1 tablespoon peanut butter powder
2 1/2 teaspoons unsweetened cocoa powder
2 teaspoons sugar, or to taste
1 1/2 teaspoons instant espresso powder
3 tablespoons boiling water
3/4 cup hot steamed milk or almond milk
A pinch of cinnamon, optional

Steps:

  • Whisk together the peanut butter powder, cocoa powder, sugar and instant espresso in a large mug with the boiling water until no lumps remain. Mix in the milk and top with a pinch of cinnamon, if desired.

A pairing of Peanut Butter, Chocolate and Coffee. What's not to like? I didn't take my lawyer to the store with me to read the fine print so I ended up carrying home Chunky Peanut Butter rather than Smooth, which I prefer. Life's plumb full of surprises. Alas, the Chunks didn't spoil the cake a bit. It turned out to be a moist bit of goodness. Chalk up another successful experiment.

1 box(es) yellow cake mix (i used hy-vee brand)
12 ounce(s) peanut butter (i used skippy chunky)
3 medium eggs (per pkg. instructions)
1/3 cup(s) vegetable oil (per pkg. instuctions)
1/2 stick(s) butter room temperature (my addition)
1 1/3 cup(s) water, cold (per pkg. instruction)
FOR THE CHOCOLATE/MOCHA FROSTING
1 package(s) cream cheese 8 oz.
1/2 stick(s) butter (i use salted butter)
2/3 cup(s) hershey cocoa dry
1 cup(s) powdered sugar
1 tablespoon(s) instant coffee crystals heaping, dry
1/2 cup(s) walnuts crushed to top (optional)
1/2 cup(s) milk (to thin if required)

Steps:

  • In a large bowl combine the cake mix, peanut butter, eggs, vegetable oil, butter and water. Stir and mix and combine all well.
  • Pour into a lightly oiled 9" by 13" cake pan. Bake per package instructions until toothpick inserted in center of cake comes out clean. (My package called for 350 degree oven for 35 to 40 minutes, and worked well).
  • Remove from oven and allow cake to cool completely.
  • For The Frosting: In a large bowl combine and mix well the Cream Cheese, Butter, Cocoa, and Powdered Sugar and Instant Coffee. (I used a hand mixer for this). (Add milk a little at a time if needed to thin out slightly).
  • Spread frosting over cake and smooth out. (A sprinkle of Chopped Walnuts on top is optional). If you are fortunate enough to have Black Walnuts, they would be the Crowning Glory.
  • Cooks Note: It got 'et up!! Prepared this for our get together at the local pup for the Super Bowl Game. Also supplied the crew with my "Braggin' Rights Chili" which see.
  • Reluctant Note: After preparing the cake and pouring it into the 9" by 13" pan, I realized the batter was exceptionally stiff. Then I realized I had forgot to add the water. So, out from the pan and back into the mixing bowl, and an additional clean up of the pan. (I'm still working on that thing called Perfection.) Appears I have a way to go.
  • Post Note: This went fast during Super Bowl and most of the girls took a piece or two home with them. I was left with two pieces, one for my house cleaner Monday morning, and one for me, unless I get a visitor before I get to my piece.

Using a few basic ingredients, you can make this absolutely delicious and creamy chocolate peanut butter frosting. Tastes unbelievable on most cakes and cupcakes-- see above for inspiration!

1 cup (230g) unsalted butter, softened to room temperature
3 and 1/2 cups (420g) confectioners' sugar
1/2 cup (41g) unsweetened natural or dutch-process cocoa powder
3 Tablespoons (45ml) heavy cream or milk
1/3 (80g) cup creamy peanut butter*
1 teaspoon pure vanilla extract
1/4 teaspoon salt

Steps:

  • With a handheld or stand mixer fitted with a paddle attachment, beat the butter on medium speed until creamy, about 2 minutes. Add confectioners' sugar, cocoa powder, and milk. Beat on low speed for 30 seconds, then add the peanut butter, vanilla extract, and salt. Beat on medium-high speed for 2 minutes until combined. Add 1/4 cup more confectioners' sugar if frosting is too thin or another 1-2 Tablespoons of cream/milk if frosting is too thick. Taste. Add a spoonful of extra peanut butter or a pinch of salt if desired.
  • Frost your cake, cupcake, or confection however you'd like. In the pictured cupcakes, I piped a basic tall swirl using (affiliate link) Ateco 849 piping tip.
  • Use immediately or cover tightly and store for up to 1 week in the refrigerator or up to 3 months in the freezer. After freezing, thaw in the refrigerator then beat the frosting on medium speed for a few seconds so it's creamy again. After thawing or refrigerating, beating in a splash of heavy cream or milk will help thin the frosting out again, if needed.

1 1/2 cups all-purpose flour
1 1/2 cups granulated sugar
3/4 cup cocoa powder
1 1/2 teaspoons baking soda
3/4 teaspoon baking powder
3/4 teaspoon fine salt
3/4 cup buttermilk
3/4 cup espresso, warm
1/4 cup unrefined coconut oil, warmed
1 tablespoon vanilla extract
2 large eggs
12 ounces cream cheese, room temperature
4 ounces (1 stick) butter, room temperature
2/3 cup creamy peanut butter
3 cups powdered sugar
2 teaspoons vanilla extract
1/4 cup roughly chopped darkly roasted salted peanuts, for garnish

Steps:

  • For the cake: Preheat the oven to 350 degrees F and line two 8-inch nonstick cake pans with parchment paper.
  • Combine the flour, sugar, cocoa powder, baking soda, baking powder and salt in a large bowl. In a second bowl, whisk together the buttermilk, espresso, coconut oil, vanilla and eggs. Make a well in the dry ingredients and add in the wet mixture, whisking until just combined.
  • Divide the batter evenly between the two prepared cake pans. Bake on the center rack until puffed, the sides pull away from the edges and an inserted cake tester comes out clean, 30 to 35 minutes. Remove the cakes from the oven, immediately cover them with clean kitchen towels and press any domed portions down¿careful, it's hot! (This will help make sure that you don't have to level the cakes.) Allow the cakes to cool in their pans to room temperature. When completely cooled, invert onto plates.
  • For the icing: Using a stand mixer fitted with the paddle attachment, cream together the cream cheese and butter on medium speed, about 2 minutes. Turn off the mixer and scrape down the sides with a spatula to ensure everything is evenly mixed. Add the peanut butter and mix on medium speed to combine. Again, turn the mixer off. Mix in the powdered sugar, 1 cup at a time, on LOW speed (or else you'll have powdered sugar everywhere!). Add the vanilla and mix once more.
  • Transfer the icing to a piping bag. Ice the top of one cake layer, using a circular motion, starting from the outside and gradually moving to the center; do not ice the sides of the cake. Set the second cake layer on top of the first and repeat with the icing; again, do not ice the sides. Drag the back of a spoon in a side-to-side motion across the icing on top to lend a beautifully textured look to the icing.
  • Sprinkle the iced cake with the chopped peanuts. Store in the refrigerator for up to 3 days.

1 cup strong brewed coffee
1 cup canola oil
2 large eggs, room temperature

FILLING:
1 cup butter, softened
3/4 cup creamy peanut butter

6 ounces bittersweet chocolate, chopped
1 cup butter, softened
2 cups marshmallow creme
1/3 cup confectioners' sugar

Steps:

  • In a large bowl, beat the sugar, milk, coffee, oil, eggs and vanilla until well blended. Combine the flour, cocoa, coffee granules, baking soda and salt; gradually beat into sugar mixture until blended., Transfer to two greased and floured 9-in. round baking pans. Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out clean., Cool for 10 minutes before removing from pans to wire racks to cool completely., For filling, in a large bowl, beat butter and peanut butter until blended. Add confectioners' sugar; beat until smooth., For frosting, melt peanut butter and chocolate in a microwave; stir until smooth. Cool. In a large bowl, beat butter and chocolate mixture until fluffy. Add the marshmallow creme, confectioners' sugar and vanilla; beat until smooth. If necessary, refrigerate until frosting reaches spreading consistency., Place 1 cake layer on a serving plate; spread with filling. Top with remaining cake layer. Spread frosting over top and sides of cake.
