These Chocolate Peanut Butter Coconut Balls are a healthy snack or dessert option. Made with coconut flour, oats, chocolate and peanut butter, these chocolate coconut balls are gluten-free, full of fiber, protein and flavor.

½ cup oats
1/3 cup coconut flour
1/4 cup coconut flakes + more for topping
½ cup peanut butter
1/3 cup honey
¼ cup cocoa powder
1 tsp vanilla extract
1-2 tbsp almond milk

Steps:

  • Mix all ingredients in bowl except extra coconut flakes, and transfer to food processor or high speed blender (I used a Ninja). Process for 30 seconds to 1 minute. Be careful not to overprocess.
  • Add the final coconut flakes after processing. If dough is too dry, add 1-2 tbsp of almond milk to smooth it up.
  • Form into 12 one-inch balls. Transfer to fridge for 30 minutes to firm up!

This is a very good recipe adapted from Taste of Home and excellent dessert to make as a gift for family and friends for the Holidays. Enjoy them.

1 cup butter, softened
1 cup peanut butter, crunchy
2 tablespoons vanilla extract
1 cup confectioners' sugar (or less if you want)
1 cup graham cracker, crumbs
1 cup walnuts, finely chopped
1 cup flaked coconut
2 cups semi-sweet chocolate chips
2 teaspoons shortening
use chopped nuts or little candy sprinkles

Steps:

  • In a large bowl, cream the butter, peanut butter until light and fluffy. Beat in vanilla.
  • Gradually add confectioners' sugar and mix well. Stir in the cracker crumbs, walnuts and coconut.
  • Shape into 1-in. balls and place on baking sheets; cover and refrigerate for at least 1 hour.
  • In a microwave, melt chocolate chips and shortening; stir until smooth. Dip balls into melted chocolate; allow excess to drip off.
  • Roll in nuts or sprinkles. Place on waxed paper until set.
  • Store in an airtight container in the refrigerator.

Peanut butter and chocolate are a perfect pairing--and these sweet and salty peanut butter balls covered in bittersweet chocolate are sure to satisfy your craving. Make sure the balls are chilled and firm before rolling them in the chocolate. It will ensure that they do not fall apart and helps the chocolate set faster. If the chocolate thickens while you are dipping the balls, just pop it back in the microwave for 20 seconds and stir until smooth.

1 cup confectioners' sugar
1/2 cup creamy peanut butter (see Cook's Note)
4 tablespoons unsalted butter, at room temperature
1 teaspoon pure vanilla extract
1/4 teaspoon kosher salt
6 ounces bittersweet chocolate, roughly chopped

Steps:

  • Beat the confectioners' sugar, peanut butter, 2 tablespoons of the butter, vanilla extract and salt in a large bowl with an electric mixer until combined and smooth. Roll the mixture into 24 equal-sized balls (about 1 teaspoon each) and place them on a small baking sheet or tray. Chill in the freezer until firm, about 15 minutes.
  • Meanwhile, heat the chocolate and the remaining 2 tablespoons butter in a small microwave-safe bowl in 20 second intervals, stirring between each with a rubber spatula, until melted and smooth.
  • Holding with two forks, dip each peanut butter ball into the melted chocolate to evenly coat. Tap off excess chocolate. Place the balls back on the baking sheet. Chill in the refrigerator until the chocolate is firm and set, about 1 hour. Serve chilled. Refrigerate extra balls in an airtight container.

1 cup butter, melted
12 ounces creamy peanut butter
1 teaspoon vanilla
2 cups graham cracker crumbs
3/4 cup flaked coconut
1 cup pecans, chopped
1 tablespoon butter
12 ounces chocolate chips

Steps:

  • Melt butter in small saucepan. Add peanut butter and vanilla to melted butter. Mix well.
  • In a large bowl mix graham cracker crumbs, coconut and pecans. Blend in peanut butter mixture.
  • Form by hand in 1 inch balls the size of a quarter.
  • Melt the butter and chocolate chips in a double boiler. Stir as chips begin to melt and keep on low heat. Use a toothpick to dip each ball into chocolate.
  • Place on a sheet of wax paper and allow to dry. (I use wax paper on a cookie sheet and place balls in refrigerator to cool quickly.) Store in air-tight container. We like them kept cool in the refrigerator.
  • Note: Chocolate almond bark squares may be used instead of chips.
