SMOKY MEATY CHILI

Smoky Meaty Chili image

Provided by Giada De Laurentiis

Categories     main-dish

Time 1h35m

Yield 6 servings

Number Of Ingredients 18

3 tablespoons vegetable or grapeseed oil
2 pounds pork shoulder, trimmed and cut into 1/2-inch dice
1 pound beef chuck, cut into 1/2-inch dice
2 teaspoons kosher salt
4 cloves garlic, chopped or smashed
1 onion, diced
1 red pepper, diced
3 tablespoons chile powder
1 tablespoon cumin
1 teaspoon chipotle flakes or powder
1/2 teaspoon coriander
Two 15-ounce cans diced fire-roasted tomatoes
Two 15-ounce cans kidney beans, drained and rinsed
3 tablespoons bourbon
3 tablespoons brewed espresso
1 tablespoon agave
1/2 cup shredded white Cheddar, optional
1/3 cup sour cream, optional

Steps:

  • Heat a large Dutch oven over medium-high heat. Add 2 tablespoons of the oil to the hot pan. Season the pork and beef with 1/2 teaspoon of the salt. Working in 2 batches, brown the meat on all sides; this will take about 7 minutes per batch. Remove the browned meat to a plate and continue with the next batch.
  • When all the meat is browned and removed, add the remaining tablespoon of oil to the pan along with the garlic, onion and pepper. Cook, stirring often, for about 3 minutes. Season the vegetables with the chile powder, cumin, chipotle, coriander and 1 teaspoon of salt. Continue to cook the vegetables until the spices are fragrant and the vegetables are soft, an additional 2 minutes. Stir in the diced tomatoes and kidney beans along with 3 cups of water. Add the seared meat and the remaining 1/2 teaspoon salt. Reduce the heat to medium low, cover and simmer until the meat is tender and the chili has thickened slightly, about 1 hour. Stir in the bourbon, espresso and agave and turn off the heat.
  • Serve garnished with shredded Cheddar cheese and a dollop of sour cream if desired.

TURKEY AND HOMINY CHILI WITH SMOKY CHIPOTLE

Turkey and Hominy Chili With Smoky Chipotle image

Making an authentic pozole - the fragrant Mexican hominy stew - has been on my list of things to do for years, but it can be very labor intensive. One recipe by Diana Kennedy, the author of Mexican cookbooks, calls for trimming hominy and boiling a pig's head. Just reading about it causes my enthusiasm to wane. This stew is a compromise; a sort of a pozole-chili hybrid, loaded with ground turkey, bell peppers, hominy and pinto beans. Chile powder adds heat, jalapeño brightness and canned chipotle chile in adobo smokiness and depth. A bottle of beer provides a pleasant bitterness that complements the spice. This recipe makes a very large batch perfect for entertaining or for stocking the freezer, but you can easily half it to feed a family of four.

Time 1h30m

Yield 8 to 10 servings

Number Of Ingredients 21

4 tablespoons olive oil
2 1/2 pounds ground turkey
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
6 garlic cloves, chopped
2 tablespoons chili powder
2 large Spanish onions, chopped
1 red pepper, chopped
1 green pepper, chopped
1 to 2 jalapeño peppers, to taste, seeded and chopped
1 28-ounce can tomato purée
2 15-ounce cans white hominy, drained
2 15-ounce cans pinto beans, drained
1 12-ounce bottle beer
2 to 3 chipotles in adobo sauce, to taste, minced
1 teaspoon dried oregano
2 bay leaves
Sour cream, for serving
5 scallions, white and light green parts, sliced, for serving
1 bunch chopped cilantro, for serving
Lime wedges, for serving

Steps:

  • In a large pot over medium-high heat, warm 1 tablespoon oil. Brown half the ground turkey with 3/4 teaspoon salt and 1/4 teaspoon pepper, stirring occasionally until golden, 6 to 8 minutes. Stir in half the garlic and half the chili powder and sauté for another 30 seconds. Using a slotted spoon, transfer turkey to a bowl. Brown remaining turkey in same manner, transferring it to bowl with rest of turkey.
  • Add remaining 2 tablespoons oil to pot and sauté onions, bell peppers and jalapeño peppers with remaining 1/2 teaspoon salt. Cook, stirring, until onion is translucent, about 10 minutes.
  • Return ground turkey and any liquid in bowl to pot and add tomato purée, hominy, beans, beer, chipotles, oregano and bay leaves with 3 cups water. Simmer chili, partly covered, until it is thick enough for your taste, about 1 hour. Serve hot, garnished with sour cream, scallions, cilantro and lime wedges.

SMOKEY CHIPOTLE WHITE BEAN CHILE

Smokey Chipotle White Bean Chile image

This is a FANTASTIC economical recipe that I have come up with after reading and trying many different recipes. I think the two best features of my recipe are adding the chipotle in adobo sauce and using white beans. Serving this with crumbled blue cheese and oyster crackers brings this dish to a whole different level...

Categories     One Dish Meal

Time 3h50m

Yield 1 pot of chile, 8 serving(s)

Number Of Ingredients 17

3 tablespoons chili powder
1 tablespoon ground cumin
1 tablespoon dried oregano
1/4 teaspoon nutmeg, grated
1 teaspoon brown sugar
2 teaspoons kosher salt
1 teaspoon black pepper
2 medium onions, diced
5 garlic cloves, diced
1 jalapeno, diced
1 1/2 lbs ground beef
4 chipotle peppers, with some of the adobo sauce, chopped (from a can)
1 (28 ounce) can whole tomatoes with juice, hand crushed
1 six oz.can tomato paste
1 (15 1/2 ounce) can white great northern beans, drained and rinsed well
2 cups cheddar cheese, grated
cracker

Steps:

  • Mix the first seven ingredients together to make the spice mix.
  • Chop the onion, garlic and jalapeno.
  • Brown the ground beef, onion, garlic, jalapeno and spice mix in a large, heavy bottomed sauce pot.
  • Add the chipotle peppers, crushed tomatoes and their juice and tomato paste.
  • Chipotle note: I find chipoles in adobo sauce smokey and spicy but not hot. Not everyone agrees with me so adjust to your taste. On scale of 1 to ten, with ten being the hottest, this made as stated is a 6.
  • Simmer for two hours, stirring occasionally.
  • Taste for seasoning and adjust to your taste.
  • Gently stir in the beans.
  • Simmer for one more hour, stirring once or twice.
  • Serve with grated cheese and crackers.
  • Enjoy!
