A weekly meal around here. Use your favorite brand of salsa or picante sauce in this recipe. It can be as mild or spicy as you like it. A nice change from the normal meatloaf.

Steps:
- Preheat oven to 350.
- Soak the crushed tortilla chips in milk until soft.
- Combine chips with beef, 1 cup of salsa, and eggs. Mix thoroughly; I usually dig in with my hands at this point because it seems to work the best when mixing.
- Pack into a greased loaf pan, or form into desired shape in shallow baking dish.
- Spread remaining salsa over top of the loaf.
- Bake for 1 hour.
MEATLOAF TEXAS STYLE!
A flavorful meatloaf that combines Rotel and cheese all rolled into a zesty combination! (You may divide this recipe in half for smaller serving size.) Baking time will be less also, but we feed our family of four, then have meatloaf sandwiches for lunch the next day.

Steps:
- Preheat oven to 350 degrees.
- Combine meat with all ingredients except cheese.
- On a sheet of wax paper, flatten the meat mixture to 1/4 inch thick.
- Shape into a flat rectangle.
- Place cheese slices on top of meat, leaving about 1/2inch space on outside edges.
- Lift up one end of wax paper and begin rolling the meat mixture like a jellyroll onto cheese.
- When all cheese is rolled into meat mixture, pinch sides to keep cheese from melting out.
- Spray a loaf pan with cooking spray.
- Use wax paper to help lift meat loaf into pan.
- Bake for 1 hour 15 minutes. Let rest for 20 minutes after removing from oven.

BASIC TEXAS MEAT LOAF

- Preheat oven to 425 degrees
- In a bowl, thoroughly combine the ground beef and pork. In a separate bowl, beat the eggs. Stir in the milk and oats. Pour into the meats. Mix thoroughly.
- Add Worcestershire sauce, tomatoes, celery, onion, green pepper, salt, pepper, herbs and garlic. Mix well.
- Form into oval loaf in a roasting pan. Sprinkle with salt and pepper to taste and lay the bacon lengthwise on top. Bake 50 minutes.

This meatloaf is really tasty. Use the leanest beef, at least 93/7. Dried parsley can be used but only use 2 tsp if you are going with dried over fresh..

Steps:
- Preheat oven to 350*.
- In a large bowl combine 3/4 of the chopped onions and bell peppers (reserving the rest) with the parsley, ground chuck, bread crumbs, and eggs.
- Add 1/4 cup tomato sauce, 1/4 cup of the ketchup, 1/2 tsp salt, 1/4 tsp pepper to meat mixture. With clean hands mix well.
- Put into baking dish and form into a loaf. Set aside.
- In medium sauce pan mix the remaining ingredients; tomato sauce, ketchup, onion, bell pepper, 1/2 tsp salt, 1/4 tsp black pepper, celery seed and garlic powder. Bring to a boil on medium heat.
- Cook for 5 minutes, stirring.
- Pour hot sauce over loaf. Bake at 350* for 1 1/2 hours or until done.
- Remove from oven and loosely cover with foil until ready to serve.
TEXAS SMOKED BARBECUE MEATLOAF

In fact, meatloaf is the epitome of classic home-cooking for us. Because we're no stranger to barbecuing meatloaf, we started to think about incorporating regional barbecue ingredients into different loaves.

- Combine salt, cayenne pepper, garlic powder, cumin, Mexican oregano, and thyme in a spice grinder until powdered. Set rub aside.
- Combine beef, almond flour, bell pepper, onion, jalapeno, egg, and garlic in a bowl. Mix lightly with hands until loosely combined. Gently fold in spice rub mixture until distributed throughout.
- Punch holes in the bottom of the aluminum foil pan and coat with grapeseed oil. Form the meat mixture into a loaf and place in the prepared pan. Place in the refrigerator to chill while preparing the smoker.
- Preheat the smoker to 250 degrees F (120 degrees C). Place a water-filled pan under the grate where the meatloaf will be placed. Fill firebox with charcoal and 1 chunk pecan wood.
- Place meatloaf in the hot smoker.
- Combine apple juice, vinegar, bourbon, water, Worcestershire sauce, and lemon juice in a clean, all-purpose spray bottle. Spray the outside of the meatloaf well with apple spray every 30 minutes.
- Refill firebox with charcoal and 1 chunk pecan wood every 45 minutes to maintain temperature; ground meat absorbs smoke very easily, so use only 1 chunk of wood at a time. Smoke meatloaf until internal temperature reaches 130 degrees F (55 degrees C), about 2 hours.
- Combine water, ketchup, vinegar, Worcestershire sauce, paprika, mustard, lemon juice, honey, liquid smoke, ancho chile powder, red pepper flakes, and black pepper in a saucepan over medium-high heat. Bring glaze to a boil and reduce to a simmer. Cook until reduced, about 20 minutes.
- Discontinue apple spray; brush glaze over entire top and sides of meatloaf every 30 minutes. Continue smoking until internal temperature reaches 160 degrees F (71 degrees C), 4 to 5 hours more. Remove meatloaf from smoker and let rest 10 minutes before cutting and serving.

- In a large bowl, combine the first nine ingredients. Crumble beef over mixture; mix well. Combine the milk, eggs and Worcestershire sauce; mix into the beef mixture. BEST LITTLE WHOREHOUSE IN TEXAS MEATLOAF
I love eatin' what the ritzy folks do and I don't think there's anybody ritzier'n (that IS a Redneck word) Dolly Parton, the mother of this meatloaf. She's got sequins, she's got big hair, and big..uh...well, she's just big all over. Keeping with her "big" theme, the recipe for this has got a might big list of ingredients, but it's good. So put on the meatloaf, stick Best Little Whorehouse in Texas in the VCR/DVD, and at intermission (when the timer goes off), fix yourself a "hunk" of meatloaf, some mashed potatoes and peas, a glass of sweet tea and a piece of "light bread", and watch the second half.

- Preheat oven to 350 degrees. Line a shallow pan with non-stick tin foil or regular foil greased well.
- In a large bowl, mix together beef, crumbs, egg, onion, salt, pepper, and one can of tomato sauce.
- (HINT: Keep around a box of food service gloves for nasty jobs like this. If you can't find them, steal a handful from the hospital next time you go or stick your hands down in cheap sandwich-sized zipper bags to keep your hands clean. Just toss out or wash with the dishes.).

DAD'S TEXAS STYLE MEATLOAF
Steps:
- Prepare meat with seasonings, Dice onion. In a large bowl hand mix meat, diced onions and seasoning together. Then crumble crackers in to meat mixture. Add eggs, dressing, and BBQ sauce and mix with hands till it is a gummy mixture.
- Pack mixture in a greased casserole dish and bake uncovered for 45 minutes at 350 degrees F. Remove meatloaf and pour ketchup over top of meat and add slices of bacon. Bake for another 10 to 15 minutes or till bacon is done.
- Remove from oven and add slices of cheese and add jalapenos (optional) as desired on top. Bake for about 5 minutes or till cheese is bubbly.

In fact, meatloaf is the epitome of classic home-cooking for us. Because we're no stranger to barbecuing meatloafs (http://realgrubbin.com/beef/smoked-meatloaf-recipe), we started to think about incorporating regional barbecue ingredients into different loafs. For this loaf, we thought of the Texan methodology of barbecue. In the Lone Star State, 'cue means beef, chiles, mops and a hard wood that's gives a neutral smoky flavor. Some may say mesquite, but since we don't want our food tasting like burnt tree sap, we're ignoring that tradition. To keep true to the rest of the method, about the only thing we've done differently is swapped out the brisket for a lean ground beef and added a few aromatics.

- In a spice grinder, combine the brisket rub ingredients and grind together until a powder is formed.
- In a bowl, place the beef, nut flour, shredded onion, shredded bell pepper, jalapeno, grated garlic and egg.
- Mix lightly with your hands until loosely combined.
- Cover the mixture with enough of the brisket rub to completely coat the outside of the mixture ball.
- Gently fold in the spice rub into the mixture until distributed well throughout.
- Spray a grilling grid (or a foil pan with holes punched in the bottom) with a high temperature oil (grapeseed or safflower).
- Form the meat into a loaf and place on the grilling grid. Chill in the fridge while prepping your smoker.
- Get your smoker up to 250-275 degrees F.
- Place a water-filled pan under the grate where your meatloaf will be placed.
- Once up to temp, place the meatloaf on the grilling grid on the grate directly above the water-filled pan.
- Combine the ingredients for the Apple Spray and place in an all-purpose spray bottle.
- Spray the outside of the loaf well with the Apple Spray every 30 minutes.
- Refill the firebox with charcoal and wood every 45 minutes to maintain your temperature, but only use 1 chunk at a time as ground meat absorbs smoke very easily.
- When the internal temperature of the loaf reaches 130 degrees F, combine the Glaze ingredients in a saucepot.
- Bring the Glaze to a boil over medium-high heat and then reduce to simmer. Cook for 20 minutes until reduced.
- Don't use the Apple Spray anymore and brush the Glaze over the entire top and sides of the meatloaf every 30 minutes.
- Continue smoking until the internal temperature of the meatloaf reaches 160 degrees F, about 6-7 hours.
- Remove from the smoker and let rest 10 minutes before cutting and serving.
