SMOKED SAUSAGE, APPLES AND SAUERKRAUT
This dish has German roots, but is widely prepared in Switzerland. I'm not sure exactly where I found this recipe,but it's been DH and grandson's favorite deer hunting camp meal for many years. It cooks in one skillet so clean up is minimal.

Steps:
- In a large skillet, brown smoked sausage in olive oil, add onions and cook for 3 minutes.
- Arrange all ingredients around sausage in skillet and cook over medium heat 30-40 minutes or until juice has cooked down.
- If kraut still has a sour taste, add more brown sugar to suit your taste.

Steps:
- Rinse sauerkraut and squeeze dry.
- Cut sausage into 2-inch pieces.
- Put 1/2 the sauerkraut in the slow cooker.
- Add the sausage pieces on top.
- Continue to layer remaining ingredients in slow cooker in the order listed.
- Top with remaining sauerkraut.
- Do not stir the layers.
- Cover.
- Cook on high 4 hours, or low 6-7 hours.
- Stir before serving.
SMOKED PORK/HAM WITH SAUERKRAUT, POTATOES & APPLE JUICE
Oven or crock pot recipe. Layer all the ingredients and let the heat do the work. Needs no other seasoning except pepper to taste at the table. The apple juice offsets the saltiness of the sauerkraut and cooks into the potatoes.

- In a large roaster or crockpot, layer pork chops or ham, sliced potatoes, sauerkraut, and apple juice.
- Preheat oven 375° or crockpot low heat.
- Cover and cook in oven for 1 hour.
- Cover and cook crockpot for six hours.
- Note: If you have smoked pork chops, no other seasoning is needed except the bay leaf and pepper. If the pork is not smoked you can add a few drops of liquid smoke and the thyme and also crushed or minced garlic. Potatoes tend to "grab" the garlic flavor so add towards the end of the cooking period.

SMOKED PORK CHOP & SAUERKRAUT CASSEROLE
I searched 8 pages of Sauerkraut recipes and not one had smoked pork chops so I made up this recipe and - well, not bragging, but it tickled our taste buds! This is not a recipe for a true sauerkraut lovers as it is very mild re the sauerkraut. Hey you non "Kraut" lovers you may love it! Instead of tomato juice you may substitute wine, chicken stock or apple juice, This recipe would cook nicely in a crock pot too I think. I would layer it the same and cook on low for 6 hours. Meal in one dish

Steps:
- Preheat oven to 325°F.
- In a 1 quart size casserole put the kraut on the bottom, then the potato slices, next the carrots, tomato & onions. Pour in the tomato juice.
- Place the chop(s) on top.
- Spread the mustard on the chop(s) and cover with the applesauce.
- Cover tightly and bake in 325°F oven for 2 1/2 hours.

SMOKED PORK WITH SAUERKRAUT
Steps:
- Add one tablespoon butter to a large cooking pot. Peel and finely chop the onion. Add onions and lightly braise.
- Drain some of the sauerkraut juice. Add the sauerkraut to the pot. Mix in the white wine and juniper berries. Allow to simmer for 30 minutes.
- Add the ribs to the sauerkraut and continue cooking for another 15 minutes.
- Wash and peel potatoes. Cut into large pieces. Add to a large cooking pot filled with water and a dash of salt, making sure there is enough to completely cover the potatoes. Bring to a boil and allow to cook until potatoes are soft. Mash the potatoes with a potato masher. Mix in milk and one tablespoon butter.
- Serve each rib with sauerkraut and mashed potatoes.
SMOKED PORK CHOPS WITH POTATOES & SAUERKRAUT
I love this no fuss dinner. It is perfect for those cold days of Autumn. I like to add a layer of apples on top of the chops before covering them with the second layer of potatoes & Kraut.

Steps:
- Mix the potatoes and the kraut.
- Place half the sauerkraut/potato mixture in a Pyrex pie plate.
- Spread 1 1/2 tbsp of mustard over the sauerkraut.
- Place the chops on the sauerkraut.
- Spread remaining mustard on the chops.
- Cover with remaining sauerkraut/potato mixture.
- Season with salt & pepper.
- Put the pat of butter on top.
- Seal with foil and bake in a 350°F oven for 45 minutes to an hour.
- I like uncover the chops for the last 15 minutes or so to lightly brown the potato topping.

EASY SAUSAGE BAKE WITH SAUERKRAUT AND APPLES

- Heat a large skillet over medium-high with a glug of olive oil. Pierce sausages several times and then brown on all sides in skillet, about 10 minutes. Remove and set aside.
