In this summery bruschetta, briny olives and a splash of balsamic vinegar liven up the classic tomato and basil topping.

1½ lbs ripe tomatoes (preferably heirloom), cored and diced (3 to 4 tomatoes)
¼ cup pitted Kalamata olives, finely chopped
2 teaspoons balsamic vinegar
¼ cup finely chopped fresh basil, plus more for serving
¼ teaspoon salt
A few grinds freshly ground black pepper
½ cup extra-virgin olive oil, divided
1 good quality baguette, cut into scant ½-in-thick slices on the bias
1 clove garlic, halved lengthwise

Steps:

  • Preheat the oven to 425°F and set a rack in the middle position.
  • In a medium bowl, combine the tomatoes, olives, balsamic vinegar, basil, salt, pepper, and ⅓ cup of the oil. Toss to combine, then taste and adjust seasoning, if necessary. (If the tomatoes aren't as sweet as you'd like, add ⅛ teaspoon sugar.)
  • Arrange the bread slices on a baking sheet. Brush both sides of the bread with the remaining 3 tablespoons of oil. Bake for about 10 minutes, until crisp and golden on the bottom.
  • Using tongs, flip the bread slices so the golden side is facing up. Rub the top side of each slice with the cut side of the garlic, going back and forth once (or twice, if you like your bruschetta extra garlicky). Transfer the toasted bread to a serving platter and top each slice with a spoonful of the tomato mixture. Sprinkle the bruschetta with more basil. Serve within 10 minutes so that the bread stays crisp.
  • Make-Ahead Instructions: The tomato mixture can be prepared up to 3 hours ahead of time and stored in a covered container in the refrigerator. Taste and adjust seasoning before topping the toasted bread.

  • Preheat oven to 450°F (230°C).
  • Slice the baguette into ½-inch (1 cm) rounds and place on a baking sheet.

  • In a medium bowl, combine the tomatoes, minced garlic, balsamic vinegar, basil, salt, and pepper.

600 g Tomatoes
½ Red Onion (Chopped into a small dice)
1 tbsp Extra Virgin Olive Oil*
½ tsp Sea Salt
¼ tsp Freshly Ground Black Pepper
12 Slices Wholegrain Rustic Loaf
1 Clove Garlic
12 Fresh Basil Leaves (Washed and roughly torn or sliced into ribbons)
6-8 tbsp Homemade Super-Green Pesto (Or alternative green pesto)
2 tbsp Thick Balsamic Vinegar

Steps:

  • Prepare your ingredients and get your equipment ready.
  • In a bowl, combine the tomatoes, onions, olive oil, salt and pepper. Put to one side and prepare the toasts.
  • Grill the bread slices with a grill pan, or place in a toaster. You're looking for a crisp exterior and soft interior. On a hot grill pan, it will take about 3-4 minutes on each side - you are looking for those smoky grill marks. While the bread is still warm rub a clove of garlic over the surface of the bread. It will melt into it nicely.
  • Spread each piece of toast with the pesto (if using) and then pile on the tomato mixture. To serve, arrange the bruschetta on a plate or platter, scatter with torn pieces basil, drizzle with balsamic vinegar (if using). Serve immediately***.

1 clove garlic
3 tablespoons extra virgin olive oil, divided
4 large ripe roma tomatoes, chopped
1/2 cup red onion, finely diced
12 -15 fresh basil leaves, coarsely chopped
2 tablespoons fresh oregano leaves, finely chopped
1 tablespoon balsamic vinegar
1/2 cup finely grated part-skim mozzarella cheese
salt
black pepper
8 slices Italian bread, cut 3/4 inch thick (I use whole wheat)

Steps:

  • Lightly toast the bread in the oven.
  • Rub one side of the toast with garlic clove.
  • Drizzle a little olive oil over each slice.
  • Mix tomatoes, onion, oregano, basil, 2 tablespoons of the olive oil, balsamic vinegar, salt and pepper.
  • Spread mixture over each slice of toast.
  • Sprinkle a little of the grated mozzarella cheese on each slice.
  • Bake (not broil) in a 350 degree oven about 10 minutes, until the cheese just starts to melt, being careful not to burn the edges of the toast.
  • Serve immediately.

10 slices of baguette ((or any bread of your choice)
1 cup cherry tomatoes
1/2 cup black olives
2 garlic cloves, minced
1 1/2 tbsp extra virgin olive oil
1/2 tsp balsamic vinegar
1 tsp chopped basil
salt and pepper to taste
1/2 tsp mixed herbs
2 tbsp shaved parmesan

Steps:

  • Preheat the oven to 200 degrees C (390 degrees Fahrenheit).
  • Mix the olive oil, minced garlic and herbs, and lightly brush each baguette slice with it.
  • Arrange on a tray, and bake for about 10 minutes until lightly brown and crispy.
  • Meantime, cut the cherry tomatoes, slice the pitted black olives, and add them to a bowl together with the basil.
  • Season with salt and pepper, add the balsamic vinegar, and mix well.
  • Remove the bread slices from the oven, leave to cool, then top with the tomato mixture and shaved parmesan.

1 loaf sourdough bread or 1 loaf Italian bread
drizzle of quality extra virgin olive oil
6 vine ripened tomatoes
6 garlic cloves, whole
finely ground salt
fresh ground black pepper
1 bunch basil, torn

Steps:

  • Cut the sourdough bread into 1/2 to 1 inch slices on the diagonal. Grill until golden brown. Cut the tomatoes in half and arrange on a platter with whole garlic and torn basil leaves. Drizzle a good quality olive oil on top of the grilled bread slices. Rub the bread with the whole garlic clove. Squeeze and rub the tomato on the bread, and finish with torn basil leaves, a little salt, and pepper.
