1/2 cup dark brown sugar
2 tablespoons paprika
1 tablespoon black pepper
1 tablespoon chili powder
1 tablespoon salt
1 tablespoon onion powder
1 tablespoon garlic powder

Steps:

  • In a medium bowl, mix together all ingredients.
  • Rub onto chicken, pork or beef; allow to rest 5 minutes before grilling.
  • OR wrap in foil and refrigerate overnight and grill the next day.
  • Yeilds enough rub to cover 2-3 lbs of meat.
  • Store unused rub in an airtight container.

  • Mix all ingredients and store in a tightly covered container.

1 tablespoon fresh coarse ground black pepper
2 teaspoons brown sugar
2 teaspoons sweet paprika
1 teaspoon mild chili powder (or spice it up with some hot)
1 teaspoon onion powder
1 teaspoon dried oregano
1 teaspoon ground cumin
1/2 teaspoon garlic powder
1/2 teaspoon cayenne pepper (optional)

Steps:

  • Combine all ingredients in large bowl, season brisket 12 to 24 hours before cooking on the grill or in the smoker. To help the dry rub adhere, lightly rub the meat with a little olive oil before shaking rub on.
