KALE-AND-SAUSAGE HAND PIES
Kale and sausage complement each other perfectly in these savory pies. Mix up the dried fruit to suit your taste: Try chopped prunes or dried cranberries in place of raisins.

Steps:
- In a food processor, pulse flour, butter, and salt until mixture resembles coarse meal, with a few pea-size pieces of butter remaining. With machine running, sprinkle with 1/4 cup ice water; pulse just until dough holds together when squeezed (if necessary, add up to 1/4 cup more water, 1 tablespoon at a time); do not overmix. Form dough into a disk, wrap tightly in plastic, and refrigerate 30 minutes (or up to overnight).
- Meanwhile, in a large skillet, heat oil over medium-high. Add sausage and cook, breaking up meat with a wooden spoon, until browned, about 5 minutes. Add onion and cook until translucent, about 6 minutes. Add apple, kale, and raisins and cook until kale is almost tender, about 5 minutes. Remove from heat; season with salt and pepper.
- Preheat oven to 400 degrees. Line 2 baking sheets with parchment paper. On a lightly floured surface, roll out dough to an 1/8-inch thickness. With a large round cookie cutter or small bowl, cut out eight 6- to 7-inch rounds (reroll scraps if necessary). Place 1/2 cup kale mixture in center of each round and fold over filling to form half-moons. With a fork, press edges firmly to seal. Place pies on baking sheets and brush with cream.
- Cut a small vent in each pie and bake until golden brown and crisp, 25 to 30 minutes, rotating sheets halfway through. Let cool slightly on a wire rack. Serve warm or at room temperature.

FALL KALE AND SAUSAGE PASTA BAKE

- Preheat the broiler. Spray a 9-by-13-inch ceramic or metal baking dish with nonstick cooking spray.
- Cook the pasta in a large pot of salted, boiling water until about 2 minutes less than package instructions. Reserve 1 1/2 cups pasta cooking water. Drain and set aside.
- Meanwhile, heat a large Dutch oven or heavy saucepan over medium-high heat. Heat the olive oil in the pan, then add the onion and cook, stirring occasionally, until softened and starting to brown at the edges, 4 to 5 minutes. Add the garlic and red pepper flakes and cook until the garlic is very aromatic, another minute. Add the sausage and cook, crumbling into small chunks with the back of a wooden spoon, until browned all over, 4 to 5 minutes. Add 1 cup pasta water to the pan and scrape up any of the browned bits from the bottom of the pan. Pour in the heavy cream and cook, stirring frequently, until it comes to a simmer. Stir in the kale, then cover the pan and cook, stirring occasionally, until the kale is wilted and tender and the heavy cream has thickened, another 4 to 5 minutes. Sprinkle the nutmeg and about 1 teaspoon each of salt and pepper on the kale (taste here, as your sausage might have different seasonings). Remove from the heat and stir in the ricotta until just combined, followed by 1/4 cup each of the fontina and mozzarella. Add the pasta and stir until it is coated in sauce and the cheese starts to melt, adding pasta water if the mixture seems too thick. Taste and season with a little more salt, pepper and red pepper flakes if desired.
- Transfer the mixture to the prepared baking dish and top it with the remaining 1/4 cup fontina, 1/4 cup mozzarella and the Parmesan. Broil the pasta until the cheese is brown and bubbling, about 5 minutes. Serve immediately.
KALE AND SAUSAGE PIE
This dish is great for breakfast/brunch, lunch or dinner AND travels well so it is great for parties. Vegan, nut-free, and can be made gluten-free.

- Preheat oven to 450. Rub bottom and sides of a sturdy baking dish or cast iron pan with 1 tablespoon olive oil. Press thawed and well-drained hash brown shreds firmly to sides of pan. Hash brown shreds will stick to sides and create a crust if you are pressing hard enough. Bake hash brown "crust" in oven at 450 for 12 to 15 minutes until golden and crisp and baked through. Remove from oven and allow to cool. While crust is baking, saute vegan sausage, fennel seeds, chopped onion and minced garlic in olive oil until sausages is browned, fennel is fragrant and onion is translucent. After about 5 minutes, add kale and herbs de provence. Saute a few more minutes until kale is tender and stir in 1 cup vegan cheese shreds. Pour kale-sausage mixture into prepared crust and top with a sprinkle more vegan cheese shreds. Bake at 450 for an additional 10 minutes, until vegan shreds are melty. Serve hot.

PASTA WITH SAUSAGE AND KALE

- Cook the pasta according to the package instructions. Drain and set aside, reserving the water.
- Meanwhile, heat the olive oil in a large skillet over medium-high heat until hot, then pinch off 1- to 2-inch pieces of the sausage, adding it to the pan as you go. Cook for a couple minutes, flipping and stirring the sausage to brown both sides. Add the onion and garlic and cook until the onion has softened a little, a couple of minutes. Add the red pepper flakes, salt and pepper. Stir and cook until the sausage is cooked through, another 1 to 2 minutes.
- Use a ladle to remove 2/3 cup pasta water from the pasta pot and add it to the skillet. Add the kale and cook until it has started to wilt, about 30 seconds, then add the pesto and cherry tomatoes and cook, stirring gently, until the sauce has thickened and the kale has wilted, about 3 minutes. If the skillet starts to look too dry at any stage, add a little more pasta water.
- Remove the skillet from the heat and add the butter, lemon zest, pasta and Parmesan. Toss to combine. Taste and adjust the seasoning, then serve in bowls garnished with the fresh basil.
KALE AND SAUSAGE SAUTE
I always wanted to find a great way to prepare kale and found a great salad in the deli of a local grocery store. At first this was an attempt to re-create this salad but has since morphed into a lovely but very different dish. I hate overly cooked greens - the texture grosses me out, but with the kale it stays nice and crisp. You can serve it hot as an entree or side dish, but it also saves nicely in the refridgerator as a cool salad for lunch the next day.

- Stem the kale and chop into smaller pieces.
- Slice the onion and chop up the bell pepper and carrots. Cut the turkey keilbasa sausage into 1/4 inch rounds.
- Heat oil in a large saucepan, or a large fry pan with high sides.
- Add the garlic to the pan and let saute for about 30 seconds.
- Add the onion, carrots, and bell pepper and cook until the onion becomes somewhat translucent and the other vegetables tender, about 5-7 minutes. Stir frequently so nothing burns.
- Add the turkey keilbasa sausage and saute a minute more.
- Add the kale and gently toss so that the other cooked vegetables become incorporated. Cook about 2-3 more minutes, just until the kale starts to become tender and slightly wilted.
- Warning. Don't cook the kale too long or it will become tough and chewy. YUCK!
- Sprinkle it with salt and pepper to taste.
- Enjoy!
- You may need more olive oil, and you can add more or less of any ingredient you like.

CAJUN KALE, SAUSAGES, AND RICE
This was a recipe posted on one of the local News sites. It is so yummy! I have used chicken sausage and Andouille. I have never used the cheese listed in the recipe and I use a good louisiana hot sauce once I get it in my bowl. Here for safe keeping. Hope you all enjoy it too

- In a wide, heavy-bottomed saute pan with a lid, or a soup pot, heat 1 tsp olive oil over medium heat.
- Add sausage and lightly brown, 3-4 minutes.
- Remove sausage and set aside.
- Add remailing oil to same pot and saute onion, celery, and red pepper over medium heat for 4 minutes.
- Add garlic and cook and additional minute.
- Stir in rice to coat with oil.
- Add water, tomatoes, thyme, and salt.
- Place kaleon top without mixing in, cover, and boil for 2 minutes.
- turn heat to low, cover, and simmer for 20 minutes until rice is done (35-45 minutes for brown rice).
- Stir in reserved sausage and cheese (if using). Cover again for a minute to let cheese melt.
- Add your favorite hot sauce (I use Cayenne concoction).

SAUSAGE & LEEK MASH PIE

- Boil the potatoes for 12 mins or until tender. Drain and leave to steam-dry.
- Heat 1 tbsp oil in a shallow casserole or deep skillet (20-25cm). Pinch the sausages out of their skins into large pieces, directly into the pan, and fry over a medium heat for 7-8 mins or until golden brown. Add the flour and stir everything together, cooking for 1 min. Pour in the gravy and 100-200ml water (depending on how thick you like your gravy), bring to a simmer, then add the kale and cook for 5 mins. Remove from the heat.
- Meanwhile, in a separate pan, add the remaining 1 tbsp oil, then the leeks and fry for 5-10 mins until tender, adding a small splash of water to help them cook. Heat your grill to its highest setting.
- Mash the potatoes until smooth. Stir though the leeks, mustard and milk, and season. Spoon and swirl the mash on top of the sausage mixture, then scatter over the grated cheese and grill for 3-5 mins or until golden and bubbling.
