SLUMGULLION RECIPE
Slumgullion! Beefaroni! American Chop suey! Whichever name you choose to call it, this easy American comfort food is made with a few basic ingredients; macaroni, ground beef, tomato sauce and some the spices.

Steps:
- Sauté onions in 1 Tbsp of oil then add the ground beef and spice blend. Cook till no longer pink.
- Add the Tomato sauce stir and reduce heat to low and let beef sauce simmer for about 5 mins then turn off heat.
- Bring water to a boil and cook according to pasta instructions see my post on how to cook the perfect pasta for guidance.
- When pasta is cooked, drain with a colander then transfer back to pot.
- Pour the ground beef sauce into the pasta pot and mix to combine. You can serve it as is at this point or you can go further and top with some cheese and broil for 3-5 minutes until cheese melts.
- Sprinkle some chopped parsley on the top and serve.

SLUMGULLION (AMERICAN GOULASH)
Slumgullion (also known as American Goulash, American Chop-Suey, or Beefaroni) is a classic -and incredibly cheap - comfort meal. But make no mistake, this slumgullion recipe is anything BUT cheap-tasting. Who knew basic ingredients like pasta, ground beef, onion, and tomato sauce could make such an easy, delicious dinner?

Steps:
- In a large non-stick pot, add 1 tbsp olive oil. Once hot, add in onions and saute until fragrant.
- Add the ground beef, onion powder, garlic powder, oregano, rosemary, salt, pepper, and red chili flakes. Stir up the ground beef with your spatula to break it into chunks, and stir until meat is fully cooked.
- Mix in the tomato sauce and bouillon. Reduce the heat to low, and mix to combine. Allow the mixture to cook for 5-7 minutes. Turn off the heat.
- Add in the cooked pasta and stir the mixture to combine.
- You can serve the slumgullion as is at this point, or you can mix in the cheddar cheese.
- Sprinkle some chopped parsley and the slumgullion is ready to serve. ENJOY!

- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and place in large saucepan.
- Meanwhile, in a large skillet, brown beef over medium heat; just before beef is browned, stir in onion.
- Add beef mixture to pasta, and stir in tomato sauce, mushrooms, garlic, salt, pepper and stewed tomatoes. Cook over low heat, 10 to 15 minutes, or until heated through.

- In a 3 quart dutch oven, brown and crumble hamburger.
- Drain off grease.
- Add all 3 cans of tomatos.
- Add garlic.
- Simmer 5 to 10 minutes untill heated thru.
- In a seperate sauce pan prepare Pasta according to package directions.
- Drain pasta and add to sauce mix, stir to mix.
- Garnish with chopped onion, and salt and pepper to taste.
- Serve with bread and butter on the side.

CHIPOTLE PORK STEW

Steps:
- Place one tablespoon oil in a large dutch oven or soup pot.
- Sprinkle chops with a small amount of salt and pepper and saute until browned and starting to get crispy.
- Add the diced potatoes, salsa verde, Rotel, chipotle chilis, coffee, beef broth and lime juice.
- Stir well and simmer approximately 30 minutes.
- Potatoes should be tender.
- Add corn and continue to simmer another 10 minutes.
- Mix flour and water in a small jar or container with lid, shaking until well mixed.
- Add one ladle or 1/4 cup of the broth to the jar and mix well.
- Slowly stir this mixture back into the pot of stew, stirring constantly.
- This will thicken the broth.
- Simmer for 5 minutes.
- Add cilantro at the end of cooking time and serve.
- May garnish with more cilantro if desired.

SLUMGULLION
I Googled the name just to make sure it wasn't some crazy word my mom made up...it is a real word for a "watery stew". That is not what this is! My ultimate comfort food from my childhood. I've eaten it for breakfast, lunch and dinner. It's a very plain dish that is a good base for any experimentation. My personal add in is the Great Northern white beans (I was trying to cut the beef in 1/2 and add more protein). It is great the next day and freezes and reheats easily.

- Fill a large pot with cold water. Cover and bring water to a boil. Salt the water and cook the macaroni until al dente. Drain and return to large pot. Cover and set aside. You can also do this while you are prepping and preparing the meat.
- In a large skillet, heat the olive oil and add the 2 cloves of smashed garlic to the oil. Saute on medium heat and cook for 2-3 minutes. Stir in the chopped onion and mix to coat with garlic oil. Season the onions with a pinch of salt and black pepper. Saute until soft and transluscent. Remove smashed garlic pieces.
- Add the ground beef, breaking up any clumps to form small to medium small bits. Season with salt, pepper (and Accent if you are using that seasoning). Brown the meat and drain off any excess liquids.
- Add meat/onion mixture to the pot of cooked macaroni. Add the 2 cans of diced tomatoes and the 1 can of tomato sauce. Fold in the 1 can of white beans and mix in gently to the macaroni, beef and tomatoes. Taste and adjust any seasoning at this time. Cover and heat through on low-med lo heat for at least 30 min to blend flavors.
- When reheating leftovers, it the macaroni seems to be absorbing the tomato's liquids add more tomato sauce, tomato juice or one 16 oz of diced tomatoes. I've even used a can of V8 to rehydrate.
TOMATICAN CON PULPA DE CERDO (CHILEAN SUMMER PORK STEW)

- Heat oil in 6 quart saucepan over medium-high heat until hot. Add pork; cook 10 to 12 minutes, stirring occasionally, or until browned. Remove from pan.
- Add onion, bell pepper, carrot, celery and garlic to pan. Cook 5 minutes, stirring occasionally, or until onion softens. Add paprika, bay leaf and cumin; stir to combine.
- Add undrained tomatoes, corn and broth to pan. Return pork to pan. Bring to a boil, then reduce heat to medium-low. Simmer uncovered 1 hour or until pork is tender.
- Remove bay leaf; add beans, salt and pepper. Heat through and serve.

SLUM GULLION
My mother used to fix this simple recipe. As a precursor to Hamburger Helper it was really tasty. Substitute the chili powder for paprika if you like your food a little hotter.

- Cook egg noodles per directions, drain and set aside.
- Fry hamburger in large skillet, drain and return to skillet.
- Add beans, tomato sauce, tomato soup, water and seasonings to pan and stir.
- Bring mixture to boil then reduce heat to simmer.
- Allow to simmer for 10 minutes.
- Add noodles, mix and allow noodles a couple minutes to absorb some sauce.
- Remove from heat and serve.

BRUNSWICK STEW (PORK STEW, SOUTHERN STYLE)
Well, it's called stew, but it's not chunky at all! Really yummy, and is served at many BBQ shacks in Georgia. This recipe is one I came up with to copy-cat the stew served in Zeb's BBQ in Northeastern Georgia.

- In a cold stew pot, place your tomato sauce, finely diced canned tomatoes, pork and minced onion and garlic.
- Mash your canned beans (throw out the hunk of pork fat that comes in the can).
- Add the mashed beans to your pot.
- Put the ground pork into the pot, and mash with a fork until everything in the pot is well-mixed and looks 'pureed'.
- Turn on your flame and use a wooden spoon to keep stirring this mixture until the color of the meat changes and it is cooked through.
- (I think I probably cook it this way on the stove top for about 15-20 minutes on medium high heat, stirring so nothing burns onto the bottom.) At this point I transfer the whole lot to my crock pot, but you can continue on with just the stew pot on the stove top.
- Add your spices, cumin, hot pepper flakes, salt, pepper, oregano, and beef bouillon.
- Taste it to see if you have everything in in the proportions you like.
- (I usually end up adding a lil' bit more of each spice to suit our tastes).
- Allow it to simmer a bit, so the spices meld together nicely.
- Give it another taste, add any spices you see fit to suit your tastes.
- I generally add the corn now (We prefer our corn cut off the cob in smaller pieces than whole kernels). Add the vinegar and Worcestershire sauce.
- Be sure to taste-test to see if you need to add more or not.
- Simmer until you are ready to serve.
- If your pork was cooked in the step 5 as instructed, you really just need to add the corn, vinegar and Worcestershire and heat it through.
- But I find it's easy to leave this in a crock-pot to keep it hot.
- When serving, pour some Frank's Red Hot sauce on your own bowl of the stew, (this way you can gauge the heat for each individual eating the stew.) (Optional: You can cook 1-2 chicken breasts in water until they will flake apart -- cut them finely, flake them so they aren't in chunks, and add to your stew).
