole on a cookie sheet to catch drips and place in the oven. Bake for 25 to 30 minutes the top should be puffed and lightly browned.

3/4 cup cornmeal
2 tablespoons sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 egg
4 tablespoons melted butter, (cooled)
1/3 cup milk
14.75 ounce can cream style corn
1 pound lean ground beef, (such as sirloin)
10 ounce can enchilada sauce, ((read label to make sure it's gluten free))
1 cup salsa
1 teaspoon chili powder
1 1/2 cups shredded colby jack cheese

Steps:

  • Preheat oven to 400ºF. Grease a cast iron skillet with butter or spray a pie plate, 11X7 pan, or 9X9 pan with cooking spray.
  • Whisk together cornmeal, sugar, baking powder, and salt. Add egg, melted butter, milk, and cream style corn. Whisk to combine. Pour into prepared baking dish and bake for 20 minutes, or until toothpick comes out clean and edges are golden brown. Remove from oven and decrease oven temperature to 375ºF.
  • Use the handle of a wooden spoon to poke holes all over the cornbread surface. Pour 1/2 can enchilada sauce on top and spread evenly over cornbread. Set aside.
  • While cornbread is baking, begin to make filling. In a large skillet brown beef over medium high heat and drain, if necessary. To the browned beef stir in remaining enchilada sauce, salsa, and chili powder. Bring to a boil and simmer, uncovered, for 5 minutes until thickened.
  • Spread beef filling over cornbread. Top with cheese and return to 375ºF oven for 15 minutes, or until cheese is bubbly. Let sit for 5-10 minutes before cutting. Serve with additional salsa, cilantro, sour cream, and sliced avocado.

If you have leftover cooked chicken, there's no need for an extra expenditure, and most of the remainder are standard pantry items. Lots of ingredients, but very easy to put together. It's spicy, but can easily be adjusted to milder tastes. A really delicious one dish family meal!

1 teaspoon chili powder, for the topping
1 teaspoon dried oregano
1 teaspoon whole cumin seed

1 packed cup frozen bell pepper (red, yellow, green strips, unthawed)

This Southwestern casserole is inspired by tamales but takes a fraction of the effort. A chili-like filling is topped with masa cornbread and baked.

For the Filling:
2 teaspoons olive oil
1 pound lean ground turkey
1 yellow onion
1 bell pepper
2 large garlic cloves
1 tablespoon tomato paste
1 tablespoon chili powder
1 teaspoon cumin
1 teaspoon kosher salt
1 can diced tomatoes
1 can black beans
4 ounces green chiles
1 cup frozen corn
3/4 cup shredded cheddar cheese
For the Topping:
2 cups masa harina flour
1 tablespoon sugar
1 1/2 teaspoons baking powder
1 teaspoon kosher salt
2 cups low-sodium chicken broth
1/2 cup unsalted butter
1 large egg
1/2 cup shredded cheddar cheese

Steps:

  • Gather the ingredients. Preheat the oven to 400 F.
  • Heat the oil in a 12-inch deep skillet over medium heat (cast iron, stainless steel, or oven-safe nonstick). Once hot, add the ground turkey and onion. Sauté, breaking up the turkey, for 3 to 4 minutes, or until the turkey is mostly cooked and the onion is turning translucent.
  • Add the bell pepper and garlic and sauté for 2 to 3 more minutes.
  • Add the chili powder, cumin, and salt and stir to completely combine.
  • Add the black beans, diced tomatoes, tomato sauce, chiles, and corn. Stir and cook just until bubbly.
  • Taste for seasoning. Turn off the heat and set aside while you make the topping.
  • In a large mixing bowl, combine the masa harina, sugar, baking powder, and salt. Whisk together to combine.
  • Add the chicken broth and use an electric mixer to beat for 2 to 3 minutes, until fluffy. Alternatively, beat with a wooden spoon.
  • Add the melted butter and egg and beat for 2 more minutes until well combined. The mixture should resemble creamy mashed potatoes-if it is too stiff, add another splash or two of broth. Add 1/2 cup shredded cheese and mix just to combine.
  • Spread the cooked filling out in the skillet into an even layer. Top with 1 cup of cheddar cheese.
  • Top with large dollops of the masa topping, then use a rubber spatula to gently spread into an even layer, spreading almost to the edge.
  • Bake, uncovered, for about 30 to 45 minutes, or until the filling is very bubbly, the topping is pale golden brown, and a toothpick inserted in the center of the masa comes out clean. Let cool for 5 to 10 minutes before serving.

Mix together with an electric beater on low speed. Add the masa, large serving spoonfuls at a time, continuing to beat on medium speed until fully combined. Cover and refrigerate for 1 hour.
  • Heat the remaining 2 tablespoons vegetable shortening or lard in a saute pan over medium-high heat. Saute the diced bell pepper, onions, corn, and jalapenos for 3-5 minutes until just beginning to soften. Remove from the heat and stir in the shredded chicken. 1/2 cup chicken stock, and salsa verde. Set aside to cool.
  • Preheat the oven to 375 degrees F. Remove the masa from the refrigerator and beat with an electric mixer one more time. Spray a 9-inch pie plate with cooking spray. Spread about 2/3 of the masa evenly across the bottom and up the sides of the pie plate. Fill with the chicken mixture. Carefully spread the remaining maza over the top, Wipe the rim of the pie plate to remove any excess maza.
