Deliciously savory smoked salmon pinwheels rolled up with a flavorful chive and dill cream cheese and tons of fresh spinach. This easy, healthy appetizer comes together in just 10 minutes for the ultimate party food or snack!

2 burrito style spinach wraps (or can use any burrito size wrap)
4-6 ounces cream cheese
1 tablespoon chopped fresh dill
½ tablespoon chives
1/8 teaspoon garlic powder
2-3 cups spinach
4-6 ounces smoked salmon

Steps:

  • In a small bowl combine cream cheese, dill, chives, and garlic powder. Mix until well-incorporated and creamy.
  • Lay out both wraps and evenly spread the cream cheese onto each one, leaving about a half inch of room around the edges. Spread the cream cheese out to the edge on one side, as you'll use this side to "seal" the pinwheel.
  • Evenly distribute the spinach between your two tortillas, followed by the smoked salmon.
  • Tightly roll up each wrap, tucking in the ends as you go. It's important to roll these as tightly as possible so that the pinwheels stay together when cut.
  • With a small serrated knife cut the edges off of each wrap, and then cut each one into ½ inch rounds. You should get about 14-16 pinwheels, 7-8 per wrap.
  • Feel free to assemble as-is or stick a toothpick into each pinwheel to serve. Serves 4.

1 (5 ounce) center cut salmon fillet, skin removed, finely chopped
4 teaspoons sesame oil
4 teaspoons soy sauce
1/2 cup finely chopped fresh mint leaves
4 toasted nori sheets, cut in 1/2 lengthwise*
2 cups cooked Sushi Rice, recipe follows
8 thin asparagus spears, trimmed to 5-inches long, lightly steamed
2 cups short-grain sushi rice (recommended: Kokuho Rose)*
2 1/2 cups water
1/4 cup seasoned rice vinegar

Steps:

  • *Can be found at specialty Asian markets
  • Serving suggestion: wasabi, sweet picked ginger, soy sauce
  • In a medium bowl, mix together the chopped salmon, sesame oil, soy sauce, and mint leaves. Place a sheet of nori, shiny side down, on a work surface. Place 1/4 cup of the rice on the left side of the nori sheet. Using wet fingers, form the rice into a 3-inch square, leaving a 1/2-inch border. Place about 2 tablespoons of the salmon mixture, diagonally, in a 1/2-inch wide strip, on the rice, with the top of the salmon mixture facing the top left corner. Place a spear of asparagus on top of the salmon. Starting with the bottom left corner, roll the nori over the filling. Continue to roll, ice cream cone-fashion, working towards the right corner of the nori. Seal the edge of the hand roll with water or a few grains of the cooked rice. Repeat with the remaining ingredients.
  • Arrange on a serving platter and serve with wasabi, sweet pickled ginger and soy sauce.
  • Yield: 8 hand rolls
  • *Can be found at specialty Asian markets
  • Place the rice and water in a medium saucepan over high heat. Bring the mixture to a boil. Cover the pan and reduce the heat to low. Simmer for 25 minutes. Sprinkle the vinegar over the rice and mix with a fork. Transfer the cooked rice to a parchment paper-lined baking sheet. Allow the rice to cool completely before using.

Smoked Salmon Rolls with Arugula, Mascarpone, Chives, and Capers image

5 ounces mascarpone (about 2/3 cup)
2 tablespoons small brined capers, rinsed
2 tablespoons minced fresh chives
1 teaspoon freshly squeezed lemon juice
Kosher salt and freshly ground black pepper
3/4 pound smoked salmon, cut into 24 thin slices, 2 to 3 inches on the short side (presliced salmon is fine)
48 small tender arugula leaves

Steps:

  • Mix the mascarpone with 1 tablespoon of the capers, 1 tablespoon of the chives, and the lemon juice. Season with salt and pepper.
  • Lay the salmon slices out on a cutting board so that they are all arranged with a short side facing you, with plenty of space above and below each slice. (If necessary, fill and roll the slices in batches).
  • Put a spoonful of the mascarpone mixture on the narrow end of 1 slice. Lay 2 arugula leaves, fanned slightly apart, across the mascarpone, so that the tips of the leaves will project several inches from one end of the roll, and roll up the salmon. Stand the roll upright, the arugula leaves pointing upward, on a platter large enough to hold all 24 rolls. Repeat the process with the remaining slices. Cover and refrigerate until serving.
  • Remove from the refrigerator, sprinkle with the remaining 1 tablespoon each capers and chives, and serve.

300g cream cheese
1 tbsp lemon juice
2 tbsp chopped dill
generous pinch of black pepper
4 large flour tortillas
350g smoked salmon
serve with extra dill and rocket leaves

Steps:

  • Mix the cream cheese with the lemon juice, chopped dill and plenty of black pepper. Spread over 4 large flour tortillas and cover with the smoked salmon. Roll up like a Swiss roll, trim off the ends and discard. Wrap tightly in cling film, twisting the ends firmly to enclose. Place in the fridge until you are ready to use. To serve, take a sharp knife and slice on the diagonal. Serve with extra dill and rocket leaves.

8 ounces cream cheese, softened
1 stalk celery, chopped
¼ cup chopped walnuts
¼ cup chopped green onion
2 teaspoons lemon juice, divided

24 thin slices cucumber
24 crackers (such as Wheatsworth®)

Steps:

  • Cut twenty-four 3/4x2-inch pieces of smoked salmon.
  • Mix cream cheese, celery, walnuts, and green onion together in a bowl. Add 1 teaspoon lemon juice, coriander, and cayenne; mix well.

1 1 1/2 pound center-cut salmon fillet
6 large zucchini (each about 7 inches long and 1 1/2 inches thick), trimmed
1 1/2 cups mayonnaise
3/4 cup plus 3 tablespoons chopped fresh dill
7 teaspoons white wine vinegar
6 ounces smoked salmon (not lox), coarsely chopped
3 tablespoons chopped dill pickle

Steps:

  • Sprinkle salmon with salt and pepper. Steam until just opaque in center, about 15 minutes. Cool completely.
  • Line baking sheet with paper towels. Slice enough 1/8-inch-thick lengthwise strips from center portion of each zucchini to make 24. Steam in batches until just tender but very pliable, about 3 minutes. Transfer to prepared baking sheet; pat dry.
  • Whisk mayonnaise, 3/4 cup dill and vinegar in small bowl. Season dill sauce to taste with salt and pepper.
  • Flake salmon coarsely into large bowl, discarding skin and bones. Gently mix in smoked salmon, pickle, remaining 3 tablespoons dill and 1/4 cup dill sauce.
  • Place 1 rounded tablespoon salmon mixture at end of each zucchini strip. Roll up strips, enclosing salmon. Place rolls seam side down on platter. (Can be made 1 day ahead. Place rolls on paper towels. Cover rolls and sauce separately; chill.)
  • Serve rolls with remaining dill sauce.

DOUBLE SALMON ROLL

160g pack hot-smoked salmon
2 tsp hot horseradish
juice half lemon
200g tub full-fat soft cheese
half 30g/1oz bag chives , finely snipped
400g sliced smoked salmon
200g bag mixed leaves
half 30g/1oz bag chives , thickly snipped
your favourite dressing
melba toast , to serve

Steps:

  • Flake the hot-smoked salmon into a bowl, discarding the skin. Add the horseradish, lemon juice, soft cheese, finely snipped chives and some seasoning and beat well until combined to a rough mousse texture.
  • Lay 2 sheets of cling film overlapping on your work surface, then lay the sliced smoked salmon out to make a rectangle about 20 x 50cm. Dollop the hot-smoked salmon mix over and gently spread over evenly. Use the edge of the cling film to roll the long side of the rectangle into itself, then roll up like a Swiss roll. Wrap in the film, twisting the ends like a cracker to secure and hold the shape. Freeze for up to a month.
  • Transfer the roll from the freezer to the fridge the day before you want to serve it. While still semi-frozen, cut into thick slices, lay on a tray, then leave to defrost completely in the fridge. Serve with leaves mixed with chives and a little dressing, and some melba toast.
