This hot and spicy sausage and lentil soup is the perfect comfort food for chilly days. Freezer friendly, kid friendly, perfect for a big crowd with a big appetite.

2 pounds bulk sausage (hot, mild, or sweet, as you prefer)
1 package (16 - 18 oz) dried lentils (we used green)
1/4 cup olive oil
3 onions, chopped
4 large carrots, chopped
6 celery stalks, chopped
3 teaspoon minced garlic
1 tablespoon Bavarian seasoning blend (Or substitute 1 teaspoon each rosemary, sage, thyme, & 1/2 teaspoon dried mustard seeds and a bay leaf)
1 teaspoon dried basil
Sprinkle of cayenne pepper (or more, to taste)
1 small can tomato paste
1 (14.5 oz) can of tomato sauce
3 quarts of chicken stock + 2-3 cups water
Salt & pepper to taste
2-4 additional cups of water, as needed

Steps:

  • In a large skillet over medium-high heat, brown and crumble the bulk sausage. Break it up into small pieces as it cooks. Sauté until the sausage is nicely browned and toasted. Drain the fat and set the sausage aside. Thoroughly rinse and drain the dried lentils in a colander and set aside. In a large stock pot, heat the olive oil over medium-high heat until shimmering. Add the onions, carrots, and celery and add a sprinkle of salt & pepper. Stir to combine. Sauté the veggies until the onions are softened and translucent. Add the garlic and the seasonings to the veggie mix and stir to combine. Heat for 1 minute until fragrant. Add the tomato paste and tomato sauce, and stir to combine thoroughly with the veggies. Add the reserved sausage and lentils to the pot and stir to combine with the veggies. Pour in the chicken stock and water and stir. Bring the soup to a gentle simmer and then reduce the heat to low. Let the soup simmer for 2 hours stirring every 10 minutes or so to be sure nothing is sticking or burning on the bottom of the pot. Add 2 - 4 cups of water as needed when the broth becomes too thick.

The lentils are the perfect vehicle to carry the robust flavors from the red wine and hot sauce, and the tomato sauce ties everything together. This soup is rather spicy, so feel free to omit the hot sauce if you'd like to reduce the heat. The sausage can be substituted with vegan sausage or omitted altogether.

3 tablespoons extra-virgin olive oil
6 ounces andouille or fresh Mexican chorizo sausage, casings removed, crumbled (see Cook's Note)
1 medium onion, chopped (about 2 cups)

Steps:

  • Heat the olive oil in a large pot over medium heat. Add the sausage and cook, breaking into small pieces with a wooden spoon, until browned, 4 to 5 minutes.
  • Add the onion and cook, stirring occasionally, until translucent, about 5 minutes. Add the carrots, celery and bell pepper and cook until softened, about 5 minutes. Add the garlic and cook until fragrant, about 1 minute.
  • Push the ingredients to the sides of the pot to make a well in the center. Add the chili powder, cumin and paprika in the well and toast until fragrant, 1 minute. Season with 1/4 to 1/2 teaspoon salt and 1/2 teaspoon pepper and stir in the bay leaf.
  • Stir in the chicken stock, tomato sauce, red wine and lentils. Increase the heat and cook until boiling, then reduce to a hearty simmer. Cover and cook until the lentils are cooked through, 30 to 35 minutes.
  • Remove from the heat, then stir in the basil, hot sauce and lemon juice. Taste to adjust the seasoning and serve over quinoa if desired.

2 tbsp olive oil
1 onion, chopped ((white, brown, yellow))
2 garlic cloves, minced
1 large carrot (, chopped (about 1 1/4 cups))
2 celery ribs (, chopped (about 1 1/4 cups))
2 cups / 400g dried lentils (, green or brown, rinsed (Note 1))
400g / 14 oz crushed tomato
1.5 litres / 1.5 quarts (6 cups) vegetable or chicken (stock / broth, low sodium)
1/2 tsp each cumin and coriander powder
1 1/2 tsp paprika powder
2 dried bay leaves
1 lemon (zest + juice)
1/4 tsp salt and pepper, (each)
Chopped fresh parsley, for garnish
Warm bread, to serve

Steps:

  • Heat oil in a large pot over medium heat. Add garlic and onion, cook for 2 minutes.
  • Add celery and carrot. Cook for 7 - 10 minutes or until softened and the onion is sweet. Don't rush this step, it is key to the flavour base of the soup.
  • Add all remaining ingredients except the lemon and salt. Stir.
  • Increase heat and bring to simmer. Scoop scum on the surface off and discard (do this again during cooking if required). Place lid on and turn heat down to medium low. Simmer for 35 - 40 minutes or until lentils are soft.
  • Remove bay leaves.
  • Thicken Soup: Using a stick blender, do 2 or 3 quick whizzes to thicken the soup (see video below). Or transfer 2 cups to a blender, let it cool slightly, then hold lid with tea towel and blend then transfer back into pot.
  • Add a touch of water if you want to adjust soup consistency. Season to taste with salt and pepper. Grate over the zest of the lemon then add a squeeze of lemon juice just before serving. Garnish with parsley if desired and serve with warm crusty bread slathered liberally with butter!

1 cup dried brown lentils, rinsed
1 can (15 ounces) cannellini beans, rinsed and drained
1 carton (32 ounces) reduced-sodium chicken broth
1 cup water
1 can (14-1/2 ounces) fire-roasted diced tomatoes, undrained
6 cups fresh spinach (about 4 ounces)
Crumbled goat cheese, optional

Steps:

  • In a Dutch oven, cook and crumble sausage over medium heat until no longer pink, 5-7 minutes; drain., Stir in lentils, beans, broth and water; bring to a boil. 1 pound Italian sausage (turkey sausage also works)
3/4 cup chopped onion
2/3 cup chopped celery
3/4 cup sliced carrots (about the same size as the celery)
1 small chopped zucchini
6 cups chicken stock
28 ounces diced tomatoes (with the juice)
3 cloves garlic (finely chopped)
1 teaspoon salt (or to taste)
1 1/2 cups dried brown lentils
1/4 cup fresh basil
2 teaspoons dried oregano
1/4 cup fresh parsley
parmesan cheese (optional )

Steps:

  • Heat a 5 quart or larger stock pot or cast iron dutch oven over medium high heat.
  • Remove any casings from your sausage if they are in links and add to the pan. Cook, breaking up the meat until no pink remains. About 7 minutes. Do not drain the fat.
  • Add all remaining ingredients and stir to combine. Bring to a boil, then reduce heat and simmer covered for 1 hour or until the lentils soften. Serve warm with a sprinkle of parmesan cheese.

Soup is one of my favorite comfort foods. Most soups take only a few minutes to prepare and then a little time to simmer. I often make and take homemade soup to friends who are in need of a bit of comforting. This one makes four small servings, and is perfect for vegetarians and spice lovers.

1 cup red lentil, and water to cover (will be drained off)
1 -2 tablespoon olive oil
1 medium onion, chopped small
2 garlic cloves, crushed
1 teaspoon fresh ginger, grated
1 teaspoon turmeric
1/2-1 teaspoon ground cumin
1/8-1/4 teaspoon chili powder
1/2 cup zucchini, diced small
1/2 cup carrot, diced small
5 cups vegetable stock
salt and pepper, to taste
1 -2 ounce linguine, broken into 1-inch pieces
2 -4 tablespoons cilantro, chopped (optional)
cream, sour cream (optional) or neufchatel cheese (optional)

Steps:

  • Wash and pick over lentils. Cover with water and leave to soak for 15 minutes.
  • While lentils are soaking, prepare other ingredients for use.
  • When everything is ready, drain lentils and set aside.
  • Heat oil in a heavy saucepan. Sauté onion, garlic and ginger until onion is translucent.
  • Stir in turmeric, cumin and chili powder, and sauté for about 1 minute.
  • Add lentils, zucchini, carrot, vegetable stock, salt and pepper (if needed). Bring to a boil, then reduce heat and simmer for 20-30 minutes (until vegetables are almost tender). Spoon off scum as needed.
  • Add linguine pieces and simmer another 10-15 minutes (until pasta is al dente). I used only 1 ounce of linguine, but you could use more to add body to the soup.
  • To serve, ladle into bowls and garnish with cilantro and a dollop of cream, sour cream or Neufchatel cheese.

If you don't puree it, you may need to add a little water to it the next day before reheating because it tends to condense itself. I love to make this on a chilly day! It's super easy and will make your house smell fantastic!

1 small yellow onion
1 lb sausage (jimmy dean hot or neese's sausage is best)
1/2 to 1 bag(s) dried lentils
1/4 c olive oil, extra virgin

beef bouillon cubes
curry powder (red, yellow, or a combination
cilantro, fresh

Steps:

  • 1. Heat a few tablespoons of olive oil in a large skillet and sautee onion until tender. Add sausage and fry till crumbly and crustily browned. Drain and set aside.
  • 2. Place lentils in a pot and cover with water. Bring to a boil and start throwing in boullion cubes. 1 cube per cup of water, if you want to measure, or just keep throwing them in till you get a nice flavored broth. (Keep in mind that you're going to add curry later, so don't go too heavy on the boullion. You can add more at any time.)
  • 3. At this point you can decide whether or not to puree the soup. The advantages to puree-ing are a.) you don't have to deal with the husks of the lentils floating around in your bowl or getting stuck in your teeth, and b.) it's kind of fun to chop stuff up with a food processor, or an immersion blender, if you have one (even more fun!).
  • 4. Reduce heat to simmer and add olive oil, garlic, and sausage. I like to scrape some of the pan drippings into the mix. Yum!
  • 5. Dump in some curry powder till you get the flavor you want.
  • 6. Cook until lentils are tender, usually 30 to 45 minutes. (You can leave this soup to simmer for as long as you want.)
  • 7. About 10 minutes before serving, add cilantro to taste. (The more, the better in my opinion!) You may or may not need any salt. Taste and adjust boullion and curry seasonings if needed. If the flavor is too strong or salty, just add more water.
