Red, White, and Blue Potato Bread image

Number Of Ingredients 13

1 ounce dry yeast
1 cup warm water
2 tablespoons light corn syrup
8 ounces bread flour
5 ounces red potatoes
5 ounces blue potatoes
16 ounces milk
4 ounces dry yeast
6 ounces whole wheat flour, plus 4 ounces whole wheat flour, for dusting
1 pound bread flour
1 1/2 tablespoons salt
1 ounce honey
1 egg, beaten for egg wash

Steps:

  • To make the sponge, mix the yeast with the warm water until the yeast is dissolved. Add the light corn syrup to the yeast and water. Mix in the bread flour until there are no lumps in the mixture. Let the mixture rest until a thick surface forms and it is light and spongy.
  • Boil the potatoes as you would to make mashed potatoes, drain, mash them, and place them in a mixing bowl.
  • In a separate bowl, combine the milk and yeast, and mix until the yeast is dissolved.
  • Place the wheat and bread flour in the mixing bowl, add the salt, honey, and milk mixture, and using a dough hook, mix for 2 minutes on low speed until ingredients have combined. Add the sponge to the mixture and mix on medium speed for 8 minutes.
  • Once the dough is mixed, let it rest for 15 minutes. On a lightly floured surface, cut the dough into 2 equal parts, roll into balls, and let the dough rest for 15 minutes.
  • Preheat oven to 375 degrees F.
  • Take the dough balls, and shape them into 16-inch long bread loaves. Brush on a light coating of egg wash on top of each loaf, place the loaves on a baking sheet, and bake them for 35 to 45 minutes.

Number Of Ingredients 8

1/4 cup plus 1 teaspoon kosher salt
3 pounds russet potatoes, scrubbed, washed and thinly cut on a mandoline (about 1/10th of an inch)
8 cups peanut oil
3 tablespoons buttermilk powder
2 tablespoons onion powder
1 tablespoon garlic powder
1/2 teaspoon sugar
3 tablespoons minced fresh dill

Steps:

  • Whisk together 8 cups water with 1/4 cup of the salt. Place the sliced potatoes into the water-and-salt solution and let soak for at least 20 minutes. After they have soaked, dry thoroughly on a paper towels or dish towels.
  • Heat the oil a large Dutch oven to 350 degrees F.
  • In a spice grinder, combine the buttermilk powder, onion powder, garlic powder, sugar, dill and the remaining 1 teaspoon salt. Grind into a homogeneous powder.
  • In handful-size batches, fry the potatoes until they just turn golden brown, 2 to 3 minutes. Toss immediately in a large bowl with some of the spice mixture. Then place them on a baking sheet and sprinkle them again with some of the spice mixture.
  • Hold them in semi-airtight container for a few days, if you can stand it that long.

1 baking potato, peeled and cut into large chunks, or 1 cup leftover mashed potatoes 1 cup milk
1 1/2 tablespoons lard
1 1/2 tablespoons unsalted butter
1 1/2 teaspoons salt
1 tablespoon granulated sugar
1 tablespoon dry yeast
1/3 cup warm water
5 cups bread flour

Steps:

  • Boil potato until soft. Drain and reserve cooking liquid. Rice the potato through a food mill.
  • Scald milk and combine with 1/2 cup reserved cooking liquid. Combine liquids and potato with lard, butter, salt, and sugar in a large bowl. Set aside to cool to room temperature.
  • Meanwhile combine yeast and warm water, and set aside until foamy. When potato mixture has cooled, add yeast mixture. Add flour and knead with a dough hook, or an electric mixer, until smooth and glossy, about 7 minutes.
  • Transfer to a buttered bowl, cover with plastic wrap, and set aside in warm place to rise about 1/2 hour. Punch dough down and briefly knead. Butter a 9 x 5 x 3-inch loaf pan. Place dough in pan, cover with plastic, and let rise until doubled, about 45 minutes.
  • Preheat oven to 350 degrees. Bake 30 minutes, until bread sounds hollow when tapped.

  • Cover; cook on Low heat setting 5 to 6 hours. Sprinkle french fried onions over potatoes before serving.

1/2 cup dried onion, chopped
1/2 cup butter
2 cups sour cream
2 cups warm water
5 teaspoons dry yeast
1 tablespoon salt
1 teaspoon sugar
2 tablespoons basil leaves
1 cup cornmeal
8 -8 1/2 cups bread flour, divided
1 large egg
1 tablespoon water

Steps:

  • Saute onion in butter until golden.
  • Combine sour cream, water, yeast, salt, sugar, basil, cornmeal, and 4 cups of the flour in a mixing bowl.
  • Mix with a dough hook on low speed for 3 minutes (hand kneading will take 7 to 10 minutes).
  • Gradually add 4 cups of flour.
  • Mix 5 to 7 minutes longer, adding more flour as needed until dough cleans side of bowl.
  • Cover mixing bowl and sit in warm place until doubled (about 1 hour to 1 1/2 hours).
  • Punch dough down and let rise 10 minutes.
  • Form into 2 round loaves and place on cornmeal-dusted 12X18" sheet pan.
  • Allow to rise until doubled, about 20 to 30 minutes.
  • Beat egg and water.
  • Gently brush loaves with egg wash.
  • With a very sharp knife, cut 4 vertical and 4 horizontal slashes on top of each loaf.
  • Bake in preheated 375 degree oven for 50 minutes or until well browned.

3 tablespoons melted butter or 3 tablespoons margarine
3 tablespoons grated parmesan cheese
2 medium potatoes

Steps:

  • Preheat oven to 400 degrees.
  • Pour melted butter or margarine in 8x11 baking dish.
  • Sprinkle Parmesan cheese over melted butter.
  • Cut potatoes in half lengthwise and place cut side down over butter/cheese mixture.
  • Bake for 30-35 mins or till tender.

12 sprigs thyme, strip the leaves from the stems
1 large onion, sliced somewhat thickly (a tad more than 1/4 inch thick)
1 lb waxy red potatoes, washed and very thinly sliced
2 tablespoons olive oil
1/2 cup grated gruyere cheese
1/2 cup crumbled feta cheese
1 cup grated mozzarella cheese
sea salt and black pepper

Steps:

  • Preheat oven to 400*F.
  • Melt the butter in a 9-10 inch ovenproof frying pan (cast iron is great) over medium heat. Add the thyme and onion and cook for 5 minutes. Spread out evenly in the pan.
  • Place the potato, oil, cheeses, salt and pepper in a bowl and toss to combine.
  • Top the onion with the potato mixture, spreading out evenly over the onions, and bake for 45 minutes or until golden brown and cooked through. Turn upside down to serve.
  • Note: For an extra cheesy tart, double the amount of mozzarella.
