Traditional Scottish Cullen Skink is also known as Smoked Haddock Chowder, an easy to make, hearty, and filling soup that's a meal in itself.

1 1/4 pints milk
Small handful flat-leaf parsley (leaves and stalks separated), plus more for garnish
1 bay leaf
1 pound smoked haddock fillet (not dyed)
2-ounces butter
1 medium onion (finely chopped)
8-ounces mashed potato (leftover or cooked fresh)
Salt (to taste)
Black pepper (to taste)
Serving Suggestion: crusty bread

Steps:

  • Gather the ingredients.
  • Put the milk, parsley stalks, bay leaf, and the whole piece of haddock into a large saucepan.
  • Finely chop the parsley leaves. Set aside.
  • Bring the milk to a gentle boil over medium heat. Lower the heat to low simmer, about 3 minutes.
  • Remove the pan from the heat. Set aside for 5 minutes so the herbs and haddock infuse their flavors into the milk.
  • Remove the haddock from the milk with a slotted spatula. Set aside.
  • Strain the liquid through a fine mesh strainer. Discard the herbs.
  • In another large saucepan over medium-low heat, add the butter and the onion. Cook gently until the butter melts and the onions become translucent, about 5 minutes. Be careful not to burn the onion.
  • Add the infused milk and the potato to the onion-butter mixture. Stir until the potatoes dissolve and the soup thickens slightly.
  • Flake the smoked haddock into bite-size chunks, discarding any bones. Add to the soup.
  • Lower the heat to a gentle simmer. Add the chopped parsley and cook until the haddock is warmed through, about 5 minutes. Don't overstir, because the fish chunks might disintegrate.
  • Season to taste with salt and pepper. Be careful with the salt, as the fish will impart quite a salty flavor all on its own.
  • Garnish the soup with the reserved parsley leaves and more freshly ground black pepper. Serve with crusty bread, if desired.

1 large side smoked skin-on haddock , approx 300g/11oz, pin-boned
½ onion , diced
25g butter
200g new potatoes , peeled and sliced
400ml chicken stock
100ml milk
200ml double cream
100g pancetta , diced
maple syrup and chopped chives, to serve

Steps:

  • Remove the skin from the smoked haddock. Either ask your fishmonger to do this or, using a sharp filleting knife, start at the thinnest end and carefully wiggle your knife to separate the skin and the flesh. Keep going, keeping your knife close to the flesh, until the skin is removed. Keep the skin.
  • In a large pan, sweat the onion in the butter until soft but not coloured, then add the potatoes and cook for a few mins more. Put the haddock skin in the pan, cover with the chicken stock and slowly poach until the potato is soft.
  • In another pan, bring the milk and cream to the simmer. Place the smoked haddock in the pan and cook for 3-4 mins until just cooked. Remove and keep warm, reserving the milk and cream.
  • Remove the fish skin from the soup and blend until smooth. Add the reserved cream and milk to get a smooth creamy finish and season with black pepper and a little salt.
  • Fry the pancetta in a dry pan until crisp. Keep warm. In soup bowls, place some smoked haddock and crisp pancetta, then pour on the soup. Drizzle with the maple syrup and sprinkle with chopped chives.

Cullen Skink - Scottish Smoked Haddock and Potato Soup image

The name of this rich, tasty soup comes from the fishing village of Cullen, in Morayshire in Northern Scotland. "Skink" is a soup made originally from a shin of beef - in fact the word "skink" means soup or stew - but in this case, the main ingredient is smoked haddock with potatoes and onions. Finnan haddock is often called Finnan haddie, and is the traditional ingredient in the famous Edwardian breakfast dish of Kedgeree. Cullen Skink is sometimes called Smoked Haddock Chowder when served in bistros and restaurants. We love to serve this delicious soup as an elegant and comforting starter for our Burns Night Tribute Supper; this is also a wonderful soup to be served as a main course - with crusty bread and butter.

1 (2 lb) smoked haddock
1 medium onion, peeled and finely chopped
1 1/2 pints milk
2 tablespoons butter
8 ounces cooked mashed potatoes
salt and pepper
1 bay leaf
chopped parsley
water
toast points (as an accompaniment)

Steps:

  • Cover the smoked haddock with water, in a shallow pan, skin side down. Bring to the boil and simmer for 4/5 minutes, turning once.
  • Take the haddock from the pan and remove the skin and bones.
  • Break up the fish into flakes, return to the stock and add the chopped onion, bay leaf, salt and pepper.
  • Simmer for another 15 minutes. Strain, remove the bay leaf but retain the stock and fish.
  • Add the milk to the fish stock and bring back to the boil.
  • Add enough mashed potato to create the consistency you prefer (don't be afraid to make it rich and thick!).
  • Add the fish and reheat.
  • Check for seasoning.
  • Just before serving, add the butter in small pieces so that it runs through the soup.
  • Serve with chopped parsley on top, accompanied by triangles of toast.

This is a tasty rich soup and the recipe will serve as a starter for four or a full meal for two. The recipe is from the London fish restaurant called Livebait.

1 kg plum tomato
1 bunch basil
1/2 bunch parsley
1/2 bunch thyme
250 g leeks
250 g waxy potatoes
500 g smoked haddock, undyed if possible
1 liter chicken stock
1/2 teaspoon hot paprika
salt
pepper

Steps:

  • Preheat the oven to 130 C/250°F.
  • Cut the tomatoes in half lenghtways and arrange them on a baking sheet, sprinkle with salt and pepper and half of the basil, parsley and thyme. Bake in the oven for two hours until they are wrinkled and dry looking. Let the cool off, and then puree them in a blender.
  • Wash the leeks and cut them into inch lenght pieces. Peel and dice potatoes.
  • Skin the haddock fillets and chop them into bite-sized pieces.
  • Bring stock to boil in large pot and add the tomato puree and stir. Reduce the heat and let simmer for 10 minutes.
  • Add the leeks and potatoes and simmer for a further 25 minutes until the potatoes are cooked, but firm.
  • Add the remaining herbs, the paprika, haddock and simmer for five minutes. Season with salt and pepper and serve.

Steps:

  • Melt the butter in a large saucepan. Fry the onion and bacon for 5 mins until soft. Add the potatoes to the pan and cook for a further 2 mins, then pour in the stock and simmer for 8 mins or until the potatoes are just tender.

600g natural (undyed) smoked haddock
500ml milk
1 tbsp olive oil
150g lardons (diced bacon), or chopped streaky bacon
2 sticks of celery , thinly sliced
3 medium leeks , washed and sliced
2 bay leaves
2 medium potatoes , peeled and diced into small cubes
500ml fish or chicken stock
125g frozen sweetcorn , thawed
142ml carton single cream
2 tbsp roughly chopped fresh parsley

Steps:

  • Lay the haddock in a deep frying pan and pour over the milk. Cover and bring to the boil. Remove from the heat and leave undisturbed for about 5 mins, until the haddock is just cooked. Lift the haddock from the milk, remove the skin and bones and fl ake onto a plate. Reserve the milk for later.
  • Heat the oil in a large saucepan (preferably non-stick) and gently fry the bacon until starting to brown. Add the celery, leeks, bay leaves and potatoes, and cook for a couple of mins. Pour in the stock and reserved milk. Bring to the simmer and cook for 10 mins.
  • Add the flaked haddock, sweetcorn and cream. Season with pepper (it shouldn't need salt) and stir in the parsley. Heat through gently, then serve.

1 onion, chopped
1 bouquet garni
3 3/4 cups water
1 1/4 lbs potatoes, quartered
2 1/2 cups milk
3 tablespoons butter
salt and pepper
fresh chives, snipped, to garnish

Steps:

  • Put the haddock, onion bouquet garni and water into a large saucepan and bring to a boil.
  • Skim the scum from the surface, the cover the pan with a lid.
  • Reduce the heat and poach for about 10-15 minutes, or until the haddock flakes easily.
  • Lift the poached fish from the pan with a slotted spoon and remove the skin and bones.
  • Flake the fish and reserve.
  • Return the skin and bones to the pan and simmer, uncovered for 30 minutes.
  • Strain the fish stock and return it to the pan.
  • Add the potatoes and simmer for about 25 minutes, or until tender.
  • Remove the potatoes from the pan with a slotted spoon. Add the milk to the pan and bring to a boil.
  • Meanwhile, mash the potatoes with the butter, then whisk into the milk in the pan until thick and creamy.
  • Add the flaked fish to the pan and adjust the seasonings.
  • Serve sprinkled with chives.

  • Heat the butter in a large saucepan. Tip in the bacon, then cook until starting to brown. Add the onion, cook until soft, then pour over the milk and stir through the potatoes. Bring to the boil, then simmer for 5 mins.

450g smoked cod or smoked haddock (undyed)
1 bay leaf
2 tbsp light olive oil
50g butter
2 onions , finely chopped
2 leeks , halved lengthways and thinly sliced
3 celery sticks, thinly sliced
sweetcorn kernels from 1 corn-on-the-cob, or 140g/5oz frozen sweetcorn
900g potato , peeled and diced
3 garlic cloves , crushed with 1 tsp sea salt
2 tsp chopped fresh thyme or ½ tsp dried thyme
600ml milk
chopped fresh parsley , for sprinkling

Steps:

  • Put the fish in a deep frying pan with the bay leaf and 600ml/1 pint boiling water. Cover and simmer for 2 minutes. Turn off the heat and leave to stand, covered, for a further 5 minutes. Drain, reserving the liquid, then flake the fish.
  • Heat the oil and butter in a deep saucepan. Add the vegetables and garlic and fry over a high heat until starting to soften. Stir in the thyme and the reserved cooking liquid and bring to the boil. Reduce the heat and simmer for 10 minutes until the vegetables have softened.
  • Pour half the soup into a bowl and mash with a potato masher or fork. Return to the pan with the milk and fish. Simmer for 3 minutes, taste and season if needed. Sprinkle with chopped parsley to serve.

20 sprigs fresh thyme
2 whole dried bay leaves
12 whole black peppercorns
2 tablespoons unsalted butter
2 large leeks, white and pale green parts only, cut into 1/2-inch pieces (about 2 cups total)
1 large fennel bulb, cut into medium dice (about 2 cups total)
2 quarts heavy cream
1 pound smoked haddock, flaked (about 2 cups total)*
2 tablespoons minced fresh dill
*If smoked haddock is unavailable, substitute smoked cod or mackerel. Alternatively, use fresh haddock, cod, or halibut, cut into 1-inch pieces (about 2 cups total).

10- by 10-inch square of cheesecloth, kitchen string

Steps:

  • Wrap the rosemary, thyme, bay leaves, and peppercorns in the cheesecloth and secure with the kitchen string. Set aside.
  • In a medium saucepan over moderate heat, melt the butter. Add the leeks and fennel and sauté, stirring occasionally, until softened, 8 to 10 minutes. Add the heavy cream and bring to a boil. Reduce heat to low, add the herb package, and simmer until the soup is reduced by about one third, 20 to 25 minutes. Add haddock, cover, and simmer an additional 5 minutes. Season to taste. 1 large onion, chopped
