Molded Cheese Salad image

A sparkling citrine gem for your table from the Mississippi Valley chapter of the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947. Chilling time not included in preparation time.

1 (3 ounce) package lemon gelatin
2 cups boiling water
1/2 cup heavy cream, whipped
1 cup nuts, chopped
1 cup monterey jack cheese or 1 cup mild cheddar cheese
1 cup crushed pineapple, drained
1/2 cup stuffed green olive, sliced
1/4 cup sugar
2 tablespoons flour
1/8 teaspoon salt
1/2 cup water
1 cup pineapple juice
1 egg, beaten
3 tablespoons lemon juice (fresh is best)
1/2-1 cup whipping cream, whipped

Steps:

  • For the salad dressing: Mix sugar, flour and salt together.
  • Add water and blend.
  • Pour into pineapple juice and cook for ten minutes over low heat, stirring frequently until slightly thickened.
  • Pour over egg, stirring rapidly; return to heat and cook for 3 minutes longer.
  • Remove from heat and add lemon juice; cool in the refrigerator.
  • When ready to serve, thin with plain or whipped cream to desired consistency.
  • For the Salad: Dissolve gelatin in boiling water and chill until it begins to thicken.
  • Whip until fluffy; fold in next five salad ingredients.
  • Spritz a ring mold with cooking spray (Pam), pour mixture in and chill until firm.
  • Unmold onto lettuce leaves and fill center with salad dressing.

LIME COTTAGE SALAD

This is a refreshing summer salad that goes with just about anything. This does not have as many ingredients as some do, but it is sooo good, and very easy to make as I usually have all three of the ingredients on hand most of the time. It is a pretty green and I just love it. We all do. I make it all year long. If you make it with the sugar-free jello and low-fat cottage cheese, it is a great Weight Watcher dish. I have used both kinds, and they both taste the same. It has only 1-2 points per serving.

1 lb cottage cheese (I use Hood's Country Style)
1 (20 ounce) can crushed pineapple
2 (3 ounce) packages lime Jell-O gelatin

Steps:

  • Drain the pineapple well and save the juice.
  • Mix the jello according to directions on the box, using all of the pineapple juice as the liquid, adding enough water, if needed, to make the right amount on package.
  • Put the jello in the refrigerator until it is partially set.
  • Mix in the cottage cheese and pineapple.
  • Put into a mold or pretty dish and refrigerate till firm.
  • Enjoy!

This is a wonderful jello salad to serve with turkey. The whipped cream topping is not too sweet. This is a Thanksgiving tradition in our family since the 1960s.

1 (3 ounce) package raspberry Jell-O gelatin
1 cup hot water
1 tablespoon lemon juice
1 (1 lb) can cranberry sauce
1 cup cottage cheese
1/2 cup sour cream
1 cup whipping cream
1 (3 ounce) package cream cheese
50 miniature marshmallows
2 tablespoons sherry wine

Steps:

  • Dissolve jello in hot water and add lemon juice.
  • Chill until slightly thickened.
  • Whip cranberry sauce and add with cottage cheese and sour cream to jello.
  • Pour into buttered 9 inch ring mold.
  • Chill until set.
  • Whip cream and add soften cream cheese.
  • Stir in marshmellows and sherry.
  • Let stand in refrigerator 2 to 3 hours.
  • Unmold salad on a plate.
  • Fill the center of the salad with the Cream Cheese dressing.

2 cans (15 ounces each) diced or sliced mangoes, drained
1 package (8 ounces) cream cheese, softened and cubed
2 cups boiling water
2 packages (3 ounces each) lemon gelatin
1 package (3 ounces) apricot gelatin
2 cups cold water
Optional: Fresh mint leaves and cranberries

Steps:

  • Place mangoes and cream cheese in a food processor; process until blended., In a large bowl, add boiling water to gelatins; stir 2 minutes to completely dissolve. Stir in cold water, then mango mixture. Pour into a 8-cup ring mold coated with cooking spray or a 2-qt. serving bowl. Refrigerate until firm, about 4 hours. If using a ring mold, unmold onto a serving plate. If desired, serve with mint and cranberries.

1 (8 ounce) package cream cheese
1 (20 ounce) can crushed pineapple (Drain; set juice aside)
1 (8 ounce) can mandarin oranges (Drain; set juice aside)
1 (28 ounce) can dark pitted cherries (Drain; set juice aside)
12 ounces Coke
1 cup chopped pecans

Steps:

  • Use Juices from fruit instead of water to make jello-- once it's hot, add Coke.
  • Put in Mixing bowl and add cream cheese, fruit, and nuts.
  • Pour into mold and allow it to set.

VELMA'S STRAWBERRY CREAM CHEESE SALAD MOLD



Velma's Strawberry Cream Cheese Salad Mold image

This is a variation of other strawberry cream cheese salad recipes, as it uses fewer ingredients, does not call for sour cream, and uses the small size Jello package. This is a wonderful brunch dish, especially when served with something like Recipe #319338. It's often used for showers, too. This recipe was given to me by a friend's mother many years ago. (Cooking time is chilling time.)

1 (3 ounce) package strawberry Jell-O gelatin dessert
1 (8 ounce) package cream cheese, softened to room temp
1/2 cup heavy cream
1 cup celery, diced fine
2 cups crushed pineapple, well drained
3/4 cup nutmeats

Steps:

  • Prepare jello according to package instructions. Have jello cold, but not set.
  • Blend cream cheese and cream till smooth. Add to jello. (Don't worry about any lumps of cream cheese that may be in the mixture. They are quite pretty - and tasty - in the final product!).
  • Add diced celery, drained pineapple, and nuts. Stir till well mixed.
  • Pour into mold and refrigerate until firm.
  • Note: if you're having a brunch or shower, consider serving this along side Recipe #319338 (Chicken Mold) - they are wonderful together!

1 medium cucumber
1 package (3 ounces) lime gelatin
1 teaspoon salt
1/2 cup boiling water
1 cup mayonnaise
1 cup 4% cottage cheese
1 small onion, grated
Optional: Sliced cucumbers and fresh parsley

Steps:

  • Peel and halve cucumber; remove the seeds. Shred and pat dry; set aside. In a bowl, combine gelatin and salt with boiling water; stir until dissolved. Add mayonnaise and cottage cheese; mix well. Stir in the onion and shredded cucumber. Pour into an oiled 5-cup mold. Refrigerate until firm. Unmold onto a serving platter. Garnish with cucumbers and parsley if desired.
