Chicken livers with Marsala image

I owe my love of chicken livers cooked in this style to chef Guy Grossi, who would serve this as a delicious and surprising starter on crisp crostini at Florentino. This dish is worth a splash of good-quality Marsala - but not the very sweet kind. Otherwise you can use a semi-sweet sherry such as an Oloroso.

350g chicken livers
1 small brown onion
2 tbsp olive oil
25g butter
a few sage leaves
salt and pepper
60ml Marsala or sherry

Steps:

  • Clean the chicken livers by removing any obvious veins and bits of fat. Cut out any green spots, which are the bitter-tasting bile. Slice into small pieces. Slice the onion very thinly. In a heavy-based frying pan, gently cook the onion in a little olive oil until fully softened and pale golden. Increase the heat and add the butter. Once it starts to foam add the sage, then after a moment the chicken livers. Season with salt and pepper and cook for 3-4 minutes, stirring all the while. The livers should be firm on the outside and still pink in the middle. Now add the Marsala and a small knob of butter and allow the mixture to bubble until you have a nice thick sauce. 1 medium onion, sliced
5 tablespoons olive oil, separated (2 + 3)
1 (4 ounce) can sliced mushrooms
1/2 cup flour
1 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon paprika
1/8 teaspoon garlic powder
1 lb chicken liver
3/4 cup dry red wine

Steps:

  • Heat 2 tbsp of oil in non-stick skillet and saute onions and mushrooms until tender.
  • Put aside.
  • In a small bowl, combine flour, salt, pepper, paprika and garlic powder.
  • Coat the livers in the dry mixture.
  • Heat 3 tbsp of oil in non-stick skillet and fry livers until almost done.
  • Reduce heat, adding onions, mushrooms and wine.
  • Cover and simmer over low heat for 30 minutes.

Here is a recipe from an old Gourmet article which celebrated the goodness of sage. I would add a couple of tablespoons of tomato paste with the wine. Can use tagliatelle, instead of spaghetti. An elegant dish for liver lovers.

1 red onion, thinly sliced
1 carrot, chopped fine
1 garlic clove, minced
2 tablespoons olive oil
3/4 lb chicken liver, trimmed, rinsed, and chopped fine
2 ounces lean ham, sliced and cut into strips
1/2 cup dry white wine
3/4 lb spaghetti or 3/4 lb spaghettini
2 tablespoons fresh sage leaves, minced
1 tablespoon butter
1 cup parmesan cheese, freshly grated

Steps:

  • In a heavy skillet cook the onion, carrot, and garlic in the oil over moderately low heat, stirring occasionally, until the vegetables are softened.
  • Add the chicken livers and the ham. Cook over moderate heat stirring frequently for 4 minutes. Stir in the wine and boil the mixture until the liquid is reduced by half.
  • In a pot of boiling salted water cook the spaghetti until it is "al dente", add 1/2 cup of the pasta water to the liver sauce, drain the spaghetti, and return it to the pot.
  • Add the sage and salt and pepper to taste to the sauce and boil the sauce for 2-3 minutes to thicken slightly. Stir in the tablespoon of butter.
  • Toss the spaghetti in the pot with the sauce and parmesan cheese.
  • Buon appetito!

400 g penne
500 g chicken livers, trimmed
1 finely chopped onion
3 finely chopped garlic cloves
olive oil (for cooking)
1 (6 ounce) can tomato paste
1 tablespoon butter (for the cooked pasta)
2 (14 1/2 ounce) cans whole canned tomatoes, coarsely chopped
1 red chile, finely chopped
1/2 cup tomato cocktail juice
1 glass red wine
1 teaspoon origanum
1/2 cup chopped fresh parsley
salt and black pepper
grated fresh parmesan cheese

Steps:

  • Heat a little olive oil in a frying pan and quickly fry the livers for about one minute, toss well and fry for a further two minutes Remove and keep warm.
  • Add a little more olive oil and fry the onion until transparent, then add the chili and garlic and fry for another minute before adding tomato paste, chopped tomato and tomato cocktail, red wine, salt and pepper.
  • Simmer for five minutes, stirring frequently, then increase the heat to high and cook until the sauce thickens.
  • Add the chicken livers and heat through.
  • Boil the macaroni pieces according to instructions on the packet, drain and toss in a little butter Pour the livers and sauce over the pasta.
  • Decorate with grated cheese and parsley.

1 lb thin sliced chicken breast
1/2 cup flour
1/2 teaspoon salt
1/4 teaspoon pepper

1/2 cup marsala wine
1 small onion, chopped
1 green pepper, chopped
3 tablespoons olive oil
2 tablespoons butter
2 (4 ounce) cans sliced mushrooms, drained
1 garlic clove, minced
2 (8 ounce) cans tomato sauce

Steps:

  • Combine flour, salt, pepper and oregano. Dredge chicken in seasoned flour and put in refrigerator for 25 minutes.
  • Pour olive oil in skillet on medium high heat and then add butter and stir to melt butter.
  • Saute onions and peppers. Remove from pan.
  • Add chicken to pan and brown (about 5 minutes) Remove chicken.
  • As soon as chicken is removed, add Marsala wine and mushrooms. Add tomato sauce and stir. Cook 2-5 minutes.
  • Return onions and peppers to skillet and add garlic. Stir and cook for 1 minute.
  • Put chicken back in skillet and cover both sides of chicken with sauce.
  • Cover skillet and simmer 5 minutes.

1 tablespoon olive oil
2 tablespoons butter
1 clove garlic, minced
6 skinless, boneless chicken breast halves
1 (16 ounce) package linguini pasta
1 onion, chopped
1 cube chicken bouillon, crumbled
½ cup water
1 ¼ cups heavy cream
¾ cup milk
4 green onions, sliced diagonally into 1/2 inch pieces
1 cup grated Parmesan cheese

Steps:

  • In a large saute pan, heat oil, butter and garlic over medium heat. Add chicken and cook until juices run clear. Remove chicken from pan let cool and slice diagonally into long strips. Reserve oil in pan.
  • Meanwhile, cook pasta according to directions on package. Drain.
  • Reheat oil in pan, add onion and saute, stirring often, until onion is soft but still white. Add bullion cube and water; bring to a boil and simmer uncovered for approximately 10 minutes. Stir in cream, milk, green onions and Parmesan cheese.
  • Place pasta in a bowl, layer chicken slices in a decorative pattern over pasta, pour sauce over top of chicken and around pasta. Garnish with parsley or any herbs you desire. Serve immediately.

3 onions, sliced thin (about 4 cups)
3/4 teaspoon salt
1/4 teaspoon fresh ground black pepper

1 1/4 lbs chicken livers, cut in half & patted dry
1/2 cup madeira wine
2 tablespoons chopped fresh parsley
1 hard-boiled egg, chopped (optional)

Steps:

  • In a frying pan, heat 2 Tablespoons of the oil over moderate heat.
  • Add the onions, 1/2 tsp salt, 1/8 tsp pepper and sugar.
  • Cook, stirring frequently, until the onions are well browned, about 15 minutes.
  • Remove the onions from the pan and put on a serving platter or individual plates and keep warm.
  • In the same frying pan, heat the remaining 1 Tablespoon of oil over moderately high heat.
  • Season the chicken livers with the remaining salt & pepper.
  • Put the livers in the pan, in two batches if necessary, and cook for 2 minutes. Turn and cook until browned, about 2 minutes longer.
  • The livers should still be pink inside.
  • Remove the chicken livers from the pan and put them on top of the onions.
  • Return the pan to the heat and add Madeira.
  • Boil rapidly, scraping the bottom of the pan to dislodge any brown bits, for 1 minute.
  • Pour the sauce over the livers and the onions.
  • Top with egg (if using) and parsley.
  • Variations: Use 1/2 cup of Sherry or 1/2 cup of Port instead of Madeira.
