Steps:
- Preheat oven to 350-degrees F.
- Butter a 9-inch round baking dish.
- Arrange cheese slices on the bottom of the dish.
- Cook bacon in a large skillet over low heat until done but still flexible. Drain well on paper towels.
- Chop 4 slices of the bacon and then half the remaining 3 slices crosswise, curling them into a spiral. Set aside.
- Whisk eggs and milk together. Season with salt and pepper and then stir in the chopped bacon.
- Pour milk/egg/bacon mixture over the cheese.
- Bake for 25-30 minutes.
- Place parsley sprigs in center of omlet and arrange bacon curls around the edge.
- Bake 5 more minutes and then cool 5 minutes before slicing into wedges to serve.
BACON, MUSHROOM, AND CHEESE OMELET

- Crack the eggs into a bowl, add the milk, and beat them well. Melt the butter in a 7-inch nonstick skillet over medium-high heat. Add the eggs and scramble slightly. Allow the eggs to coat the pan and cook evenly. Crumble the bacon into the eggs, add the mushrooms and cheese, and cook for 1 minute. Carefully slide 1 end of the omelet onto a plate while folding the other end over on top, like a taco. Garnish with scallions and serve immediately.

- Combine eggs and 1/3 cup of the cheese.
- Melt butter in a skillet.
- Add potato, bell pepper, onion, bacon and garlic then saute 5 minutes.
- Stir in egg mixture and spread evenly in bottom of skillet.
- Cook over medium heat for 5 minutes or until almost set.
- Place skillet in preheated 450 degree oven for 5 minutes.
- Sprinkle with remaining cheese then bake until cheese melts.
- Cut into wedges and serve with a dollop of sour cream.

As w/many of the others, I have no clue about the orig source of this recipe. (Times have been estimated. Prep time includes time to prepare ingredients & crisp the bacon. - Over med-low heat, melt butter in a 10-in ovenproof skillet or omelet pan, tilting pan to coat bottom & sides. Saute onion till tender (about 3 min).
- While onion is cooking, combine eggs, milk & pepper.
- Increase heat to med-high. Pour egg mixture into skillet & cook till edges begin to set.
- Using a fork, gently pull edges of the eggs away from the sides of the pan so the uncooked egg mixture flows under the cooked edges. Continue till most of the egg mixture is set & the surface of the omelet is just slightly wet.
- Sprinkle cheese, bacon & nuts over the top of the omelet. Fold in half, cut into 2 pieces & serve immediately.
- NOTE: Brie cheese & fresh fruit are often paired & serving this omelet w/your choice of fresh fruit was suggested.

- First place the 10 pieces of bacon on the griddle pan grill. Cook the bacon, then remove it from the grill and set it aside.
- Next thing you need to do is crumble up like 4 pieces of bacon into little pieces, then cut up the red onions, and green peppers.
- Then beat the 2 large eggs into a small bowl, adding the milk, cheddar cheese, black pepper, red onions, green peppers, and the bacon crumble. Stir all the ingredients up in the bowl.
