- 1. Slice sausage into 3-inch slices and then slice each 3-inch piece in half.
- 2. Coat (thin coat) bottom of a large skillet with olive oil and heat oil over medium heat. Add sausage and fry until nicely browned.
- 3. Once the sausage has browned, place cut up cabbage on top of the sausage and add seasonings; cover with a lid and continue to cook. You should not have to add water, the steam from the cabbage as it cooks should be enough moisture. Remove lid and stir occassionally. Cook until cabbage is tender but not mushy. NOTE: If you like it tangy, omit the cabbage and add a can or 2 of well drained sauerkraut.

- In a Dutch oven or soup kettle, cook sausage and onion over medium heat until sausage is lightly browned and onion is tender; drain. Add the cabbage and water. Cover and cook on low for 10 minutes. SMOKED SAUSAGE AND SAUERKRAUT CASSEROLE
A hearty and easy supper entree. I need to say up front that this one is a spin-off of Mareesme's: Recipe #199769 -- but I didn't have the proper ingredients for that fine recipe so I changed to smoked sausage and I eliminated the stovetop techniques, so it's all just baking/broiling. Hey, this was GOOD and I credit Mareesme for turning me on to the basic ingredients and some shrewd seasoning with the little touch of brown sugar. - Preheat oven to 350-degrees F.
- Cut the smoked sausage into 6 pieces.
- In a 9" x 9" ungreased baking dish, layer in half the sauerkraut and then lay out the sausage on top of it. Cover with the remaining sauerkraut.
- Spread the diced onion over the sauerkraut, lay out the bacon slices across the casserole, and then sprinkle the brown sugar over it. Pour the water over the casserole which will make the sugar dissolve a bit. Cover with aluminum foil and bake on the middle rack for 90 minutes.
- At the end of the 90 minutes, remove the aluminum foil and, on the same rack, BROIL for 6 minutes. Serve hot along with mashed potatoes.
- Note: You won't have to add salt -- there's plenty of salt in the sauerkraut.

SMOKED SAUSAGE AND CABBAGE
I concocted this recipe while trying to decide how to cook cabbage besides the same ole way. My husband, KT, loved it that I didn't even have to ask him to rate it. He went back for thirds! I used 1/2 cabbage and wished there was more, so next time I'll use whole head. Great flavor w/the sausage grease soaked up in the cabbage. Arteries watch out, here comes some real southern cooking!

- Meanwhile, cover w/water and boil cabbage leaves til soft, 4-5 minutes.
- Cut up and add cabbage to sausage/onion mix and saute to let cabbage soak up everything.

- Place sausage in large skillet with water. Cover bring to a boil over medium heat. Reduce heat to low, simmer, covered 10 minutes. Uncover and simmer until water evaporates and sausage browns lightly.

My son was about a year and a half old, my dad was eating leftovers and he barely had enough to satisfy his hunger, and my son indicated that he wanted to eat some of what his granddaddy was eating. Being a good grandfather, he relented and gave into my son's wishes. Being older and FAR more treacherous than my toddler, Dad offered up a bite of the sauerkraut to my son, fully expecting my son to dislike the taste, and thereby saving more of the leftovers to satisfy my father's hunger. - Place the sauerkraut, caraway seeds, brown sugar, and apple into a large saucepan over medium-low heat, and bring the mixture to a simmer. Reduce heat to low, and cook for 2 hours, stirring occasionally.
- Preheat oven to 325 degrees F (165 degrees C). Grease a 9x13-inch baking dish.
- Place the bacon and onion into a skillet over medium heat, and cook until the bacon is almost crisp and the onion is beginning to brown, about 10 minutes. Stir the bacon mixture into the sauerkraut.
