I took this out of my latest Easy Home Cooking magazine. It's a Quaker oatmeal recipe. I have been looking for an easy breakfast for my two little ones and this looks like a winner. I think any low fat yogurt would do nicely depending on the fruit you choose. Can't wait to try it!

3/4 cup firmly packed brown sugar
1/2 cup granulated sugar
1 (8 ounce) container low-fat vanilla yogurt (or plain)
2 egg whites, lightly beaten
2 tablespoons vegetable oil
2 tablespoons nonfat milk
2 teaspoons vanilla
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt (optional)
3 cups oats (quick or old fashioned)
1 cup diced dried mixed fruit (or raisins or dried cranberries)

Steps:

  • Heat oven to 350°F
  • In large bowl combine sugars, yogurt,egg whites, oil, milk and vanilla; mix well.
  • In medium bowl combine flour baking soda, cinnamon and salt; mix well.
  • Add dry ingredients to wet mix; mix well.
  • Stir in oats and dried fruit.
  • Spread dough onto bottom of ungreased 13x9 baking pan.
  • Bake 28-32 minutes or until golden brown.
  • Cool completely on wire rack.
  • Cut into bars.
  • Store tightly covered.

We love this for breakfast, and it's healthy too. I usually make it with dried apples, but dried peaches and dried pears work too.

1 cup steel cut oats (don't use any other kind)
3 1/2 cups boiling water
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup raisins
3/4 cup dried apple ring, cut up into small pieces
1/2 cup cut up dates
1/2 cup milk
3 teaspoons dark brown sugar (I use splenda instead of sugar)

Steps:

  • Put everything except milk into boiling water and cook over med heat for about 25-30 minutes. Oats should be tender but not mushy. There should be some definite texture to the oats. Add milk, stir well and cook about 3 min more. Serve.

This healthy (no salt, no sugar added)breakfast is "fast" food at it's best. Together golden raisins, apricots and cranberries make a colorful compote. For make ahead meals, place oatmeal/compote layers in individual covered containers and refrigerate (or pop a few in the freezer) until ready to reheat in the microwave. We serve this topped with warm milk or cream. What a great way to start the day!

3 cups water
1 cup golden raisin
1 cup raisins
1 cup dried apricot (snipped small)
1 cup dried cranberries or 1 cup dried cherries (Substitute any of these dried fruits with your favorite if you wish)
13 cups water
6 1/2 cups quick-cooking oatmeal
1 teaspoon ground cinnamon (optional)

Steps:

  • This recipe makes enough compote for 13 servings (a complete 18oz container of quick cooking oatmeal); Or you can store compote in the fridge while you make individual servings of oatmeal.
  • Compote.
  • In a medium saucepan combine fruit and water.
  • Bring to a slow boil.
  • Reduce heat, cover and simmer for 30 minutes.
  • Oatmeal.
  • In a large saucepan bring water to a full boil.
  • Add rolled oats, reduce heat to medium and stir for 1 minute.
  • Cover and let set for 5-10 minutes until oatmeal is “set”.
  • To serve: Place a layer of oatmeal and a layer of compote in a bowl.
  • Repeat.
  • Sprinkle top with a dusting of cinnamon (optional).
  • Serve topped with warm milk or cream.
  • (optional).

1 cup packed brown sugar
2 teaspoons baking powder
1 teaspoon salt

2 large eggs, lightly beaten
1 cup fat-free milk
1/2 cup butter, melted
3/4 cup chopped peeled tart apple
1/3 cup chopped fresh or frozen peaches
1/3 cup fresh or frozen blueberries
Additional fat-free milk, optional

Steps:

  • Preheat oven to 350°. In a large bowl, combine oats, brown sugar, baking powder, salt and cinnamon. Combine eggs, milk and butter; add to the dry ingredients. Stir in apple, peaches and blueberries. , Pour into an 8-in. square baking dish coated with cooking spray. Bake, uncovered, until a knife inserted in center comes out clean, 35-40 minutes. Cut into squares. Serve with milk if desired.

This is a tasty bread with very little fat-virtually none if you use the nonfat buttermilk and leave out the nuts. I've only made it with raisins, but I'll bet it would be really good with the dried cranberries also.

Number Of Ingredients 9

3/4 cup quick-cooking oats
1 1/4 cups fat-free buttermilk (or you can use 1% milk soured with 1 tsp. vinegar per cup of milk. I wouldn't recommend nonfat milk,)
1 3/4 cups flour
1/2 cup brown sugar (I prefer dark brown)
1 teaspoon baking powder
1 teaspoon baking soda
2 teaspoons vanilla
1/2 cup raisins or 1/2 cup dried cranberries
1/2 cup chopped nuts (can use more raisins instead) (optional)

Steps:

  • Combine oats and buttermilk; mix well and set aside for a few minutes.
  • Combine dry ingredients, except for the sugar, and mix well.
  • Add brown sugar to oat mixture and mix well, pressing out any lumps.
  • Add buttermilk mixture and vanilla to dry ingredients and stir just until dry ingredients are moistened.
  • Stir in fruit and nuts (if using).
  • Put batter into 2 1-lb loaf pans that have been sprayed with nonstick spray.
  • Bake at 325 for 25-30 minutes.
  • Cool in pan for 5-10 minutes, then remove from pans to cool on wire rack.

Steps:

  • Place oats, dried fruit, sugar and cream in jar and cover with one cup of water.
  • Screw on the lid and shake to mix.
  • If you're using a bowl, stir it with a spoon and then cover with a plate before microwaving.
  • Dice the apple and store in a plastic bag.
  • When ready to prepare remove the jar's lid and microwave the jar for one minute, and stir the contents.
  • Then microwave again for about 1minute and 5 seconds.
  • Stir in the apples and you're ready to go!
  • Of course, you don't have to use apples at all. Nuts are a great addition, as are tons of other mix-ins. I am so happy about making it!
